Ground Turkey Sweet Potato Skillet | Easy & Healthy Recipe

Add the ground turkey mixture to a large, ovenproof casserole dish. Spoon the mashed potatoes evenly on top of the meat. Arrange the mash so that it covers the entire top. Place the casserole dish on a large baking sheet just in case it bubbles over it doesnât make a mess out of your oven. Bake the turkey and mashed potato casserole for 30 minutes.

Garnish with chopped parsley or other fresh herbs if desired. Let the shepherdâs pie rest for 10-15 minutes before serving.

So, yes, this hearty but healthy casserole was inspired by shepherds pie. However, I wanted to change up the topping a bit to add more flavor and texture. Therefore, I topped it with frozen potatoes, which browned nicely and created a chewy instead of mushy topping. Also, the casserole is smothered in a creamy sauce, but its made with only one tablespoon of butter so is actually pretty light.

As mentioned before, you can make the casserole recipe with ground beef too, if you prefer. Actually, I made it twice this week because I wanted to improve the recipe a bit after the first time. So, I used beef first and ground turkey the second time. All in all, me and my family preferred the ground turkey with potatoes casserole. However, we are turkey meat lovers, so our opinion is a little subjective.

This isnt what I would call a quick weeknight dinner. It uses two skillets plus a baking dish and takes over an hour to make including baking time. However, its great for a Sunday dinner or for making ahead if you are home to cook during the day. It will totally with it, believe me! Even though it takes some extra time and energy, the result is extremely delicious and also good for you!

But one of my personal favorite ways to enjoy this healthy ground turkey dish is as leftovers the next morning. Just heat up some of the casserole in a pan and top with a runny egg its the perfect satisfying, veggie-filled breakfast!

  • Add a sauce. My husband is lactose-intolerant, so I typically only add cheese when making this dish for me and the kiddos. When preparing it without cheese, I whip up a quick sauce to add in that finishing element and a little bit of creaminess .
  • Make it creamy. As mentioned above, the sauce adds a great creaminess. For a healthier creamy element, we like adding a ripe, chopped avocado. Fat-free or light sourcream is another great creamy addition.
  • Serve with a low-carb base. To keep the theme of low carb going, we like to serve this meal over cauliflowerrice. To keep it fast, I grab frozen cauliflower rice and pan sear it until lightly browned and tender.
  • Add some freshness. To add a burst of freshness, add in some chopped cilantro or Italian parsley. A squeeze of lime also makes for a nice addition.
  • Try other additions. Again, the goal is getting a quick meal on the table, so these will add time to the prep but any of these would be great additions to this recipe: diced onion, minced garlic, frozen corn, diced sweet bell pepper, and/or diced cherry tomatoes.

This is probably my favorite recipe. It always hits the spot, is easy to make, and has healthy protein and carbs. You can also eat it alone without a side dish which saves you additional calories.

  • 1 lb. Lean Ground Turkey
  • 2 Russet Potatoes, peeled and cut into small cubes
  • 2 Carrots, large
  • 1 Sweet Peas, 15 oz. can
  • ¼ tsp. Ground Black Pepper
  • ¼ tsp. Onion Powder
  • ¼ tsp. Garlic Powder
  • Lightly spray a wide/deep pan with cooking spray, break apart and cook the turkey until slightly browned.
  • Add the potatoes, carrots, and peas . Throw away the remaining liquid from the can of peas.
  • Now add the spices and mix all of the ingredients well.
  • Cook the mixture for 10 minutes covered, but mixing occasionally, or until all vegetables are softened.
  • Remove from heat, let cool for a few minutes, then serve yourself and enjoy!

    Quick post today, guys, cause I have a feeling you might still be worn out from yesterdays feast!

    How To Make This Ground Turkey Skillet Dinner:

    Ground turkey recipes are great for WW plans because they are low in points and filling! Lets get started with this family favorite.

    In a large cast iron skillet, heat olive oil over medium-high heat. Add garlic and cook for 1 minute and then add ground turkey. Use a wooden spoon to break apart meat and continue cooking approximately 8 minutes until browned.

    Add cumin, chili powder, salt and pepper. Stir well to incorporate.

    Add onion and bell pepper, and cook for 3-4 minutes.

    Add diced sweet potato and water.

    Stir and cover with a lid for approximately 6-8 minutes until the sweet potatoes soften.

    Add additional water during this process if needed to keep the meat from drying out.

    Remove lid and add additional salt and pepper if needed. Top with shredded mozzarella and allow it to melt.

    Remove skillet from heat and garnish with fresh cilantro before serving.
