What If My Bread Machine Does Not Have A Gluten
If your bread machine does not have a gluten-free setting, you will want the setting that only has one mixing cycle . Gluten-free bread does not need a second rise.
If you dont have a feature with only one mixing cycle, try to see if you can override the pre-programmed settings for a 20-minute mix cycle, 1-hour rise cycle, and 1 hour-bake cycle.
You can also check out your bread machines manufacturer website to see if they have a gluten-free setting suggestion for their bread machine. Some bread machine makers have instructions for a gluten-free bread setting for their older models.
Why Was My Gluten
For your bread machine, does it have a gluten free setting? This setting is important because it only does one mix cycle, not two mix cycles like you get with other settings.
If you don’t have the gluten free setting option, use a quick program that features one mixing cycle, rather than two, when making gluten free bread. Mixing it twice will always cause the bread to be denser.
Are you scooping your measuring cup into the flour? Or spooning the flours into the cups and then leveling? You should always spoon then level.
Otherwise, you’ll end up with more flour than you want which causes the bread to be dense.
Are you storing your flours in the freezer or refrigerator? If flours are stored that way they lose moisture and when they are mixed with other ingredients they tend to absorb more of the moisture and the bread is denser.

Helpful Tips For Making Gluten Free Bread
Tip 1: You can leave out the xanthan gum if your brand of gluten-free flour contains it. Check the ingredient list to make sure. You can, however, still add a little xanthan gum without impacting the end result significantly if you’d like.
Tip 2: There is a short preheat at the beginning of the gluten-free cycle . So don’t worry if you don’t see the machine actively working during this time.
Mix-Ins: Seeds, nuts, and other optional mix-ins must be added with all other ingredients. Add mix-ins after the yeast, not during the mix-in signal.
Storing: Store homemade gluten-free bread in a bread bag for up to 3 days. After this, it won’t be good for sandwiches but can still be used for toasting or making breadcrumbs. This recipe is freezer-friendly for up to 3 months when stored in plastic freezer-safe bags. Slice prior to freezing for easy individual thawing.

What Bread Machines Are Best For Gluten Free Bread
There are several great brands of gluten free bread machines that have a gluten free setting. My friend, Jane, who wrote The Gluten Free Bread Machine Cookbook, likes to recommend the Cuisinart CBK-200 machine. I have an old Breadman Pro, but I do not think they even make it any longer. Many in my gluten free FB group like this Hamilton Beach model.

What Kind Of Flour
Many friends have asked what type of flour I use. I typically use one of these three options:
- Cup4Cup Gluten-Free Flour: This is what I use most often.
- Betty Crocker Gluten-Free Rice Flour Blend: This used to be my favorite, but its not as healthy.
- Pamelas Gluten-Free Artisan Blend
If you don’t want to use any of the flours I’ve listed, no worries. Just try and use a gluten-free blend with ingredients such as rice flour, potato starch, and tapioca starch if you want results similar to mine. Tapioca starch creates a texture similar to traditional baked goods, and it’s lighter than coconut flour and almond meal.
Tips For Making Gluten Free Bread In A Bread Maker:
1- You dont have to have the most expensive breadmachine to have the best bread. I travel with my bread makers for many cooking classes, and I wont risk a big investment being in the hands of the TSA. So I tend to prefer mid-range bread makers for travel: Oster®, BreadMan® or Cuisinart® and Hamilton Beach®. These are all typically in the $85-$150 range.
But I truly love the loaves my reliable, two-paddled Zojirushi® turns out I dont risk traveling with it because it is a costlier machine. You can read about the Zojirushi as well as my preferred mid-range and travel machines in my gluten free bread machine reviews.
The process of baking gluten free bread in a bread machine is the same, no matter which model you use: liquids first, then dry ingredients, then yeast. Heres a quick video showing you how:
2- You dont have to have a bread maker with a gluten free setting to bake gluten free bread. But it helps. If you have an older bread machine without a gluten free setting, make sure its totally clean from any gluten residue. If there are scratches on the pan or the paddle, buy new ones because they could house gluten left behind from the last loaf.
If you are in the market for a new bread maker, buy one with a gluten free setting. Check my review of gluten free bread machines though, as they are not all created equally just because a machine has a gluten free setting, does not mean it will produce a good loaf.

