After countless hours of research and development, Food For Life is pleased to release Sprouted for Life Breadthe first available Gluten Free Breads made from Sprouted Grains such as Quinoa, Millet and Chia.
It has become clear that many of the gluten free breads on the market today, while being “gluten free”, are simply not addressing the overall health needs of consumers. You see, gluten free breads lack the one component that gives bread that familiar soft chewy texture. And, that component is gluten.
Without Gluten, manufacturers are forced to use alternative ingredients that mimic the elasticity that gluten provides. And, many of them are choosing to feature egg whites and refined starches today. However, in their quest to achieve even greater
elasticity in an effort to win out on the soft and chewy test, consumers are seeing an ever expanding list of gluten free breads made from ingredients which you wouldnt expect in natural breads. Some of which are sadly devoid of many nutrients. Yes, the race to replace gluten has gotten to the point where it really needed to be addressed for the benefit of the gluten intolerant consumer.

Why Sprouted Grains Are Healthier
The reason that Ezekiel Bread is the healthier option over other breads has to do with its preparation, specifically that the grains used to make Ezekiel bread have been sprouted. Many plant foods, especially grains, contain factors that can be toxic and mess with your gut lining. Specifically, unsprouted grains contain something called antinutrients.
Antinutrients are compounds found in foods like grains, legumes and nuts that bind to minerals and make them unusable by the body. So even though whole grains do have nutrients in them, the presence of antinutrients means youre not actually absorbing most of the minerals and vitamins from the whole grains. While sprouting lessens antinutrient content, many traditional cultures also choose to ferment sprouted grains in order to further lower antinutrient content.
Sprouting and fermenting foods, especially grains and legumes, greatly increases their nutrient content and makes them more easily digestible. But probably most importantly, sprouting grains deactivates important nutrient blockers . This means that compared to breads that havent been sprouted, Ezekiel breads nutrients are more easily used by the body, and youre also less likely to experience digestive problems from eating it.
When compared to breads that are made with grains that havent been sprouted, sprouted grain breads are the following:
Lettuce And Leafy Greens
Big leafy greens, such as lettuce, collard greens, and kale can be a great substitution for wraps and bread. People can just top or fill large leaves with any toppings, including veggies, cheese, meat, avocados, and hummus. Then they only have to roll the leaves up, fold them, or eat them flat.

Ezekiel Bread Recipe Notes:
- If you have a sensitivity to wheat or gluten, just omit them and add more spelt, millet, lentils, or beans .
- I often cut this recipe in half, it works just as well.
- You need to eat this bread within about 72 hours. This bread does not have any preservatives so it will not stay fresh as long as store bought bread. Do not refrigerate this bread. If you will not consume the loaves within 72 hours you need to slice the bread, wrap it in bakers paper, and freeze it. This way you can take out slices at a time. Let it sit out in room temperature to thaw. Do not place it in the microwave or it will lose nutrients.
- You can buy the grains and beans premixed from several trusted places online however, I prefer to buy my own bags of dry beans and mix them myself. This is much more frugal, and it allows me the freedom to add exactly how much I want.

What Is Rye Bread
Rye is a type of grain in the wheat family. However, as with all breads, looking at the ingredient lists helps us determine if its a whole grain. Remember, the ingredients are in descending order with the first one being in the highest amounts. Unbleached flour, which is often used in rye bread which is refined and consequently lower in fibre, protein, and vitamins. Also, many rye breads are a sourdough mix.

How Sprouting Increases Nutrients
As a result of sprouting, Ezekiel bread may contain more of some vital nutrients. Studies show that sprouting grains increases their lysine content .
Lysine is an amino acid that many plants contain in only small amounts. Increasing its levels through sprouting boosts the nutritional value of grains and seeds.
Studies also show that sprouting wheat may lead to significant increases in protein, soluble fiber, folate, and vitamin C .
Because it contains sprouted seeds, Ezekiel bread should be more nutritious than most other types of bread.

