Sometimes I feel like an old lady. Im 24 years old yet I hate clubs , bars , and I dont like coming home past 7 PM . To top it off, I went to bed at 8:45 PM last night.

I know that its so out of the norm to be going to bed so early but in all honesty, I think I like being an old lady. I like staying home on a Friday night and whipping up an amazing batch of cookies late into the night, and if I could, Id sleep at 9 PM everyday!

Anyway, being the non-24 year old that I am, I made these fries again. Yep, double deep-fried french fries deep fried is the only way to go, right?. But instead of the whole buffalo sauce shebang, I topped them off with a garlicky cheese sauce. It was kind of like the nacho cheese you get at the movie theaters except its 100000x better and much more gourmet.

Okay so maybe its not exactly like movie theater nacho cheese but it had that thin cheesy texture just blooming with so much garlic flavor. If only movie theaters actually had this kind of cheese sauce

Cheese Sauce: Ingredients & Substitutions

Let’s discuss the ingredients in this recipe, as well as possible substitutions.

  • Salted butter. Unsalted butter can be used in this recipe in place of salted butter.
  • All-purpose flour. to make it gluten-free, use an all-purpose gluten-free flour.
  • Whole milk. I don’t suggest using a lower fat milk because the fat content makes it extra creamy. You could use heavy cream, half and half or 2% milk .
  • Cheddar Cheese. I suggest a sharp variety for the best flavor, but you can use your favorite.

Shredded cheddar or a shredded cheddar mozzarella cheese blend is great on fries. For most recipes, I recommend that you shred your own cheese but this is one place where the bagged shredded cheeses work well!

Bacon Everything is better with bacon, including cheese fries! If you want to fry up some bacon and crumble it on top, that works well but real bacon bits works just as well too!

Other Toppings Green onions are a favorite to sprinkle on cheese fries . Make these into loaded cheese fries by adding any of the following to suit your tastes:

No surprise, the homemade one was better. It was more flavorful. I followed the exact recipe as shared , but they must have to add some preservatives or something in order to mass produce? I dont know. What I do know is that this stuff is liquid gold and Im now adding cheese sauce to everything.
