To make this casserole a bit more WW friendly follow the recipe below but replace the items with these.

Italian Sausage I used Jimmy Dean Fully cooked turkey sausage crumbles . Since the sausage is fully cooked already just you dont need to heat it up in the pan for very long. It will cook in the casserole dish.

Change the cheddar cheese to a reduced fat cheddar

Use 1% milk instead of full fat milk

Ways To Add Even More Flavor To A Hash Brown Casserole Without Soup

No need to add condensed soup to make your meal more flavorful! You can easily make a hash brown casserole without soup, using any of these add-ons for more flavor:

  • Creamy bechamel sauce
  • Chicken or vegetable bouillon cube
  • Sauces like Dijon mustard or Worcestershire
  • Spices like garlic and parsley, or dry Ranch seasoning

This recipe really deserves a 5-star rating for all of its great attributes! Its really easy to make and can be made the night before. In the morning just put it in the oven to cook while your family is doing other fun activities.

However, you dont have to put it together the night before. As well, you can make it and bake it immediately.

One important tip if youre making it and baking it immediately, is to use thawed hash browns. You can use frozen but youll need to add about 15 minutes to your cooking time. Or, you can thaw the hash brown potatoes in the microwave before putting the casserole together.

While I havent personally tested it, most egg bake recipes like this one use thawed frozen hash browns. You could substitute frozen if that is what you have on hand or prefer as long as you thaw them ahead of time. I like the ease of fresh hash browns. They last a while in the fridge and I dont have to remember to thaw them out.

What to serve with hash brown breakfast casserole? The casserole is hearty and easily makes the entire meal itself but if youre serving a larger crowd then consider also serving the casserole with a few more options.

Toasted bread with jam, biscuits, and fruit are great options. Dont forget the beverages. Water, juice for a healthy dose of vitamin c first thing, coffee, or tea would be wonderful with this hashbrown casserole.

Sure! You can assemble the whole casserole and put it in the fridge the night before so all you need to do is take it out and bake it OR bake it and reheat it when needed.

I prefer to bake it fresh in the morning. Fresh is always better. However, be mindful to take the casserole out and let it warm while the oven is heating. It might also need a few more minutes to bake since it is starting at a lower temperature.

You can also make the whole casserole and just pour egg mixture over the top when ready to cook. I find this the best option before then the cheese and sausage dont have time to settle to the bottom, making it more uniform throughout.

    • 1 package frozen shredded hash brown potatoes

    Total time: 50 minutes

    4 cups frozen hash browns
    9 -12 eggs, depending on size
    1 1/2 cups cheddar cheese, shredded

    Steps:

    • Brown the sausage and drain.
    • In a greased 9×13 inch cake pan, sprinkle the hashbrowns, then sausage, onion, green peppers, and 1/2 cheese.

    Dont crowd the pan! Add the frozen hash browns in a thin layer. Cook until browned and crispy on the bottom without moving them all over and around.

    Flip and cook until the other side is crispy and the potatoes are cooked through.

    Remove to a paper towel lined plate to remove any excess oil or grease. Be mindful that when you add these to any breakfast casserole, you run the risk of them getting a little less crispy just due to the other ingredients adding moisture back in.

    How To Freeze Hashbrown Breakfast Casserole

    Prepare the casserole per the instructions but do not bake. Then cover with several layers of plastic wrap and place in the freezer on a flat level surface. Freeze for up to 2 months. Defrost in the refrigerator overnight or at least 12 hours. Remove from the fridge 40 minutes prior to baking to come to room temperature. Bake according to recipe instructions.

    • Preheat the oven to 325 degrees F . Grease a 9×13-inch baking dish with cooking spray.
    • Cook sausage in a large skillet over medium-high heat, stirring frequently, until thoroughly cooked and no longer pink, 8 to 10 minutes. Remove from heat.
    • Combine eggs, milk, dry mustard, and salt in a large bowl stir well.
    • Distribute 1/2 of the bread evenly into the prepared dish. Sprinkle with 1/2 of the sausage, 1/2 of the cheese, 1/2 of the tomato, 1/2 of the mushroom, 1/2 of the green onion, and 1/2 of the black pepper. Repeat layers one more time. Pour egg mixture evenly over casserole.
    • Bake uncovered until eggs are set, 55 to 60 minutes. Tent with foil if the top begins to brown too quickly.

    Prep in advance To make this in advance, cover and refrigerate overnight but let it sit at room temperature on the counter for about 30 minutes before baking the next day. Depending on your oven, you may have to increase cooking time by 5-10 minutes. The best way to check if it is done is to insert a knife into the middle of the casserole. If it comes out clean, it is done cooking.

    Sausage I used Jimmy Deans sage sausage but you can use any kind of sausage for this recipe. You wont need any oil to brown it as it will eventually render and cook in its own fat. The quickest way to break up clumps is to use a meat masher once the sausage has fully browned. Depending on what brand of sausage you use, you might need to drain any fat from the pan.

    Bell peppers I went with red bell peppers but you can go for green or yellow or a combination of all three. For an easier way to add a splash of color, try using pre-packaged baby bell peppers.

    Spice it up If you want to spice things up a little, try adding some hot sauce or diced jalapeños to the egg mixture. Another suggestion would be to add some smoked paprika.

    Load it up For even more flavor, try adding some bacon bits or chorizo.

    Sauté sausage, peppers, and onions. Drain grease and set aside.

    Whisk eggs vigorously until frothy and bubbly. Mix in the milk, sour cream, hot sauce, and seasonings.

    Arrange the hash browns on the bottom of a lightly greased 9 x 13-inch casserole dish. Drizzle with melted butter and toss to combine. Top with 1 cup cheddar cheese, then add the sauteed sausage/onions/peppers.

    Pour the egg mixture on top, then add remaining 1 cup cheddar cheese. Bake at 350° for 50 minutes, check on it every 5 minutes after that. Its done when the edges are slightly browned and the middle is nearly set. It will finish setting while it rests. Rest 10 minutes prior to serving.
