This Instant Pot Chicken and Mushrooms is a quick and easy Instant Pot recipe, perfect for weeknight dinners. This delicious one pot meal has flavorful chicken thighs, mushrooms and orzo pasta.

This Instant Pot chicken and mushrooms is adapted from my crockpot chicken and mushrooms recipe, a reader favorite! A couple of readers asked if that recipe could be adapted for the Instant Pot. I started recipe testing and I am so happy with the way this Instant Pot version turned out.

This recipe has a relatively short ingredient list and it takes just 30 minutes to make, start to finish. It has loads of flavor from onion, garlic and mushrooms, plus dried herbs and seasonings. Chicken shreds the easiest when it is still warm, so if you plan on shredding the chicken its best to do it while its still warm from cooking. There are 2 ways to shred chicken easily:

  • Two forks for 1-2 pounds of chicken you can shred the chicken with two forks. It should be very soft and easy to shred. You can shred the chicken in the liquid from cooking or in a separate bowl.
  • Hand mixer or Kitchen Aid Stand Mixer if you made more than 2 pounds of chicken at once, it may be easier to shred the chicken using a hand mixer or stand mixer to shred the chicken in under 30 seconds. You can add the chicken back to the cooking liquid to absorb some of the liquid after cooking or leave it out of the liquid.

There are countless times when a warm bowl of soup is in order, and the return of chilly temperatures is just one of them. If youre coming down with a cold, having a bad day, or need a little extra self-care, that’s an occasion for soup no matter what the weather’s like outside.

Like other packaged foods, however, prepared soups tend to be less healthy than homemade. Instant ramen is a budget favorite, but not very nutritious on its own. Canned soups have been criticized because of the presence of bisphenol A , a chemical used in can linings that leaches into the food inside. While the Can Manufacturers Institute reports that around 95 percent of canned foods no longer contain BPA, its unclear whether what has been used to replace the substance is any better, according to the Environmental Working Group.

Canned soups are also often high in sodium and fat, according to the Institute of Food Technologists. The American Heart Association includes soup on its Salty Six list, pointing out that one cup of canned soup can contain as much as 830 milligrams of sodium more than a third of your daily recommended intake.

Typically, calories, fat, sugar, and salt are added to a prepared soup, says Roxana Ehsani, RDN, a spokesperson for the Academy of Nutrition and Dietetics. But when we cook at home, we can reduce these amounts by choosing healthier ingredients.