Two Things You Must Buy To Make This Bread:
1) A Bread Machine with a gluten-free setting and that bakes up to 2lb loaves.
Gluten-free yeast breads do not handle two rises well at all. They need extra mixing time, and only one rise cycle. You need to make sure to get a bread machine with a gluten-free setting as it is programmed for this method. I know of three bread machines brands that have models with a gluten-free setting.
Some have commented that this bread overflowed in their bread machine. This recipe is scaled for a bread machine that accomodates 2 lb. loaves. If youre is smaller, with room for 1 lb. loaves only, then this will overflow.
The older bread machine that I have and have used for years in making this bread is . I have had mine for many years now, and for over a year I used it weekly. It has worked perfectly for me. Another, very similar model is available with free shipping with Amazon Prime, Cuisinart CBK-100 2-Pound Programmable Breadmaker.
There are, Im sure, other models available, but hopefully this gives you a starting place. Just remember to make sure to get one that says it does 2 lb. loaves and has good reviews in regards to mixing well and not burning.
2) Maninis brand Gluten-free Multi-Purpose Flour
Right now, you can find Maninis flour and bread mixes for sale at natural food markets all over the Pacific Northwest, or buy directly from the Maninis website. You can search to see if it is available near you here. Or like I said, you can if thats easier.

Which Method Is Better Oven Or Bread Maker
I personally prefer using my breadmaker to make tasty gluten-free bread. Its so much faster and easier, and I find that the bread comes out even fluffier.
I also find myself making homemade bread more often when I can use the bread machine because it takes a lot less of my time.
However, if you like crusty bread, youll want to use the oven method. A breadmaker just cant recreate the crust on delicious bread that comes from the oven.
Can I Make This Recipe Using Other Gluten Free Flours Like Buckwheat Flour Or Coconut Flour
Theres a big difference between gluten free plain/self-raising flour and a *singular* type gluten free flour.
When I say gluten free plain or self-raising flour in a recipe, I mean a BLEND of gluten free flours, not just one, singular flour. I buy mine down the free from aisle of my local supermarket.
Definitely go for a gluten free flour blend.

- Make sure to read all the instructions first and get the ingredients prepared. This ensures you follow the recipe in order and dont miss any steps.
- Do not use instant yeast. Dry active yeast or quick yeast work well but instant does not.
- For egg-free bread, use chia eggs. The three eggs can be replaced by a mix of 1 tablespoon of chia seeds and 7 tablespoons of water. Let this mix sit for at least 5 minutes before you add it to the recipe.
- You can use psyllium husk powder in place of xanthan gum. 3 tablespoons of psyllium will replace 1 ½ teaspoon of Xanthan.

Which Breadmaker Do You Use
Its important to choose a breadmaker with a gluten free setting. This is because gluten free bread only needs to rise once, not twice like conventional bread.
While there are several breadmakers now that do have a gluten free setting, the only one I use and recommend is the Zojirushi Home Bakery Virtuoso. Ive had mine for about 7 years now and its still going strong!

Tips For Making Gluten
Here are my tips that work with this gluten-free bread recipe. See below for my gluten free bread machine recipe.
Don’t substitute anything in this gluten free bread recipe unless I specified above that I’ve tested it. This is important. If you substitute something I can’t guarantee anything and I can’t help you troubleshoot if something doesn’t work in your gluten-free bread.
Ingredients at room temperature work best. You can always run your eggs under warm water for a couple of minutes to bring the temperature up.
Read the recipe instruction and get all ingredients out before you start.
Use dry active yeast or quick yeast. I use Fleischmann’s yeast: it’s labeled gluten-free. I’ve also used Red Star yeast.
If your bread sinks in the middle before it is done baking you most likely let the yeast proof sit too long before using it or you let your bread rise too long. You want to put your gluten-free bread in the oven when it rises just above the top of the loaf pan, no longer.
Make sure your water is between 95-110 degrees before adding the yeast. If you don’t have a thermometer I suggest you get one.
Line the loaf pan with parchment paper and then spray it with oil, this will help you remove the loaf from the pan.
Pan size matters. If you use a wider pan your loaf will be wider, and shorter. If you use a narrower pan your loaf baking time might change.
