You can make it relatively quickly and enjoy it straight away. If you have the time, you can make it in advance and refrigerate it for later consumption. Both ways will work well and I am sure you will love this salad both freshly made or chilled for a few hours in the fridge.

By Step Recipe Directions
Prep: Make my pickled red onions a few hours before mixing the cucumber salad. These onions are amazing. If you would rather use fresh onions slice the onion and soak in a bit of vinegar to soften. Pour off the excess vinegar before adding the onion to the bowl.
Step 1: Peel and slice the cucumber. Place the sliced cucumbers in a large bowl and sprinkle with about 2 teaspoons of salt. Allow to soak for 30 minutes releasing most of the liquid from the cucumber slices. Drain and rinse to remove the salt. Pat dry with a paper towel.
Step 2: Put the cucumber in a large mixing bowl. If using pickled red onions add them to the bowl.
If using fresh red onions slice the onion into thin ribbons and pour the vinegar over them. Let them soak for about 30 minutes before mixing the salad.
Step 3: Add the mayonnaise, herbs and seasonings to the bowl.
Step 4: Toss the ingredients until the cucumbers are coated and the seasonings combined.
Step 5: Cover the bowl and refrigerate at least an hour before serving. Stir before serving.

Smashed Cucumber Salad With Mint
This salad is like a sunny Mediterranean day on a plate. Molly Yehs recipe combines adorable Persian cucumbers with fresh lemon juice and mint for a classic flavor profile. The flavors are perked up even more with a sprinkle of zaatar, a Middle Eastern mix of intensely aromatic dried wild thyme and sesame.

How To Make Cucumber Salad With Sour Cream
Wash cucumbers and dry. Use a mandoline to make thin, uniform slices very quickly. Be sure to use the guard and keep your fingers and any skin away from the blade!
Slice the cucumbers right into a large mixing bowl with plenty of room to stir in the dressing. I like to use chilled cucumbers so that salad is ready to eat quickly after being mixed up.
In a small mixing bowl measure out the dressing ingredients. Dill weed can be stirred into the dressing or it can be sprinkled on top.
The dill weed mixes better and gets a more even coating when stirred into the dressing.
Stir all of the dressing ingredients very well.
Pour over sliced cucumbers and stir gently. Chill for at least an hour. Just before serving toss lightly.
Sprinkle with additional dill weed if desired.

Its customary to make cucumber salads in advance and serve them chilled. Its not necessarily the case with this salad. I like it just as much made with freshly-picked cucumber from my garden, still warm from the hot summer sun, as I do when its chilled. I think its a personal choice. Try it made both ways and decide for yourself which one you prefer.
Dressing: Creamy Or Vinaigrette
Ive always made a creamy dressing for this cucumber salad with sour cream, a dab of mayonnaise and a hint of vinegar for some tang.
To make it healthier, substitute Greek yogurt for sour cream !
If you prefer a Cucumber Salad with a Vinegar Style Dressing, you can simply replace the dressing in this recipe with:
- 1/3 cup white vinegar or cider vinegar
- 2 tablespoons vegetable oil or light olive oil
- 2 tablespoons water
- salt & pepper

What Kind Of Cucumbers
English cucumbers or Persian cucumbers work best in this recipe as they are tastier and have fewer seeds. If you cant find these, you can use garden cucumbers too. You might need to peel their skin though if it tastes bitter. So taste it first and then decide to peel or not. Also, garden cucumbers mostly have bigger seeds, so youd better remove the seeds and then chop for the salad.

There are 2 keys to this recipe.
Giving the sliced cucumbers a little salt water soak, before assembling the salad.
This helps to both season the cukes and have them release some of their excess moisture. Making sure that once you add the dressing it wont become a watered down soup.

Im a mayonnaise girl myself, but this is the one recipe where substituting is not going to be good.
Dont ask me the science behind it all, but cucumbers and mayonnaise are not friends. The dressing becomes separated and thin.

How To Make This Cucumber Salad Recipe:
Prepare the Cucumbers: I like to start this cucumber salad with English cucumbers. The skin is thinner and there are less seeds. The cucumbers also tend to be a bit less bitter, making them much more tasty, in my opinion.
Slice your cucumbers into thin rounds and then salt with kosher salt. Toss the cucumbers in the salt and let set for 30 minutes. This will help the cucumbers to release a lot of their liquid.
Drain away any liquid from the bowl of cucumbers and pat them dry.
Stir: Next, dump in some mayonnaise, vinegar , sliced red onion, minced garlic, and fresh dill. Stir everything together to coat the cucumbers in the sauce.
Serve: This creamy cucumber salad tastes best if you leave it to chill in the fridge for about 30 minutes before serving.
The cucumbers may release a bit more liquid during that time which will thin out the sauce a bit. You can either serve it as is, or you can drain off some of the liquid. Either way, this cucumber salad with mayo is delicious!
Tips On How To Make Cucumber Salad
- I use baby cucumbers, also known as English cucumbers, which are seedless and have very thin skin. Although theres no need to peel, I like to make run my vegetable peeler on the sides of the cucumbers to make thin vertical strips for aesthetic purposes.
- You can swap the Vidalia with red onions if you like to add a pop of color but I recommend the sweet onions for flavor.
- Cucumbers have a high water content and tend to dispel a lot of liquid once mixed with the dressing. Add the mayo mixture when ready to serve and enjoy immediately. If youre bringing it to a potluck and the salad to stand for a longer period, salt the cucumbers for a few minutes and squeeze the excess liquid first before tossing in the dressing.
- Want to cut down the fat and calories? Substitute the mayo with sour cream and replace the brown sugar with honey.
