How To Make Chicken Broth

Simple Vegetable Soup (Gluten Free & Dairy Free) | Vegan Soup Recipe | How to Make Vegetable Soup

Before we talk about how to make those fluffy and light gluten-free matzo balls, youll want to first get your broth cooking.

To make a basic but delicious chicken broth, gather up the following ingredients:

  • 3-4 lbs bone-in, skin-on chicken drumsticks or thighs
  • 1 tbsp Kosher salt plus more for the broth, to taste
  • 1 tbsp vegetable oil
  • 8 cups water
  • 1-2 chicken bouillon cubes optional, to taste

Add salt to your chicken and set it aside. Adjust the salt to taste, keeping in mind that if you use kosher chicken, it will already be salted, so go easy on how much you add.

Heat vegetable oil in a large stock pot, then add chicken and cook until its lightly browned on all sides, about 3-4 minutes per side. Remove chicken from pan and set it aside.

Add the carrots and celery to your pot and cook until slightly softened. Add the lightly browned chicken back into the pot along with 8 cups of water. Bring mixture to a boil, lower heat, cover and simmer broth for 2 or more hours. Skim the fat off the top, if any, as you go along. The broth will have a stronger chicken taste the longer you simmer it with the chicken pieces.

Once the broth is finished cooking, remove the chicken from the broth and separate the meat from the skin, bones and fat. Add the meat back to the broth and discard the rest.

Season your soup with additional salt and/or bouillon cubes, to taste, and keep your broth warm until youre ready to serve it.

Shortcuts For Making Chicken Noodle Soup

  • I make my own gluten-free chicken broth by using Orrington Farms Chicken Flavored Broth Base.
  • You can use any type of cut-up chicken you prefer. I often use boneless and skinless chicken thighs.
  • You can use leftover chicken to make the soup. I often use leftover shredded chicken. I have a super easy recipe for Gluten-Free Rotisserie Style Shredded Chicken.
  • You can use gluten-free rotisserie chicken to save time. Always check the labels of the store-bought rotisserie chicken because some of the seasonings are not gluten-free. I like Costcos rotisserie chicken.
  • I keep lemon juice concentrate in my refrigerator at all times.

I almost didn’t believe it myself, but now that I know how to do it, I plan to make this soup all the time.

The traditional style condensed tomato soup that you might buy at a store contains wheat as a thickener.

This soup is gluten free and can be made dairy free if you’d like.

I love a nice hot bowl of soup on a cold day, and have even been known to enjoy soup on a warm day as well.

  • 2 large potatoes
  • 2 carrots
  • 2 cloves of garlic
  • 1 red onion
  • 1 celery stick
  • 1 litre gluten free vegetable stock
  • 1 x 400g tin of chopped tomatoes
  • 1 x 400g tin cannellini beans
  • 1 large handful of fresh spinach
  • 150g gluten free dinosaur-shaped pasta
  • 1 tbsp oil
  • Salt and pepper

How To Make Gluten Free Chicken Noodle Soup

  • Add the chicken broth, water, and cubed chicken breast.
  • Turn stove to high and bring the soup to a boil. Once you reach a rolling boil, turn the heat back down to medium and continue to cook until the chicken is done.
  • Add in the pasta and cook for 10-15 more minutes, or until your pasta is cooked. Watch it carefully as it can overcook easily.
  • Add peas and salt and pepper to taste.
  • Continue to cook for 2-3 minutes. Remove from the heat and let it cool before serving.

    Most canned cream of chicken soups in the store are not gluten free.

    We are lucky to have a few gluten free canned cream of chicken soups at our grocery stores, but I still prefer making my own most of the time.

    Luckily, making your own cream of chicken soup is quick and easy!

    Can I Make The Soup In The Instant Pot

    You can also make this soup in a pressure cooker. I find it much easier to make the soup on the stovetop, but I do also love my Instant Pot.

    Turn your Instant Pot to the saute setting. Add the olive oil, garlic, carrots, and celery and saute for 3 minutes until the vegetables soften.

    Stir in the gluten-free chicken broth and the seasonings. Add the diced chicken pieces. Close the lid and set the Instant Pot to the Soup setting and set the timer to 7 minutes.

    Once the Instant Pot cycle is complete, wait until the natural release cycle is complete, which is about 10 minutes. Carefully unlock and remove the lid from the instant pot.

    Add the gluten-free noodles to the soup and set the Instant Pot to the saute setting again. Cook for another 8-10 minutes uncovered, or until the noodles are cooked. Turn off the Instant Pot by pressing the cancel button and stir in the lemon juice.