Submarine Sandwich Bread Sprouted Flour Test
I used the same easy-to-make the bread recipe that I used in the psyllium husk bread-baking test on this blog in April 2014. And I used it for a similar reason to the one I used then: I needed a bread recipe so simple and basic that the nuances of the effect of the sprouted flours would be obvious to me.
My submarine sandwich bread is such an easy recipe that I use it in introduction classes to gluten-free baking. The bread contains only 1 1/2 cups of my bread flour mix, 1 teaspoon of xanthan gum, active dry yeast, water, and a tiny bit of salt, sugar, and olive oil. No eggs. No milk. No other funky gluten-free add-ins other than the xanthan gum. The recipe reads like a wheat sub bread recipe, except for the flour and the xanthan gum, and it makes a good tasting, golden brown loaf with a nice airy crumb structure. It has a nice slow rise .
And once again, for this test, I shaped the bread a little longer and thinner than a regular submarine sandwich bread and baked it in a 2 1/2-inch wide French bread pan.
I tested four variations:
Version 1 Whole Grain Flour 1 1/2 cups total, 3/4 whole grain3/4 cup whole grain flour: 1/2 cup millet flour, 1/4 cup sorghum flour3/4 starch: 1/4 cup corn starch, 1/4 cup potato starch, 1/4 cup tapioca starch
This is my regular submarine sandwich bread recipe.

Is Ezekiel Bread Gluten
Gluten-free diets are a big trend nowadays, and gluten-free products are springing up all over supermarket shelves. But Ezekiel bread is not gluten-free because its typically made using sprouted ancient wheat grains, barley and rye, all of which contain the protein gluten.
This is one of the main reasons it is not recommended that everyone makes Ezekiel bread a staple of his or her diet. While the soaking and sprouting process, and lightly cooking wheat products can reduce their gluten content, they wont completely remove it.
According to recent research, for those who react negatively to eating gluten, even if they dont have celiac disease, its best to avoid gluten-containing grains and products from the diet. People with irritable bowel syndrome and other forms of digestive distress may also have trouble consuming a high amount of fiber and seeds in whole grain breads.

I have actually attempted twice to make this recipe. There are essentially 3 video clips, a half dozen images as well as paragraphs long worth of directions, none of which correspond. Each of which offers slightly various guidelines for the recipe. Im a routine baker, I make breads commonly. Ive never had as much difficulty critical a recipe as this set. Likewise I think it either needs even more flour or much less water. Ive essentially tossed both doughs in the garbage. Im not attempting a third time. Plainly theyre just trying to include as much content as possible for the sake of advertising and marketing rather than really clearly describing the recipe. Ugh so over it.
Good Source Of Plant Protein
Since Ezekiel bread contains no animal-derived ingredients like milk or eggs, it is suitable for vegan and vegetarian diets. With its unique combination of grains and legumes, it is a good source of protein and essential amino acids . Thus, it is suitable for a vegan diet.

What This Bread Is Not:
- Buckwheat has a very specific flavor , but it isnt neutral or bland. It knows how to hold a conversation with you, and it stands up for itself , whereas typical store-bought flour bread may be very unassuming in flavor and is more of a pale sidekick. This buckwheat bread has serious depth, when toasted its seriously rustic and crunchy on the outside, and has a dark savory flavor to it. My favorite way to eat it is toasting slices of this bread the next day, or when it has cooled down.
- Its surprisingly fluffy too, but not as fluffy as store-bought sliced bread. That said, it can make good sandwich bread but the slices are less wide, so consider making mini sandwiches. It bakes smaller than a traditional loaf of bread, since it doesnt use yeast.
What Does Sprouting Do
Even though grains such as wheat and corn look simple on the outside, they contain enormously complex molecular machinery. There are genes, proteins, and enzymes that can turn a tiny seed into an entire plant.
When the grain receives the right signals, a complex biochemical process begins. The seed starts germinating, breaks through the shell, and sends sprouts up into the air and roots into the soil.
If it gets enough water and nutrients from the soil, it eventually turns into a plant.
A sprouted seed is somewhere between being a seed and being a full-fledged plant.
But theres one thing to keep in mind: The seed doesnt sprout unless the conditions are favorable. Given the right signals mainly hydration and the correct temperature the seed will start to sprout.
