How To Make 5 Gallons Of Margaritas
Most standard machines make 5 gallons . A typical serving is 8 oz so, the machine will make approximately 80 servings. A dual machine will hold 2 flavors, and the bowls range from 3-5 gallons per side. Note: These estimates are for alcoholic beverages.
ARCTIC ICE 5 TO 1 MIX DO NOT ADD ICE TO MACHINE: Pour 2 1/2 gallons of cold water directly into the empty hopper. Add one 64 oz. bottles of Arctic Ice Slush Mix. No mixing required. Allow 60 to 120 minutes to freeze. *Will make approximately 35-45 servings per hopper.

Over 30 years ago, I started a graphic design business in Chicago in a location that seemed to be way too far west of Michigan Avenue and too far North of the Loop. However, this was the perfect urban pioneer location for a graphic design studio. My business partner discovered a cool and different Mexican restaurant right around the corner from our studio called Frontera Grill. The chef who owned it was milling around the kitchen and his wife was there to greet and seat us. We liked this restaurant so much, we found ourselves having lunch there almost every week, and often chose it as a place to bring our clients or to get treated by salespeople. We also discovered that besides the food being so fresh, the margaritas were delicious and amazing too.
Soon the restaurant became so popular to avoid waiting in line we would often sit at the bar to order. Then we became friends with one of the bartenders, and he shared the recipe with us for the fabulous Frontera Grill Margaritas! He gave us a large batch recipe that had 40 limes and multiple cups of sugar and we made it for one of our office parties. It literally made 4 gallons. The key ingredients that make Frontera Grill Margaritas extra special are fresh limes and Gran Torres Orange liquor instead of the usual Triple Sec. However, I found even if you dont use Gran Torres or the finest tequila, these margaritas are still delicious!

Since its Cinco de Mayo and everything, I figured Id post the margarita we use at the bar. I worked on my margarita recipe for a long time until I found that perfect balance between sweet, sour and strong. Its been very good to us over the years.
I learned early on the famous 2:1:1 formula for all things sour. Thats two parts strong, one part sweet, one part sour. But it doesnt always work when youre using a liqueur as a sweetener
So I found that rejiggering those proportions into 1½:¾:¾ and hitting it with a teaspoon of simple syrup was the trick to a well-balanced cocktail. Try it sometime with your favorite International Sour, as Gary Regan calls them.
