Spinach Chickpea Curry With Coconut Not Tomatoes
A super quick, easy and tasty vegan main that can be on the table within twenty minutes. This spinach chickpea curry is made with coconut milk rather than tomatoes, which makes a most delicious change. If you prefer almond milk, you can use it instead of coconut milk. Serve with rice or flatbreads. When the dish is ready, you can also add a little bit of olive oil, just a tablespoon for taste. This is one of my favorite meatless recipes.

We dont have a ton of dinner recipes here at The Fit Cookie. But I still wanted to meet our readers needs for allergy friendly dinners, so I decided to do a gluten free dairy free dinner recipe roundup.
Since we had quite a few recipe submissions for our roundup, I decided to separate them into 2 different allergy friendly recipe roundups: 1) comfort food recipes and 2) healthy dinner recipes .
Comfort food recipes can sometimes be hard to find online or adapt to fit your allergy needs, so I thought this one would be fun to put together for everyone!
This roundup has 30 recipes, but Id like to keep adding to it as we find new recipes so you have a good source for meals and dinners .

What To Look For When Buying Salmon
The other important part of this salmon and asparagus recipe is the quality of the salmon! Theres a wide variety of salmon quality at the store . Heres what to look for when shopping for this sheet pan meal:
- Fresh salmon is best. You can find decent frozen salmon. But for the very best salmon, buy it fresh from your local seafood counter.
- Buy wild caught salmon. Fish that is wild caught in your country is usually a sustainable choice. There are also quality options in well-regulated farms see Seafood Watch Consumer Guide.
- Coho is a good choice. We tend to like Coho salmon for its mild flavor: its a good middle of the road option in terms of price. Of course, King salmon is incredible but more of a splurge. Atlantic salmon is typically farmed salmon, so its a less desirable choice.

The Thing With Dairy And Gluten
Gluten and dairy are delicious, I know, lets not pretend. LikeI dream of crawling into a giant pita bread with cheese in it and eating my way out almost every night. But dairy and gluten can cause a lot of trouble for many people all over the world and most of us dont even know it! Like myself, I never really had digestive issues after eating bread with cheese, so I thought: Im good. Seems like I won the genetic lottery. Smart, beautiful, humble and can eat pizza without having to cut it out of her stomach.
Turns out, my sensitivity to gluten, dairy and about 20 other types of foods shows up in other symptoms. Like pains in my joints, my muscles, my headSo yeah, I did a test, that cost me a lot of real money, not crypto, some dignity and a broken vein. Im in the process of eliminating the 20+ foods they found I shouldnt eat. And by eliminating I mean, eating everything that I already have in my fridge and not buying them anymore.
