  • Combine melted butter and garlic powder in a bowl. In another small bowl, combine Parmesan cheese and breadcrumbs.
  • Dip each artichoke quarter in melted butter, then breadcrumbs. Place on prepared baking sheet.
  • Bake artichokes until golden brown. Turn once halfway through baking.
  • Let cool to room temperature before serving.

Tips For Cleaning Artichokes:

Slice stems on the bottom so they can sit flatly in the crockpot

Use a scissors to trim pointy leaves

Slice top of artichoke so it is flat. This will make it easier to fill with the oil and spices

Bang the artichoke on a sturdy surface to help open up the leaves. Use your fingers to open up the artichokes + be sure to rinse very well in the sink.

Dip in lemon juice immediately after washing to avoid browning

Once you have that done.. its just a matter of mixing together oil/spices and turning on the crockpot.. THATS IT! Seriously.. couldnt be simpler!

  • ¼ cup finely chopped fresh curly parsley
  • ¼ cup grated parmesan cheese
  • ¼ cup grated pecorino romano cheese
  • 1 tablespoon mixed dried herbs
  • 1 teaspoon coarse salt
  • freshly ground pepper
  • 3 9oz packages frozen artichoke hearts, thawed and drained
  • cup extra virgin olive oil, plus more for the baking dish
  • ¼ cup fresh lemon juice
  • 1 teaspoon finely grated lemon zest
  • 2 garlic cloves, minced
  • Preheat oven to 325 degrees F
  • Combine breadcrumbs, parsley, cheese, herbs and salt in a medium bowl. Season with pepper to taste and mix to combine. Set aside.
  • Whisk olive oil, lemon juice and zest, and garlic in a small bowl or liquid measuring cup. Set aside.
  • I used a 1½ quart 8.5x 11 inch baking dish. My aunt used a 9×13 inch baking dish. Or if you want a single layer of artichokes, use 2 9½ inch baking dishes. They all work! Brush oil on the inside of the baking dish.
  • Place artichokes in a single layer covering the base of the pan, sprinkle stuffing mixture over artichokes, pushing it into the cracks between hearts. Tap the bottom of the dish on a counter to settle bread crumb mixture. Drizzle with Dressing
  • If using 1 pan , place a second layer of artichokes on top of the first layer and repeat topping and stuffing with breadcrumb mixture. If using 2 pans, repeat as above with the second pan.
  • Drizzle the rest of the dressing evenly over breadcrumb topped artichokes.
  • Cover dish with parchment paper, then foil, and bake 30 minutes.
  • Serve immediately and enjoy!

    Making Crispy Artichoke Hearts in the oven is very easy. The key is making sure that they get good air flow around them much like the technique that makes air frying so good.

    Simply use a baking rack placed on top of cookie sheet to bake them. Easy Peasy.

    If you dont have a baking rack, you can use a broiler pan or as a last resort a single layer of parchment paper. Making Roasted Artichoke Hearts without a rack can take a little longer and youll want to flip them several times throughout the baking time.

    Substitutions For This Artichoke Chicken:

    To make paleo/ whole30: If youre doing a Whole 30 or are strict paleo you could omit the wine from this sauce and it will still taste amazing!

    Artichoke Chicken Thighs: You can use chicken tenders or boneless/bone in chicken thighs in this recipe

    Oil: You can use avocado oil, vegetable oil, or even melted butter in place of olive oil

    Thyme: You can substitute thyme with oregano or dried basil. Thyme is measured the same if it is fresh or dried.

    Lemon Juice: We do not recommend using bottled lemon juice. It can be overly acidic. Instead, opt for fresh!

    Wine: If you dont want to use the wine, skip it. You can also use red wine. Pinot grigio or chardonnay works best.
