That was until I moved to the South. Yes, my friends, there is nothing better than southern macaroni and cheese. Southerners love macaroni and cheese like family. Theres even an old joke about it: You know youre in the South when restaurant menus list mac and cheese as a vegetable.

My gluten-free southern baked macaroni and cheese recipe is loaded with three kinds of cheeses and is made super creamy with the addition of evaporated milk.

What Macaroni Brands Are Gluten Free

There are many brands of gluten free macaroni available in grocery stores. I use mostly Tinkyada and Jovial brands. They seem to hold up better than most pasta brands. You can use any gluten free brand but please make sure to cook your gluten-free elbow macaroni according to package directions since it varies greatly by ingredient.

Can I Bake This

Yes, actually! But you need 1/3 less macaroni. So use only 8 ounces of macaroni instead of 12.

Take about 4 minutes off of the cook time for your specific brand of pasta. Thats because itll continue cooking in the oven. Top with breadcrumbs, croutons or whatever you like to top baked mac and cheese with.

Bake at 350 °F for 25-30 minutes.

The BEST Gluten Free Macaroni and Cheese Recipe

Mushy pasta can ruin a meal faster than anything. Here are my best tips to avoid mushy pasta:

  • Cook the macaroni a minute less than the package says so that the pasta is very al dente. This way it gets some moisture from the cheese sauce and doesn’t get mushy.
  • After cooking, drain the pasta in a colander. Rinse the pasta well in cold water to halt the cooking process to avoid mushy pasta

Step 3: Pourthe cheese sauce into the pasta and mix well to coat all of the gluten free macaroni.

Step 4: In a small bowl, add your gluten free panko and topping ingredients and mix well. See below for fun topping ideas if you want to try something fun.

Step 5: Add the gluten free macaroni and cheese mixture to an 8×8 baking dish. I love using a casserole dish because it won’t get scraped up by serving utensils. Use a spoon to spread it all out.

Step 6: Sprinkle your topping over the mac n cheese. Cover the whole top.

Step 7: Bake for 15-20 minutes until it is hot and bubbly.

Gluten free mac and cheese recipe, anyone? I can assure you that this is a little nicer than a certain free from ready meal mac and cheese that everyone seems to collectively hate ? This is exactly how mac and cheese should be!

Well, how should gluten free mac and cheese be, then?!

For me, its gotta be insanely cheesy, impeccably seasoned and smoky with a lovely crispy breadcrumbed top.

The macaroni has gotta be lovely and slightly al-dente too after a little blast in the oven then top with fresh chives and youre onto a winner!

Sounds good right?! And yes this recipe is totally vegan, yet it still ticks all of those boxes. You can use regular cheese if you want though and skip these next few paragraphs Ill leave that up to you.

And speaking of my gluten free mac and cheese recipe being vegan, I have a bit of a bone to pick with the usual vegan way of making mac and cheese.

The usual way being soaking cashew nuts and blending them to make your cheese sauce and then adding in nutritional yeast too. Ive got so many bones to pick with this method that Im gonna have to get out the bullet points

So whats the secret to creating the perfect vegan AND gluten free mac and cheese recipe that is super simple?

Ingredients For Mac & Cheese

Gluten-Free Pasta: You can use any type of gluten-free elbow macaroni for this pasta, but I prefer Barilla as I think it’s sturdier and holds up well in the oven. I’ve also had success with Banza, Jovial, and Ronzoni when making baked pasta dishes. Or, if you don’t want to use elbows, use whatever shape you like. Penne and rotini work well too!

Gluten-Free Breadcrumbs: For breadcrumbs, I prefer Aleia’s! They are my go-to brand for breadcrumbs like in these meatballs or this meatloaf recipe. You can also make your own using gluten-free sandwich bread .

Gluten-Free Flour: For thickening the roux, I use Cup4Cup, my #1 recommended gluten-free flour blend. I’ve used it to make everything from fresh croissants, bagels, empanadas, muffins, cookies, and more. It has never failed me.

Other Ingredients You Will Need

Milk: I use Lactaid milk for this recipe, but regular milk works too.

Cheese: We’re using fresh cheese in this recipe. Grate it yourself for the best results! I use mostly Cheddar and a little Monterey Jack, both from Cabot.

Salt & pepper: Nothing wrong with a little S& P.Dried mustard: This just gives the macaroni and cheese a deeper flavor. Not spicy, so don’t worry!

Dried nutmeg: A little hint of sweet, nutty flavor pairs nicely with the macaroni and cheese.

Melted butter: This is for both the roux and for the breadcrumbs so they get nice and golden brown.

Optional Mix-ins: bacon, vegetables, or whatever you like!

Freshly Grated Cheese Vs Pre

Freshly grated is the way to go! But why?

Pre-packaged shredded cheese is convenient, its helpfully measured and its fuss-free, but thats about it.

For this mac and cheese, its a big no because there are ingredients like potato starch that keep the cheese from clumping together in the package, and consequently making it where the cheese doesnt melt.

Along with potato starch is natamycin, a mold inhibitor, that keeps shredded cheese fresh. Whole Foods list natamycin as an unacceptable food ingredient, and I definitely agree.

And then theres the antifungal ingredient. Its a natural soil bacteria, but its a byproduct of an insect. It doesnt absorb well into the body, so there arent any serious side effects, but kind of gross.

