    Replacing Sugar In Baking: Sweeteners

    Sugar can be replaced with sweeteners. Artificial sweeteners , also called intense or low calorie sweeteners such as those containing sacchari, aspartame or sucralose, have a sweeter flavour than sugar and so fewer grams of sweetener may be needed to replace the grams of sugar.

    Low Carb Chocolate Ganache

    Now on to the sugar free frosting! I decided on a rich ganache instead of a chocolate buttercream frosting, because when you’re making a grown-up cake, you may as well pull out all the stops.

    Basically, you warm the heavy whipping cream in a pan and heat it, but do not boil.

    Then, turn off the heat and add finely chopped dark chocolate or sugar free chocolate chips such as Lily’s to the cream.

    DO NOT STIR! This can cause the mix to split, because it cools down too quickly. First, let the mixture sit for 5 minutes.

    Then, stir with a spatula until the chocolate is fully melted and combined with the cream.

    Tip: If your ganache does split, donât panic! Just put in a food processor and blend until smooth and it will right itself.

    As soon as the the chocolate frosting has cooled a little so it’s not boiling but still easily spreadable, spread it over both cakes.

    Wait until the ganache has set, then stack the cakes on top of one another to make one gorgeous sugar free birthday cake!

    You could serve it with whipped cream or a scoop of ice cream, but I just added some grated chocolate on top and a few red currants.

    Please note that over blitzing of the almonds can see it turn to nut butter so you may need a few attempts to get the consistency right.

    Depending on your personal taste, LOCAR might be a little less sweet than table sugar. But you can also just use more without concerns as you dont have to worry about calories, carbs or your teeth. The only limit: we recommend a maximum daily intakt of 0.9 grams LOCAR per kilogram of your bodyweight.     How To Make Low

    This simple recipe only takes about 15 minutes to prep. Then, all you have to do is throw it in the oven!

    Step 1: Preheat your oven to 350 F and line a small loaf tin with parchment paper.

    Step 2: Add the butter and erythritol to a large mixing bowl. With an electric mixer, beat on high until light and fluffy.

    Step 3: Beat in the eggs, two at a time, until well incorporated. Next, add the vanilla extract and beat on slow until mixed in.

    Step 4: Add the almond flour, baking powder, salt, psyllium husk powder, and xanthan gum, then mix well. The dough will be quite thick but should not dry out.

    Step 5: Spoon the dough into the prepared loaf pan and smooth over the top.

    Step 6: Bake for about 50 minutes or until a toothpick inserted into the middle comes out clean. After 30 minutes, if the top is browning too quickly, cover the loaf with foil to prevent burning.

    Step 7: Remove from the oven and allow to cool completely.

    Once the pound cake loaf has cooled, its ready to be sliced and served!

    For A Vegan Keto Cake

    While flourless chocolate cake recipes usually call for eggs, making a vegan version was surprisingly easy. I simply mixed three tbsp Bobs egg replacer with 150g water , let it sit for a few minutes to thicken, and then used that as my three eggs in the recipe.

    If you need six eggs for a double layer cake, just use six tablespoons of the egg replacer mixed with 1 1/4 cup water instead. I havent tried making a version using flax egg yet, but be sure to report back if you experiment!

    STEP 1: Using a stand mixer or a large bowl with a hand mixer, cream together the erythritol and butter.

    STEP 2: add the cream cheese in chunks and mix until creamy

    STEP 3: add the 6 eggs one at a time and then add the vanilla extract until combined

    • STEP 4: stop the mixer and scrape down the sides to make sure everything is fully incorporated. Then slowly add the almond flour and baking powder with the mixer on low/medium speed, onced mixed through increase speed to high for 1 minute. Scrape down the sides once again and then mix on high speed for another minute. At this point you can add the optional coconut extract if you wish to use it.

    STEP 5: Fold in the chopped strawberries and place batter in an 9″ well greased loaf pan. Bake at 350 °F for 60 minutes, turn the oven off and allow to sit in the oven for another 10 minutes. You will know it’s ready when you poke the cake with a toothpick and it comes out clean. Times may vary according to your oven.

    STEP 6: for the glaze, using a whisk, mix the erythritol, coconut milk and vanilla in a medium bowl until mixed through.

    STEP 7: once cake is done, remove from the oven and allow to cool completely before removing from the load pan. Otherwise it may fall apart. Then brush on two coats of the glaze and sprinkle the top with unsweetened shredded coconut.

    The majority of this recipe is simply mixing together the ingredients. Prep only takes about 25 minutes!

    Step 1: Line an 8×8 inch baking tin with parchment paper and grease the sides with melted butter. Preheat your oven to 350°F .

    Step 2: In a medium mixing bowl, whisk together all the dry ingredients until well combined. Set aside.

    Step 6: Add the dry ingredients and beat on low until just combined. Then, beat on high for 3 minutes, scraping down the sides of the bowl as necessary, until the mixture is completely incorporated.

    Step 7: Pour the mixture into your prepared baking tin.

    Step 8: Bake for 40 45 minutes until a toothpick inserted in the center of the cake comes out clean. Remove from the oven and allow to cool in the tin for 15 minutes, then remove from the baking tin.

    Step 9: Allow the cake to cool completely before placing it in the refrigerator to chill before frosting.

    Step 10: While the cake is in the refrigerator, cream the butter and cream cheese together until smooth. Add the vanilla and powdered stevia.

    Step 11: Beat on low until combined, then on high for 5 minutes until fluffy. Place in the refrigerator to firm up.

    Can I Just Use Coconut Flour

    No. This is not the ideal recipe to experiment with this because of the amount and cost of ingredients.

    As a rule of thumb, I would use â the amount of coconut flour stated for almond flour – about 80 grams / a scant â cup. But I think you would also need to add about 2 additional eggs to achieve the same fluffiness.
