Paleo Carrot Cake Cupcakes

In this easy paleo diet recipe, classic carrot cake is transformed into individual cupcakes. Carrots, dates, and crunchy walnuts add an abundance of flavors and textures. Top the fluffy spiced cupcakes with some cinnamon vanilla frosting, the base of which is chilled coconut cream.

1. Preheat the oven to 325 degrees F. Line a muffin tin with cups. Coarsely chop the carrots and dates and place in a food processor. Pulse until finely chopped. In a large bowl, whisk together the eggs, honey, and coconut oil. Add the carrots and dates and stir well.

2. In a separate bowl, stir together the almond flour, cinnamon, salt, baking soda, and nutmeg. Mix the dry ingredients into the wet ingredients and stir to combine. Fold in the chopped walnuts.

3. Divide the batter equally among the muffin cups, filling each cup about 3/4 of the way full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 5 minutes, and then transfer to a wire rack to cool completely.

4. To make the frosting, blend together the chilled coconut cream , honey, cinnamon, vanilla, and ground cloves in a food processor until completely combined. Spread over the cooled cupcakes.

The human genome didnt undergo any drastic fat-storing mutations around 1990. But the obesity rate has skyrocketed in the past 20 years, reaching almost 36% in 2010. The problem isnt our bodies physiologically, were the same as we always were. The problem is the disjunction between the world we evolved to thrive in and the world we actually have to deal with.

Evolving in a premodern food environment forced our bodies to adapt to an inconsistent food supply. Were very good at storing fat, because for most of human history, our next meal was a lot further away than a trip to the Quickie Mart. Fat storage allowed us to stock up on food when it was available, and use those reserves during periods of scarcity. A biologically hardwired taste for fat and sweetness directed us to calorie-dense foods when they were available, maximizing our energy intake to prepare for lean times ahead.

Back in the day, these adaptations ensured the survival of the species without them, we wouldnt be here at all. Unfortunately for us, our food environment has changed faster than our bodies can keep up. Were adapted for food scarcity, but confronted with overabundance and the constant struggle to limit our consumption. At the same time, these foods lack in nutrition what they provide in calories, so we gain weight even though were also malnourished! Talk about a double whammy!

Food To Avoid On The Paleo Diet

Food to avoid on the Paleo diet includes anything that is processed. This includes:

  • Processed foods
  • Refined vegetable oils
  • Dairy all processed foods made with any dairy products including butter, cheese, cream, yogurt and milk
  • Fatty meats bacon, ribs, chicken legs/thighs/wings/skin, pork/lamb chops, etc
  • Grains and cereals Bread, pasta, rice, oats, barley, rye, spelt, wheat, maize, etc
  • Legumes beans, chickpeas, peas, lentils, peanuts, soybean products etc
  • Refined sugars Chocolate, sweets, fizzy drinks, fruit juice, ice cream, etc
  • Starchy veg potatoes and all potato products, cassava root, tapioca pudding, yams
  • Overly salty food salad dressings, condiments, ham, olives, processed meats, sausages, smoked/dried/salted meat, canned meats and fish, chips, pickled foods
  • Sunflower oil, soybean oil, grapeseed oil, etc
  • Fruit juice

I love chicken! If you ask me any meal that involves a chicken would be really fantastic. But thats not the reason I am sharing this with you.

As I mentioned in the first article, one of the reasons why Paleo is so effective for weight loss is due to its ability to help you reduce calories without consciously restricting them. Studies have shown that eating simpler food leads to eating less, which in turn helps you shed pounds without effort.

So how do you keep a Paleo diet simple? Stick to the basics of a healthy meal: a protein like meat or fish, plenty of non-starchy vegetables, whole foods carbohydrates from root vegetables or fruit, and some healthy fat. Although I love a delicious gourmet meal as much as the next person, its easy to go overboard with delicious Paleo recipes. If youre trying to lose weight, youre better off cooking simple dishes that dont have a bunch of extra ingredients and additional flavoring, and saving those recipes for special occasions or a nice weekend dinner.

Foods You Can Eat On The Paleo Diet

In short, if your ancestors could hunt or gather it, it is allowed on the paleo diet. This includes:

  • Grass-fed meat:choosing grass-fed is healthier for you, the environment and closer to what our ancestors ate.
  • Fish and seafood: choose wild-caught
  • Fresh fruits and veggies
  • Cod
  • Turkey

Grass-fed meat is recommended on the paleo diet because it is leaner than meat from grain-fed animals and has more omega-3 fatty acids, the healthy fats that reduce inflammation in the body and protect your heart. A typical American diet is high in saturated and trans fats and lower in healthy poly- and monounsaturated fats, hence the paleo diet’s emphasis on grass-fed meats.

Look for chicken raised without antibiotics and try to source your meat from a local farm to learn more about how it was raised.

Choosing wild seafood over farm-caught may help boost your omega-3 intake too. That’s not always the case, but look for wild salmon and other sustainably-caught seafood when you’re eating paleo.

Paleo Almond Joy Energy Bars

It is easy to recreate the flavor of popular Almond Joys in this simple paleo snack recipe. Almonds, chocolate, and coconut flakes form the main ingredients. Once everything is blended together the mixture is pressed into a square and chilled to form bars. They are easy to pack along and eat on the go a mini dessert in your bag.


1/3 cup unsweetened coconut flakes2 oz. dark chocolate1-3 tsp water


1. Combine the almonds, coconut flakes, and chocolate in a food processor and pulse to finely chop. Add in the almond butter, maple syrup, vanilla, and salt. Pulse a few more times to combine. Drizzle in the water a little at a time until the mixture starts to clump together.

2. Transfer the mixture to a piece of wax paper or plastic wrap. Press it into an even square and chill, wrapped, for at least one hour. Cut into desired size of bars, wrapping each bar in plastic wrap to store in the fridge.
