Keto Chia Seed Pudding: The Ketology Way

Chia pudding has been a staple in my diet since long before I went on a keto-based diet. Keto Chia Seed Pudding is easy to make its very much like making overnight oats but packed with fiber, protein and anti-oxidants that provide tons of health benefits and energy along with good fats and will fill you. Oh, and this keto chia pudding is delicious too! I add some extra power-packed superfoods like hemp hearts and maca powder to make this Chia Pudding recipe Ketology friendly too which means its low carb and packed with protein and good fats, but also has anti-aging benefits as well.

Chia pudding actually only takes about 30 minutes to set, so if you make this first thing in the morning, it will be ready to eat once youre showered and ready for the day. I like to make it before bed the night before because I think the flavors develop and the blueberries I like to add to mine plump up to perfection, however if you make this last minute, it will still be delicious and insanely good for you.

You can certainly experiment with berries and nuts or other keto-friendly toppings like unsweetened coconut shavings or sugar-free chocolate chips, however this combo of the core ingredients in my keto chia seed pudding along with with blueberries and sliced almonds is my standby recipe. I use almond milk in mine, however you can also substitute for your favorite nut milk or cows milk.

The crackers have a lovely crunch and a rich, cheesy flavor and they store quite well in an airtight container. I serve these on film nights with a dip or crumbled over salads and soups to give a bit of extra texture.

Chia and Flaxseed Pudding is a delicious low carb and high fiber breakfast. All you need is 5 ingredients and toppings of choice!

You know I couldn’t just make any old chia pudding recipe. I had to take it up a notch by adding in some flaxseeds.

Flaxseeds become very gelatinous just like chia seeds do, making the seeds a seamless addition. That’s why the photos look identical to traditional chia pudding.

This recipe is a nice change if you enjoy overnight oats. I know the texture of chia pudding isn’t for everyone, but I personally really like it.

I love topping my pudding with Oat Free Chocolate Granola and berries! You can get super creative with the toppings. Nut butters, granolas and fruit are my go-to’s.

How To Make Chia Crackers

It’s just 4 easy steps!

  • Stir all ingredients together in a mixing bowl with a spatula or fork. Wait to let the chia soak up the liquid to form a dough.
  • 2. Roll the mixture out thinly between two pieces of parchment paper. To get a rectangular shape, fold over the edges to form a rectangle. Then, place the greaseproof sheet back on top and re-roll.

    3. Remove the top sheet of greaseproof paper. Pre-cut the dough into squares using knife or pizza cutter and place on a large baking sheet.

    4. Bake for 15 minutes or until golden. Allow to cool and firm up, then break into crackers!

    I made three individual puddings and topped them with:

    • Strawberries and chopped almonds
    • Fresh banana slices, walnuts and honey
    • Blueberries and unsweetened coconut

    I loved all 3 of them but there are so many other ways you can dress up your flaxseed pudding! Top it with whatever you would put on top of oatmeal or yogurt. Here are some topping suggestions to make the pudding more fun and nutritious:

    • Fresh or stewed berries: strawberries, blueberries, raspberries and blackberries
    • Chopped bananas, apples, pears or peaches
    • Chopped nuts: walnuts, pecans, hazelnuts or almonds
    • Dried fruit such as dates, raisins, apricots or figs
    • A drizzle of honey or maple syrup

    Low Carb Chia and Flax Cereal is a mash-up of chia seed pudding and more traditional nut based low carb cereals. It’s creamy from the chia seeds but has some extra crunch and nutritional benefits from the addition of flax and almonds.

    Although I am a huge fan of basic chia seed pudding, lately I have been wanting a bit more texture in my morning bowl. To accomplish this, I started adding flaxseed meal and nuts to the chia seeds. I find it makes a huge difference in terms of texture and makes it slightly more reminiscent of oatmeal or cream of wheat. From there you can mix it up any way you like. Fruit is the perfect addition to sweeten everything up. I also love adding nut butter, yogurt, cinnamon, or nutmeg.

    As I mentioned above, this recipe is ideal to start your day, but it is also a healthy snack that will keep hunger away until dinner time. And if you are one of those who usually have dessert after eating, save this recipe as a healthy option for dessert.

    Keep in mind that the amounts indicated are for a full breakfast or snack and that for a dessert, you should consume a lesser amount.

    Also, this makes the ideal breakfast or snack that youd like to take to work. And if you are reading this post in the summer, you can prepare it in a glass jar and take it along to the beach or for a picnic.

    How To Store This Flax Seed Pudding

    Ideally, prepare it directly in a glass jar with a lid and store it in the fridge.

    If you dont have any glass jar with a lid at home, you might consider buying these or these.

    Having some extra jars its very useful if you do Meal Planning.

    A chia and flax seed pudding is stored well in the fridge for about 4 or 5 days. So, if you prefer and want to save some time, you can prepare more, store it in the fridge and youll have it ready for several days.

    Keep in mind that if you prepare this pudding on hot days, or use animal milk as an ingredient, it is essential that you keep it in the fridge.

    Personally, when I prepare it in the winter, and I use vegetable milk, I leave it out of the fridge so that in the morning its not too cold.

    However, if I use animal milk, I keep it in the fridge, taking it out as soon as I wake up so that it can get to an ambient temperature.

    If you are going to prepare this complete recipe of chia and flax seed pudding with jam and almond butter, I advise you not to keep it in the fridge for many days.

    It is better to leave the various ingredients of the layers separate, putting them together only on the day you are going to eat them.

    Can I Use Whole Flaxseed Instead Of Ground Flaxseed

    No. Mixing whole flaxseed with liquid will not produce pudding-like consistency. Moreover, whole flax seeds pass through your body which does not allow for proper absorption of all the great nutrients flaxseed has to offer. Ground is better!

    Whats the best way to grind flaxseed at home?

    If you want to have super fresh flaxseed meal, grind the seeds in a coffee grinder, spice grinder or a good food processor.

    Found on some long-forgotten internet site but I had noted it was submitted by a lady named Erna Walmsley. Thanks, Erna! This is a great bread with lots of seeds. Sometimes I grind half the flax seeds and/or toast the sunflower seeds.

    Yield 1 loaf, 12 serving

    Number Of Ingredients 9

    • 2 tablespoons butter or 2 tablespoons margarine, softened
    • 2 tablespoons honey
    • 1 1/2 cups bread flour
    • 1 1/3 cups whole wheat bread flour
    • 1 teaspoon salt
    • 1 teaspoon bread machine yeast
    • 1/2 cup flax seed
    • 1/2 cup sunflower seeds, unsalted


    • Add all ingredients EXCEPT the sunflower seeds into the bread machine pan in the order recommended by the manufacturer.
    • Select basic white cycle on the bread machine. Press start.
    • Add the sunflower seeds when the add ingredients signal sounds during the knead cycle.

    Tips On How To Make The Best Flax Chia Seed Crakers

    These crackers are pretty simple to make, but there are a few tips that will make the process a bit easier!

  • Make sure you line the baking sheet with parchment paper to make flipping the crackers as easy as possible and to prevent them from sticking to the baking sheet.
  • Use raw sunflower and pumpkin seeds. Double check any packaging to make sure they arent already roasted or they may burn.
  • Having wet hands makes spreading the dough out onto the sheet a lot easier!
  • Dont try to speed this process up! It takes a full 3 hours in the oven to get perfectly crunchy crackers, and we promise its worth it. You can make the dough a day ahead and keep it in the refrigerator before baking.
