Gluten Free Banana Bread Recipe

Its so easy to make a smaller loaf of bread and 6 muffins. I dont care to have my oven on for 1 hour during warmer months. I tend to make a short loaf of bread along with 6-8 muffins instead.

To do this, just add 1/2 of the gluten free banana bread recipe dough into a Stone Loaf Pan. This stoneware is non-toxic and sustainable. Ive had the same one for over 20 years and it hasnt failed me yet! Learning more about safe and healthy stoneware here.

Then, for the muffins, I use a large 3 tablespoon scoop to add the remainder of the dough split into 6 large muffins or 8 medium-sized muffins. Bake for about 15 minutes, checking to make sure you dont overcook them.

Can You Use Unripe Bananas For Gluten Free Banana Bread

No, you cannot use unripened bananas to make banana bread. As bananas ripen, they develop natural sugars.

Those natural sugars first make the bananas tender. Then, when theyre baked into it, they tenderize, sweeten, and flavor your banana bread, too.

Despite lots of claims on the Internet, you cannot ripen bananas by baking them in their skins in the oven. Youll just cook them, but they wont ripen.

To speed the ripening of your bananas, place them in a brown paper bag with an apple. The gases from the apple will speed up the ripening of the bananas.

How To Ripen Bananas Fast For Baking

Want to bake banana bread but only have green bananas? This trick allows you to have super ripe bananas in 15 minutes! Its the method I use all the time because its quick and effective.

Line a baking sheet with aluminum foil and preheat your oven to 300F. Lay your bananas on a large baking sheet, evenly spaced.

Bake for 15 minutes or until they turn completely black. Its very jarring, but trust me it works! They should be super dark all the way around and somewhat shiny.

Allow the bananas to cool on the baking sheet for about 20 minutes, then peal and mash. The bananas themselves will be very soft but PERFECT for baking.

Over ripe bananas are bursting with flavor and are super easy to mash, so your end result will be a very flavorful banana bread with very few banana chunks.

Why Did My Gluten Free Banana Bread Fall

In general, when baked goods rise in the oven and then fall as they cool, they were baked in an oven that is out of calibration and running hot. The outside of the bread cooks too quickly, before the center has a chance to bake all the way through.

When the steam escapes the bread as it cools, it doesnt have the internal structure it needs to hold its shape. Always bake using a small, cheap, freestanding oven thermometer, as most ovens run hot.

How Long Should Gluten

Let your banana bread cool in the pan for at least ten minutes. Remember, most cakes, cupcakes, and quick breads continue to cook some after being removed from the oven.

Allowing it time to cool will help it set up, and help keep it from falling apart in a steamy mess when you remove it from the pan.

How To Make The Best Gluten Free Vegan Banana Bread

This banana bread is almost ridiculously easy to make. Heres how:

  • Mash the bananas and mix them with some lemon juice. The lemon juice serves two purposes: firstly, it prevents the mashed bananas from oxidising and turning brown, and secondly, it also gives a boost to the raising agents in the banana bread, which ultimately results in a softer, fluffier banana bread.
  • Combine all the wet ingredients: melted vegan butter, light brown sugar, mashed bananas, vegan yoghurt and vanilla. I prefer to use light brown sugar instead of white, as it gives a richer flavour and adds some delicious caramel notes. The yoghurt adds some extra moisture .
  • Whisk together all the dry ingredients: plain gluten free flour blend , baking powder, baking soda, xanthan gum, salt, cinnamon and nutmeg. The quantities of the raising agents are optimised to give just the right amount of lift to the banana bread, so that its perfectly soft and squishy. Xanthan gum acts as a gluten substitute and prevents the banana bread from being too delicate or crumbly you can read more about the role of xanthan gum in gluten free baking here!
  • Add the dry ingredients to the wet, and whisk them all together into a smooth batter. Make sure that there are no flour clumps or unmixed patches of dry flour.
  • Mix in the roughly chopped toasted pecans or any other add-ins of choice . Make sure that theyre evenly distributed in the batter.

How To Make Your Banana Bread Look Fancy

Making this gluten free banana bread magazine-worthy is super simple! All thats needed is an extra banana, preferably one thats still yellow.

For the extra banana bread decoration, peal a yellow banana and slice it right down the middle, hotdog style. Lay the bananas, sliced side up, on top of the banana bread batter inside the loaf pan.

Once baked, the bananas on top will caramelize and provide even MORE banana flavor.

Another option is to slice the banana like normal, width wise. Take the slices and scatter them around the top of the bread in any pattern or design you like.

You could also add some chopped walnuts or pecans on top. Once baked the nuts will be nice and toasted and the bananas caramelized. Or even betteradd some chocolate chips!

    What Type Of Gluten

I always use Bobs Red Mill Gluten-Free 1-to-1 Baking Flour, but I have also heard King Arthur Gluten-Free Measure For Measure Flour blend is magnificent as well.

While I dont have experience with the King Arthur blend, Ive heard enough magnificent feedback over the years to safely recommend it. If you try this recipe using a different blend, please do share in the comments below and let us all know how it turns out!

Store any leftovers on the counter top covered in plastic wrap for up to 5 days or in an airtight container in the refrigerator for up to 10 days.

How To Make Gluten Free Dairy Free Banana Bread

If you need a dairy free option, in place of butter, try using vegan butter. My favorite brands are Melt and Miyokos Kitchen. You can also try virgin coconut oil . Raw, unrefined coconut oil is a great choice for a dairy free option, as it beings a very slight hint of nuttiness or coconut flavor to the bread.

