Dinner time. Its one of the more dreaded times in a mothers life, along with bed time and leaving for school time. I mean, it should be all sweet and wonderful and 1950s style coziness, everyone gathering around the table to enjoy each others company after having been apart for the day.

But those are romantic notions, my friend and I am just going to go ahead and burst your bubble right now. Dinner time can suck muchly. Suckity suck, especially when you are working hard to get your family on the keto eating train. And if you have multiple children, their varied likes and dislikes can really mess with your head.

Whether it’s Tuesday or any other day of the week, it’s always a perfect time for tacosor in this case, a delicious keto taco casserole.

  • Brown the beef and stir in taco seasoning.
  • Add beef to crockpot, along with two cans of drained, diced, tomatoes with green chiles. FYI: It’s crucial to discard the excess liquid.

  • Mix and cook for 2-3 hours on High or 4 hours on Low.
