You can chop the vegetables for the stuffing while the oven heats up, and getting the stuffing into the chicken breasts is done in a heartbeat!

Step 1: Preheat the oven to 365 F .

Step 2: About halfway up the chicken breast, cut a slit lengthwise to create a pocket for the filling.

Step 3: Chop up the mozzarella, artichoke, basil, tomato, and garlic. Mix to combine.

Step 4: Stuff the mixture into the chicken breast where you created the pocket.

Step 5: Use a few toothpicks to close the chicken breast around the stuffing.

Step 6: Place the chicken breast on a baking sheet or aluminum foil and season it with pepper, curry powder, and paprika.

Step 7: Bake for around 20 minutes .

Step 8: Remove toothpicks and serve!

How To Make Smothered Creamy Skillet Chicken

Cooking with a skillet is a great way to whip up an easy meal that is PACKED with delicious flavor! Besides a little chopping and mixing, most of this recipe will come together right on the stove:

Step 1: Add 1 tsp. of olive oil to a large skillet over medium heat.

Step 2: Season the chicken breasts with salt and pepper, then add them to the skillet. Sauté for 3 minutes on each side or until golden brown and almost cooked through, then set aside.

Step 3: In the same hot skillet, add the remaining tsp. olive oil and lower heat.

Step 4: Add garlic and allow to cook for about 30 seconds.

Step 5: Add green onion and half of the broth. Raise the heat to medium.

Step 6: Add mushrooms & peppers, bringing everything to a medium simmer. Cook for 5 minutes.

Step 7: In a separate bowl, whisk together the yogurt, cashew milk, and 1 tsp. parsley, then pour into the skillet.

Step 8: Add spinach and stir until combined.

Step 9: Allow sauce to bubble lightly with vegetables, lowering heat if needed and stirring occasionally, for 5 more minutes.

Step 10: Nestle chicken breasts into the skillet. Add remaining broth and mascarpone or cream cheese, then cook for 5-10 more minutes until chicken is cooked through and the sauce has thickened.

Step 11: Season with salt and pepper, top with remaining parsley, and serve.

Easy to make, minimal clean-up, healthy, and SO delicious. This dish is pretty much perfect if you ask me!

Spray the aluminum foil with nonstick cooking spray , and lay the chicken breasts on the sprayed foil. Drizzle with olive oil. Grate 1 tablespoon of lemon zest and set aside. Juice the lemon, removing the seeds. Pour lemon juice over chicken, then sprinkle chicken with lemon zest, onion powder, white pepper, and oregano. Fold the aluminum foil over the chicken and roll the edges of the foil together to make a sealed packet. Place packet on a jelly roll pan or in a large, shallow casserole dish. Bake 30 minutes. Remove from oven and carefully open foil, using tongs to remove chicken to serving plate.

STEP 1: Slice bacon and pan fry until crispy, set aside

STEP 2: In a medium bowl combine the softened cream cheese, half of the shredded cheddar, half of the cooked bacon and the dry ranch seasoning.