You can also try Earth Balance buttery sticks, but they have more moisture than butter. You may need to add another tablespoon of gluten free flour to make the batter the proper consistency.

In place of sour cream, I highly recommend Anita brand plain coconut milk yogurt. Otherwise, any plain, nondairy, gluten-free sour cream alternative should work just fine.

If youre looking for a recipe thats already dairy free, try my cinnamon swirl gluten free banana bread. Its a game-changer, and its written to be dairy free from the start!

How To Freeze Gf Banana Bread

Its super easy to freeze this flourless banana bread by the slice or by the loaf.

To store by the slice, wait until your loaf has cooled completely and then slice. Wrap each slice in aluminum foil, and then place them in a zip-top bag with excess air removed. Store in the freezer for up to three months.

To store by the loaf, again wait until the loaf has cooled completely. Wrap the entire loaf in aluminum foil, and then place it inside a zip-top storage bag with extra air removed. Full loaves can also last up to three months in the freezer.

While this bread can last in the freezer for longer than three months, you may notice changes in its texture the longer you keep it. This is primarily caused by freezer burn, and thats caused by air trapped with the bread, so try to avoid that if you can.

When you ready to eat, you can defrost a slice by leaving unwrapped on the counter for about 30 minutes. If youre defrosting an entire loaf, try letting it defrost on the counter for at least an hour or until you can begin to slice through the loaf.

Once you can slice the loaf, do so and then warm the individual slices in a warm toaster oven.

    Banana Bread Swaps And Substitutions

If youre looking for a classic banana bread, this is it. But, if you want to jazz it up, the skys the limit!

    • Add some mix ins: You could add 1 teaspoon cinnamon and 1/2 teaspoon nutmeg, 1/2 cup walnuts or pecans, and/or 1/2 cup chocolate chips
    • Swap the sugar: You can also adjust the amount of sugar to your liking and even swap one sugar for another. Try raw or brown sugar for an added caramel-like flavor.
    • Make it dairy-free: If youre dairy-free and avoiding butter, use equal parts coconut, olive, or vegetable oil instead.

Whats The Best Oven Temperature For Gluten Free Vegan Banana Bread

I like to bake this banana bread at a slightly higher oven temperature of 375ºF for about 1 hour to 1 hour 10 minutes. This ensures a gorgeous domed top, nicely caramelised edges and perfectly baked-through, soft and moist inner crumb.

Note that the oven temperature above refers to a conventional/non-fan oven. If youre using a convection/fan oven, reduce this temperature by 25ºF . This is a general rule of thumb that holds true for most recipes.

If your banana bread starts browning too quickly, cover it with a sheet of aluminium foil and continue baking until done.

Almond Flour Banana Bread | fool-proof, gluten-free recipe

Years ago, youd have to pull together different combinations of grains and ingredients for gluten free baking.

These days, there are many brands that offer awesome all-purpose gluten-free blends. My current favorite is King Arthur’s Measure for Measure Gluten Free Flour. I also love Cup4Cup Multipurpose Gluten Free Flour and Bobs Red Mill Gluten Free 1-to-1 Baking Flour.

One-to-one gluten-fre flours should work as an equal replacement for standard flour, but its always a good idea to double check the fine print on your Gluten Free flour to make sure you dont need to mix in additional ingredients like Xanthan Gum.

Can I Use Baking Powder Instead Of Baking Soda

Yes! It’s not a 1 to 1 but if you’re in a pinch you can use baking powder to help your banana bread rise.

To substitute the baking soda with baking powder, use 4 teaspoons for every teaspoon of baking soda called for in a recipe.

For example, in this recipe, it calls for 1 teaspoon of baking soda, simply use 4 teaspoons of baking powder .

Can You Fix Undercooked Gluten Free Banana Bread

Yes, sometimes you can fix undercooked banana bread! If you realize that your bread isnt fully cooked within about 10 minutes of taking it out of the oven, and the oven is still hot, put it back in!

The bread wont rise as high as it would have, but it shouldnt lose its shape as much when you finally take it out of the oven again.

    Gluten Free Banana Bread Recipe

Ready to bake? Heres what you need to do:

Start with the oven. Preheat the oven to 350°. While it starts to heat up, line a 9×5 inch loaf pan with parchment paper, and lightly grease the short sides of the pan where the parchment isnt touching.

Then, whisk together the wet ingredients. Combine the mashed bananas, sugar, oil, almond milk, eggs, and vanilla in a large bowl, and whisk until smooth.

In a separate bowl, mix up the dry ingredients. Whisk together the gf flour, almond flour, baking soda and powder, spices, and salt.

Next, pour the dry ingredients into the bowl of wet ingredients. Stir until just combined careful not to overmix! Gently fold in the walnuts right at the end.

Finally, bake! Pour the batter into the prepared loaf pan, and scatter more walnuts on top. I also like to add a sprinkle of whole rolled oats at this stage. Transfer the pan to the oven and bake for 42 to 48 minutes, or until a toothpick inserted into the center comes out mostly clean.

Added Baking Powder And Decreased The Baking Soda

While my banana bread recipe rises beautifully with baking soda, this nut flour-based version needs help from both baking soda and baking powder. Baking powder is double-acting, which means that it starts producing bubbles when mixed with liquid, and produces more bubbles when its heated.

Since we added baking powder , well decrease the amount of baking soda. Another reason is that baking soda is much stronger than baking powder, and we simply need less when theyre used together.

In summary: The answer to the question, Can I substitute almond flour? is not so simple! The good news is that I use a similar formula for many of my quick bread recipes and muffins, so you can likely use this recipe as a template to adjust the others.
