Here Ive listed some basics, my starting point ingredients for making vegetarian chili without a recipe along with improv tips. Some recipes add one group of ingredients after another until the pot is full.

That works well if you have a large, wide-bottom pan, think Dutch oven, which I dont. I use a tall, thin pasta cooker, which works fine if you remove items from the pot, after sautéing so that theres room for the next item. Saute and season with salt as you go. No matter the shape of the pot, make sure it has a heavy bottom.

If possible, make the chili a day before eating. This chili doesnt require a long cooking time. But, those flavors will deepen and if allowed to mingle overnight. Then, simply reheat and adjust seasonings as needed.

I’ve been making this homemade chili for so many years that it’s become second nature to make it. Honestly, it felt a little funny measuring the ingredients so I could share the recipe with you.

There is one thing you need to know: I wasn’t joking about this being an easy chili recipe. Even though I have all the ingredients listed in proper measurements, feel free to eyeball and make substitutions. This is one chili that you cannot mess up.

  • Cook Tempeh and Vegetables with the SpicesIn a large, heavy-bottomed pot, heat oil over medium heat until it shimmers. Add tempeh and stir until lightly cooked. Add vegetable and spice mixes and cook until the vegetables are tender, stirring frequently to coat the vegetables with the spices, about 5 minutes. If needed, cook in batches, distributing spices evenly, to avoid over-crowding the pot and give everything a nice sauté.
  • Add the Beans and Wet IngredientsStir in the beans, tomatoes, beer and broth. Turn the heat down to low and simmer for about an hour. Taste for seasoning, add acid to taste and add more salt and pepper if necessary.
  • Serve it Up!When ready, transfer the chili to serving bowls, add toppings and garnish. Serve with rice, tortillas or Gluten-free Cornbread.
  • Keep in mind that these vegetarian ingredients and quantities are just suggestions. This is chili, not croissants were making. So, be sure to make it your own signature blend! Be bold. On that note, these recommendations will give you a chili ranking probably a 6 or 7 on the heat scale. Adjust accordingly to your preferences.

    Where Can I Buy Dried Chili Peppers

    Vegetarian Black Bean Chili

    You can find a variety of dried chile peppers at Mexican grocery stores, some standard grocery stores such as ALDI, as well as online. If buying online, I recommend the chili peppers from the brand Ole Rico. They are super fresh and have a much softer texture than other dried peppers Ive tried. They also sell a three-pack of the exact variety of chili peppers I use in my chili powder! .

    Slow Simmering Is Key For Texture And Flavor

    Many chili recipes tell you to simmer for just 30 minutes. You can get a good chili this way , but chili is designed to be a slow-simmered dish.

    This is because the flavors of chili always improve with a long, slow simmer. Slow simmering also contributes to a thicker, more unctuous consistency, so that every bite has the same flavor and texture .

    Takeaway: Gently simmer this chili for 1 1/2 hours for maximal flavor and the most luxurious texture.

    How To Select Dried Chile Peppers For Chili Powder

    For complex yet balanced flavors, I use three different chile peppers. Check out the graphic below for the flavor profile, heat level, and substitutes for each chile pepper.

    Tip: You can tailor the spiciness with the amount of chile de arbols you add. Omit entirely for a mild chili powder . Add 2 peppers for a moderate heat, or up to 5 peppers for a spicy, spicy heat.

    Ingredient Notes & Substitution Suggestions

    Onion: Red onion can also be used, or leave it out if you dont like onions.

    Bell pepper: Any color of bell pepper will work in this recipe.

    Carrot: Carrots add a lovely natural sweetness to this chili. Look for whole, top-on carrots if you can find them!

    Celery: Adds depth of flavor, but can be omitted if needed.

    Tomato sauce: Look for canned tomato sauce near the other canned tomato products. Look for one with no-added sugar to keep this recipe sugar-free.

    Fire roasted tomatoes: Add a smokiness to this recipe, but regular diced tomatoes will work well, too.

    Beans: I use a mix of black, pinto, and kidney beans for this recipe, but feel free to use what you have on hand. Chili beans and white beans will also work.

    Koser salt: If using table salt, you may need to reduce the amount.

    Spices: Ground cumin, granulated garlic, chili powder, and smoked paprika all add tons of flavor will little effort. Two cloves of minced fresh garlic can be used in place of the garlic powder, and regular paprika in place of smoked. Use a mild chili powder to keep the spiciness low, or hot chili powder for a kick.

    Fresh lime juice: Dont skip the fresh lime juice! It really makes this dish.

    Use any color or combination of bell peppers you like.

    If you cant find or dont have fire roasted tomatoes, regular diced tomatoes are fine too.

    Any bean will work here, including canned black, bean, pinto, white, or chickpeas

    This is a very mild chili. For a spicier version add ¼ teaspoon cayenne pepper along with the other ingredients and stir in a tablespoon of your favorite hot sauce at the end.

