Is Mexicorn The Same As Southwest Corn

No but they are similar. Mexicorn is canned corn made with red and green bellpeppers whereas Southwest corn is made with red peppers and green poblano peppers.

The seasoning is also different. Southwest corn uses chili spice so tastes a bit spicier.

If you cannot find Southwest corn, you can use Mexicorn as a substitute since the flavor is very similar.

Tips And Tricks For Making This Corn Dip Recipe

  • I use canned corn in this but you can also use canned Mexican corn, thawed frozen corn, or fresh grilled corn for this recipe. One 15-oz can of corn is equivalent to 1 and 3/4 cups drained corn, so you need about 3 1/2 cups frozen or fresh corn.
  • Using one pickled jalapeno results in a dip thats only a little bit spicy. Add more jalapenos if you like your dip really spicy!
  • If you want you can saute the corn kettles until golden before adding them to the dip or use canned Fire-Roasted Corn but normal canned corn works just fine.
  • A great add-in for this dip recipe would be a small can of chopped green chilis!
  • Instead of cheddar cheese, you can also use the same amount Swiss cheese, Pepper Jack cheese, or Monterey Jack cheese.
  • This dip tastes best served hot! You can assemble it in advance, store it in the fridge until youre ready to bake it or you can bake it in advance and reheat it for 10-15 minutes in the oven.

To make this corn dip, I started by dumping some softened cream cheese, sour cream and mayo into a large mixing bowl.

I also added some salt, pepper, garlic powder, onion powder, smoked paprika and granulated sugar to the bowl.

I used an electric mixer to whip all of the ingredients together until smooth.

Then I added some canned corn and Rotel to the bowl.

I stirred all of the ingredients together well.

Then I added some shredded Mexican cheese blend, chopped green onions and grated yellow onion to the bowl.

I stirred well again.

Then I covered the bowl and placed it in the refrigerator to chill for two hours before serving.

After two hours I scooped the dip into a serving bowl.

I served my corn dip with tortilla chips and crackers.

Cheesy Corn Dip Ingredients

Corn. I use canned corn but you could also use fresh or frozen. If using frozen, just thaw the corn first. The recipe calls for a combination of both white and yellow corn but you can use all of one or the other if preferred. If using canned corn be sure and drain it.

Tomatoes. I like the petite diced tomatoes with green chili peppers. If you cant find tomatoes with peppers just use a can of petite diced tomatoes and a can of diced green chilies.

Cream Cheese. Soften the cream cheese at room temperature for an hour or so. If you use it straight out of the refrigerator you will end up with lumps of cream cheese which isnt necessarily a bad thing but it looks prettier if the cream cheese is nice and smooth. Beat the cream cheese until soft and smooth.

Cheese. I like to add a layer of cheddar cheese on top but you could also use a Mexican blend.

Seasoning. I like to use a combination of salt, chili powder, garlic powder, cilantro and cumin but feel free to play around with your favorite seasonings.

  • Whichever way you prefer! This corn dip is pretty versatile. It’s tasty served hot, but as it cools a bit, it’ll be just as tasty. You could even eat it cold straight out of the fridge if you like. I do prefer it warm myself, though.

How To Make It

Super Simple Corn Dip Recipe!

Use a deep-dish pie dish like I did here, or a medium sized baking dish.

Preheat oven to 375 degrees.

Place cream cheese, goat cheese and butter into the dish.

Place in the oven to heat up, soften and melt, for 20 minutes.

Remove dish and add corn, diced jalapenos, and garlic salt.

Stir to combine and add back into the oven and bake for about 30 minutes, stirring occasionally.

Its done when its bubbly and you can see the ring of melted butter around the outer edge.

Stir once more and serve with corn chips, Fritos scoops or tortilla chips.

PARTY TIP: Make this in a chafing dish or transfer it to a chafing dish after its done, to keep it warm on your party buffet table. You can also keep it warm in a slow cooker.

How To Cook Bacon In The Oven

The easiest way to cook a large amount of bacon that also makes less mess is to cook your bacon in the oven. You need 10 slices cooked bacon for this recipe so start with lining a large enough baking sheet with aluminum foil and lay the bacon in a single layer on it.

Preheat the oven to 400° F and bake the bacon for 15 to 20 minutes flipping it halfway. Use tongs to transfer the cooked bacon to a plate lined with paper towels. Let any excess fat drip off and crumble bacon into small pieces .

How To Make Cream Cheese Corn Dip

Start by chopping the jalapeño. If you remove the seeds and membranes, the dip will not be spicy. If you keep them on, they will add some heat!

Next, add the cream cheese, milk, butter, garlic salt, and chopped jalapeño to a saucepan. Place it over medium heat.

Cook for 45 minutes, or until the cream cheese has melted and the mixture is creamy. Stir it occasionally as it cooks.

Stir in the corn.

Transfer the mixture to a baking dish. I used an 10.5×7 inch Le Creuset casserole dish. You can also use an 8×8 inch dish, or another similar sized dish.

Bake the Cream Cheese Corn Dip at 350°F for 20 minutes.

Serve warm with butter crackers , carrots, and celery for dipping.

Notes & Tips For This Recipe For Corn Dip

  • When making this recipe, youll need a big mixing bowl so you have enough room to maneuver and stir. I own a 13 quart mixing bowl for this very reason.
  • The original recipe said just to throw the ingredients together and serve, but Ive made this dip hot and cold and its been a hit both times. However, if you are heating up this dip, remember that there are raw green onions and mayonnaise in this dip. Both of these ingredients can change their taste as more heat is applied, so be sure to check the dip as often as possible while heating. Over time Ive found that melting some of the cheese, but not all of it, had a better taste than straight cold or fully melted.

Can You Make This Dip In Advance

One of the most common questions I get about party dips is whether or not you can make them in advance. I totally understand why someone would want to do this, as its easier to prepare treats for a party the night before than scrambling to get everything done the day of the event.

The good news is that the answer to this question is almost always yes, and that is the case for this dip.

For best presentation, corn dip can be stored in the refrigerator for up to two days before serving.

Cheese grater I love this box grater because there are several different blades you can use so its perfect for all kinds of recipes.

Handheld Electric Mixer You can use a stand mixer for this recipe, but you dont have to get it out if you dont want to. A simple hand mixer will do fine. I actually use my hand mixer way more than my stand mixer. Its just easier to get out and clean. Anyway, the hand mixer I linked to above is one I got for a wedding gift over twenty years ago and its still going strong and I bake A LOT! I definitely recommend it.

Cutting board mats These are so easy to clean and use when cooking. You can bend them easily so that makes it easier to add ingredients to other bowls or pots and pans.

Cast Iron Skillet I love my cast iron skillet. You dont need one for this recipe, but if you have one then you need to pull it out for this corn dip.
