Roast The Sunflower Seeds

This step helps the seeds to start releasing some of their natural oils, as well as enhances the flavor. However, if youd prefer to make raw sunbutter then you can skip this step.

To begin, spread the raw sunflower seeds across a baking sheet. Then, roast the raw sunflower seeds in the oven at 330ºF/165ºC for 8 minutes, or until the seeds are golden brown.

Then, remove the sunflower seeds from the oven and leave them to one side until cool to touch.

How To Roast Sunflower Seeds

If you buy raw sunflower seeds, youll want to roast them before making this sunflower seed butter! Spread the raw sunflower seeds on a sheet pan and roast in an oven preheated to 350ºF for 10-15 minutes. Stir the seeds occasionally. The seeds are done when they are golden brown and smell delicious!

How To Make Sunflower Seed Butter

The beauty of this recipe is that its very easy to customize! You can choose to add flavorings like cinnamon or vanilla extract, and you can sweeten it with honey or maple syrup.

But if you want an all-natural spread with nothing additional, you dont have to include anything else. Its just as delicious either way!

NOTE: If you like super creamy spreads, you should know that the texture is a bit grainy. If you want it creamier, just blend in a bit of melted refined coconut oil or avocado oil.

  • Toast the seeds. When the seeds are fully toasted, theyll have a beautiful golden color and theyll smell amazing!
  • TIP:To help them toast evenly, stir the seeds at least once while theyre in the oven.

  • Process to create a chunky texture.
  • As you make the sunflower butter, keep in mind that the seeds will first become a fine powder. Keep the speed on high, and after about 2 minutes, youll have a mealy texture.

    You can see that in the left side of the photo below. Continue for a another 2 to 3 minutes, and youll have a chunky paste, as shown on the right.

    Before you continue, be sure to use a spatula to scrape down the sides of the bowl.

  • Keep blending to create a smooth butter.
  • Add the optional extract and sweetener, then keep blending on high speed.

    If the butter isnt as smooth as youd like it, then gradually add 2 to 3 tsp refined melted coconut oil or avocado oil.

    How To Make Sunbutter Energy Bars

    Your basic stir and mix routine is all that is required to prepare these easy no bake bars.

    TIP! I always start with a fresh jar of sunflower seed butter. I find the bars hold together best when the oils are loosey-goosey if you know what I mean.

    Combine the sunbutter with the honey in a small saucepan and lightly melt them together over low heat.

    Then press the mixture into your dish.

    TIP! Use the back of a flat spatula to really press the mixture down. This ensures your bars hold together well and don’t crumble.

    Then just pop the pan into the fridge.

    When they have set, slice into bars.

    Super easy!

    I used to like those Quaker Chewy Bars as a teenager and these are kind of like a healthier, non processed version. You could add a few chocolate chips to these if they called your name.

    Sunbutter is a nut butter made out of sunflower seeds! It definitely has that earthy sunflower seed taste, and it tastes so good spread onto English muffins, stirred into oatmeal, and oh yeah, baked into cookies.

    Sunflower seeds will always have a fond spot in my memory because I remember eating them, roasted and salted, from the shell as a child a small pile of discarded sunflower seed shells forming beside me.     And I love making homemade peanut butter. In my first cookbook, Peanut Butter Comfort, there are 27 recipes for homemade peanut butter variations.

    But Ill cheat on my beloved peanut butter for Sunflower Seed Butter. Theres a certain nuttiness, earthiness, and distinct flavor thats unique and fabulous.

    I made a hybrid using both sunflower seeds and peanuts, marrying my two favorite butters into one. Its creamy, drippy, and velvety smooth. Its nothing like the texture of most commercially-made peanut butters.

    I prefer to bake with those kind of classic peanut butters because they yield the best, fluffiest, and most consistent results in cookies and bars, but for eating straight out of the jar , nothing compares to homemade.

    If youve never made peanut butter before, this post has step-by-step photos showcasing each stage the peanuts go through before turning into peanut butter. This post is similar using sunflower seeds.

    Most notably, make sure you have a full-sized food processor, put the seeds in first, and let them process for 10 to 15 minutes, or until you see the early stages of sunflower seed butter before adding the peanuts.

The batch in the pictures is made with raw sunflower seeds so it didnt get quite as smooth as it does when you start with roasted sunflower seeds.

    • Yield: One batch makes approximately 1 ½ cups of seed butter.
    • Storage: Because sunflower seed butter doesnt have any added hydrogenated oils or preservatives, you should store it in the refrigerator if youre not going to use it within a few days. Stored in the refrigerator, sunflower butter should keep for several weeks in a lidded glass jar.
    • Freezing: You can store sunflower butter in the freezer for up to 4 months.
    • Dont rush: Other than having the right equipment, the most important thing about making nut and seed butter at home is not rushing the process. If youre tempted to just toss the seeds into the machine and hit the HIGH button, please dont. The best sunflower seed butter is made with gradual processing at low speed. It takes longer, but the end result is smooth and luscious. Be patient.
    • Processing times may vary: Due to the motor speed of individual machines, your butter may need more or less time to come together.
    • Using raw seeds: Sunflower butter made with raw seeds tends to be pale gray and have a slightly bitter taste. A little sweetener goes a long way to improve the flavor, but you cant fix the unappetizing gray color . Thats just my personal opinion.

    How To Make Sunbutter Cookies

  • In a medium mixing bowl, mix sunflower seed butter, coconut sugar, and egg.
  • Add cocoa powder, and baking soda, and mix until incorporated. Depending on how thick your sunflower seed butter is, you may need to work it with your hands.
  • Work in the chocolate chips or chopped chocolate until evenly incorporated.
  • Form 18-24 small cookie dough balls and place them 12 at a time onto your cookie sheet, 2-inches apart.
  • Press down lightly on each cookie to form a circle.
  • Bake from 8 to 10 minutes, or until set.
  • If you like them softer, aim for 7-8 minutes.

    Ways To Sweeten And Flavor Your Sunflower Butter

    For flavoring and sweetening the sunflower seed butter, I like to add a pinch of cinnamon, some coconut oil, some vanilla extract, and a little brown sugar at the very end. Coconut sugar would be great, too. I tend to be conservative, so if you like your butter a bit sweet, add additional sugar, one teaspoon at a time. Taste in between each addition until its where youd like it.

    In the past, Ive used liquid sweeteners like maple syrup, but because nuts and seeds have a great deal of natural oil, adding additional water-based liquid to your seed butter can cause it to seize up, so I play it safe these days and use dry sweeteners. Why? In short, the oils gather together and separate from the water, making your nut or seed butter clumpy and difficult to spread.