    • Feeding crowds- Chili is a great option for feeding large groups of people because its easy to make and inexpensive.
    • Cooking options- Make on the stovetop, in your Instant Pot, or Crock Pot.
    • Storing- Leftovers should be kept in an airtight container in the refrigerator for up to 5-7 days.
    • Freezing- Chili freezes well for up to 3-4 months.
    • Substitutions- Beans are a great substitute for ground beef. Bulgur or another grain also help to mimic a beef texture.

    Vegan Slow Cooker Quinoa Chili. Its been raining on and off for a week here in Dallas. So weather like this makes me want to make soup or chili. So I made some chili for you!

    This healthy chili is vegan and gluten free! It also happens to be oil free.

    You can make the whole thing in the slow cooker while you are not even home. I love no fuss meals like that.

    If anyone wants to make this in the instant pot and report cooking time and directions back, Id love to hear it. This recipe makes a lot and freezes well so its great for those on a budget and those that are meal planers.

    How To Make Oil

    Dice the onion and jalapeño, crush or finely mince the garlic, and rinse off the quinoa in a fine-mesh strainer. Sautéing the onion and jalapeño first will give the chili a little more depth of flavor, but I personally dont bother with the extra dishes.

    If you do sauté, it ensures the veggies are cooked through. Another option is to just finely cut the veggies.

    Then add everything to the crockpot and stir to combine, making sure the tomato paste is mixed in. Cook on low for 4-5 hours or high for 2 ½-3 hours, or until the quinoa is done. The chili will have thickened up.

    This Easy Vegetarian Chili Recipe is our family’s go-to, one-pot meal. It’s full of vegetables, made with pantry staple ingredients, and is so easy to make. It’s a delicious vegan chili that everyone raves about!

    I love sitting down to a big bowl of hearty vegetarian chili on a cool evening. I actually prefer vegetarian chili to a meat-based chili, even though I can no longer refer to myself as a vegetarian.

    When I was 20 years old, I decided to stop eating meat. During those 14 years, I became really attached to my meat-free comfort foods. Vegetarian chili is at the top of my list followed very closely by Thai coconut curries and Indian curries.

    There’s just something about a one-pot meal where all the flavors meld together to become so much more than they could have been on their own.

    What Is Vegan Chili Made Of

    There are so many great vegan chili recipes to choose from and most of them have similar ingredients.

    • Beans- We always use beans in our veggie chili recipes to help bulk them up.
    • Veggies- Often time ingredients include onion, garlic, bell peppers, sweet potatoes, and corn.
    • Chiles- For those that like a little spice, chiles are a great option.
    • Tomatoes- Whether its fresh tomatoes or canned, nearly all chili recipes include tomatoes.
    • Grain- All of my recipes include bulgur that mimics a ground beef texture. Other gluten-free options are buckwheat groats or brown rice.
    • Chili Powder- A seasoning that is a must in any good chili recipe to add lots of delicious flavor.
    • Spices- Other spices can include season salt, garlic powder, onion powder, cumin, and smoked paprika.
    • Salsa- Its a great way to add even more flavor.

    Add Some Richness And Body

    Classic chili recipes are very rich, but many of the vegetarian chili recipes I tried online were more loose, like soup. To ensure my chili is very rich, I rely on a few ingredients.

    First, red wine, which intensifies all the aromatics, spices, and chili peppers in a way that vegetable broth alone cannot. Also, it adds to the rich body of the chili . While beer is more traditional in chili, every time Ive made chili with beer, it ends up too bitter for my taste.

    Second, cocoa powder. It sounds funky, but lots of chili recipes actually add a small amount of dark chocolate or cocoa powder. Chocolate not only adds depth of flavor but also accentuates the fruitiness of the dried chili peppers.

    Third, instead of using only pinto beans, I add in one can of navy beans. Since theyre so small, they partially disintegrate during simmering, which naturally thickens the chili.

    Finally, masa harina, AKA Mexican corn flour. When stirred in at the end, it thickens the chili even more, gives it a velvety texture, and a nice subtle corn flavor. This chili recipe is already quite thick, so Id say this ingredient is optional.

    Takeaway: Chili should be rich both in taste and texture. Red wine, cocoa powder, and masa harina all contribute to that.

    How To Make The Best Vegetarian Chili

    While the ingredients in this chili recipe are super basic, the flavor is anything but. Simple ingredients can taste exceptional when they start off with aromatics like onion, carrot, celery and garlic.

    I added traditional chili spices and some smoked paprika for an extra-savory, smoky note. Canned beans and tomatoes contribute delicious plant-based protein and heft.

    Blending a small portion of the chili makes it look and taste like a chili that has been cooking all morning long, but it only needs about 30 minutes of simmering. Thats a little trick that I learned from my lentil soup, which is another cozy option for cold days.

    Finishing off the chili with a little splash of sherry vinegar and fresh cilantro makes it taste vibrant and fresh. The vinegar offers a little acidity and complexity, and it makes all the difference.