Another component in some shredded cheese is cellulose which keeps the cheese from absorbing moisture. Cellulose is a non-digestible plant fiber and although it absorbs moisture, its yet another additive. Though a bag of shredded cheese is easy, it isnt as natural as I would like.

Grating fresh cheese, for me, is the best option. You know what it is in it, it costs less than pre-packaged cheese, and its a little effort to ensure the best taste and texture for this mac and cheese.

What Gluten Free Breadcrumbs Should I Use For Your Gluten Free Mac And Cheese Recipe

How to Make Gluten Free Baked Macaroni & Cheese

I generally use a packet of gluten free breadcrumbs because its easier, but lately Tesco seems to have zero options for gf breadcrumbs anymore.

Does anyone else find they have stopped stocking them in their local?!

If so, blitzing up old gluten free bread in a food processor is a great way to do this in seconds. If you dont have a food processor, simply hand break a few slices of bread it doesnt matter if theyre a little chunky, theyll be like nice chunky croutons!

Gluten Free Macaroni Cheese

I have been playing around with a few different gluten free macaroni cheese recipes in recent weeks but hadnt really found one that worked for me. Plus our oven broke recently so I needed to create my own version that could be grilled rather than baked.

The gluten free macaroni cheese recipe below is the result of my kitchen experiments and I am really pleased with it. You make the cheese sauce while the pasta cooks, then combine before popping under the grill for 10-15 minutes. Easy peasy!

How To Make Baked Macaroni And Cheese

There are a few little tricks I learned when researching baked mac and cheese. They make every difference in the world between a great mac and cheese and a dry one:

  • Boil the noodles. One of the best tips I learned from my research is to undercook the pasta. Undercooking the pasta by just a couple of minutes helps separate the pasta from the sauce and allows them to join together in the oven, instead of the pasta breaking down into the sauce .
  • Shred your own cheese. This should really go without saying, but shredding your own cheese, to me, is a must in anything where cheese is the star of the recipe.
  • Make a roux. What is a roux? A roux is just a fat mixed with flour to create a thickening base for many sauces. In this case, melt the butter and add the cornstarch or arrowroot. You can use my xanthan gum-free flour blend , but its even easier to use cornstarch so I dont bother. After the roux has been made and allowed to bubble for one minute, slowly add the milk and then the cream. Adding it slowly will allow you to keep lumps from forming. Then add the spices and continue cooking until the sauce thickens.
  • Add 1/3 of the cheese to the sauce. We only want to add 1/3 of the cheese to the sauce because were going to layer the cheese with the noodles and sauce.
  • Begin layering. In a casserole pan , layer half the noodles and sauce on the bottom, followed by another 1/3 of the cheese. Repeat this layering one more time, ending with the final third of cheese on top.

    How To Make Gluten Free Mac And Cheese

  • Prepare the noodles. Bring a large pot of salted water to a boil and add noodles. Cook the noodles until they are al dente.
  • Make a roux. To make a roux you add butter to a large pot over medium/high heat. When the butter has melted add the oat flour and whisk the two ingredients together until a paste forms. Slowly add the milk to the mixture and whisk constantly so the milk doesnt burn and so the ingredients combine and thicken. Add the salt, pepper, garlic, and mix.
  • Add the cheese. When the milk mixture is thick, remove the pot from the heat and add the cheese. Stir the cheese into the milk until the cheese is melted.
  • Combine the noodles + cheese sauce. Finally, stir the noodles into the cheese sauce until all the noodles are covered in cheese sauce.
  • Serve. Serve with fresh cracked pepper and enjoy.

    Gluten Free Mac and Cheese

    Yep, this is a nut-free recipe as far as ingredients go, BUT make sure you check the ingredients label on ALL the products you use to bake this cake just to be safe.

    Even if the products dont contain nuts, they may have a may contain nuts warning due to being produced in a factory that handles nuts.

    What Vegan Cheese Should I Use For This Recipe

    As Ive probably said a billion times already, Id recommend always using Applewood smoky vegan cheese from Asda for this recipe.

    Results may vary massively if using other vegan cheese so please dont use any old random vegan cheese and be disappointed!

    The Applewood cheese has an AMAZING smoky flavour that this recipe really needs, so I wouldnt overly recommend using any plain old block of vegan cheese. They arent as cheesy as you think sometimes leaving the meal a little bland.

    Indulgent Gluten Free Macaroni N Cheese

    • 2 Tablespoons butter
    • 1/2 teaspoon salt
    • 1/8 teaspoon fresh ground black pepper
    • 1/8 teaspoon ground mustard
    • 1/4 cup sour cream
    • 3 ounces cream cheese, room temperature
    • 2 Tablespoons milk
    • 1 cup shredded Cheddar cheese , divided
    • 4 slices Cheddar or Colby Jack cheese
    • Paprika, for dusting top before baking
  • Preheat oven to 425F.
  • Grease a 2-quart casserole.
  • Once pasta is cooked according to package directions, drain and return it to the cooking pot.
  • Add butter, salt, pepper and ground mustard stir to help melt butter.
  • Add sour cream, cream cheese, milk and ½ cup of the shredded Cheddar stir gently until mixture is mostly uniform and no large chunks of the cream cheese remain.
  • Spoon ½ of the pasta mixture into the prepared casserole.
  • Sprinkle remaining ½ cup Cheddar over top.
  • Top with remaining pasta mixture.
  • Place Cheddar slices on top to cover the pasta dust with paprika, if desired.
  • Bake 10-15 minutes, uncovered, until cheese is bubbly and begins to brown on top.
