How To Make Keto Cake
So, like I said, this sugar free cake is an unbelievably easy keto recipe.
All you have to do is add all of the ingredients to a large bowl, mix everything up, and then bake it for 20-25 minutes. And if you can believe this, making the Keto Chocolate Buttercream Frosting to top the cake with is even easier!
Now, typically you’d use a standard cake pan to make a cake. But I actually recommend using a 7″ springform pan to make this keto chocolate cake.
The springform panis higherthan you’re average cake pan, and this keto cake rises quite a bit. So, it’s important to have that extra room in the pan.
By the way, a good indicator that the cake is done, is when it separates itself from the edge of the pan.
Best Chocolate To Use
Here in the UK there are a range of artisan chocolate makers which produce unsweetened chocolate. The brand I used, Montezuma’s, is available at Sainsbury’s, in organic shops or online. In the US you can go for a brand like Ghirardelli.
I don’t recommend choosing unsweetened Baker’s chocolate for this cake. It has the tendency to seize when you melt it and simply does not taste as creamy and mellow as quality chocolate.

The Need For A Keto Chocolate Cake
Sahil has an inveterate sweet tooth youll find him reaching for something sweet even before the last bite of food has gone down. So when we got on keto, and he couldnt have his post-meal piece of chocolate or half a cookie, youd find him sitting in the corner with a hangdog face and sad puppy eyes. Something had to be done.
One of Sahils favourite desserts is a flourless chocolate cake. Its dense and dark, much like a chocolate truffle in cake form. To make it keto friendly, I had to swap regular dark chocolate for Lindt 85%, the darkest I could go without making the cake too bitter. A splash of cream worked to temper the bitterness, but it also added more fat to the recipe, which made for an unstable chocolate mix where the butter, chocolate and yolks would separate. The solution? Mix, mix, mix with an electric beater until the fat and the chocolate emulsified into this thick dark ganache. Fold the egg whites in with the gentlest, gentlest hand. What you will have is a thick chocolate soufflé that rises while baking, then collapses a little bit, giving you a dense but airy keto chocolate cake. Could you ask for a better keto dessert?

Ill admit that at first, I thought that my attempt in converting this classic recipe into a keto-friendly option was going to be impossible. Thankfully, that was not the case. A little prayer before attempting to convert a recipe is the secret to my success.
Just like the original recipe youre going to start by mixing the dry and wet ingredients in two separate bowls.
I did, however, replace the vegetable oil thats called for in the original with melted cooled butter. Because butter is always a good idea. Dont you agree?
You can also use melted refined coconut oil or ghee in place of the butter. If you opt to use coconut oil I suggest you use refined coconut oil so that the coconut flavor doesnt overpower the recipe.
Instead of the 1 cup of milk, I used 1/2 a cup of heavy whipping cream and 1/2 a cup of water. The milk is way too high in carbs. Thankfully this cream and water combo works as a great substitute.
I also used 3 large eggs instead of the two that the original recipe called for to ensure the cake would be moist and have the perfect crumb.
Of course, in order to make this a true Keto Hersheys Chocolate Cake, I also swapped out the sugar for a sugar substitute and the all-purpose flour for a finely milled almond and coconut flour combination.

Can I Use Coconut Flour
No, sorry. Youd need to make multiple changes to the recipe to substitute coconut flour. Its so different that I cant recommend it without testing it.
If you are nut-free, you may be able to use sunflower seed meal as a 1-1 replacement for the almond flour, but the color, texture, and flavor of the cake will be somewhat different.
Can You Use Regular Sugar
Yes, if youre not counting carbs, the cake recipe works just fine with regular granulated sugar as well. I know this because I tested it on myself .
Even if you use real sugar, you still only need 2/3 cup total for an entire double layer cake, which is crazy low in comparison to traditional chocolate cake recipes that often have at least double that amount!

If your cakes were frozen without the frosting, its best to let them thaw while they are wrapped, so that condensation doesnt get inside. However, if you freeze a frosted keto chocolate cake, youll need to unwrap it while its frozen and let it thaw unwrapped, otherwise the frosting will stick to the plastic.

How To Make Keto Sour Cream Chocolate Cake

The Right Way To Melt Chocolate
Which brings me to my second recommendation: Take your time melting the chocolate!
When you melt the butter and chocolate in the microwave, do so in 30 second bursts. Mine was mostly melted after 90 seconds in total. I then left the bowl on the kitchen counter and stirred it from time to time. This caused the rest of the chocolate to melt slowly.
If you don’t have a microwave, you can melt chocolate in a water bath. For this, you either place the bowl with your chocolate and butter in a heat proof bowl over a pot with boiling water. Once the chocolate is half-melted, remove the bowl and let it fully melt by stirring occasionally.
Do I Have To Frost This Easy Keto Cake
We chose to frost this easy keto birthday cake with a sugar free buttercream frosting and topped it with some fresh berries. But you can certainly leave this chocolate cake unfrosted and enjoy it as an after dinner keto dessert or snack cake.

Option : Freeze The Frosted Chocolate Cake
If you prefer, you can assemble and frost the entire cake. The frosting is sticky, though, so you cant wrap it while its at room temperature.
Instead, make room in the freezer and place the uncovered cake inside on a tray. Once its solid , remove it from the freezer and wrap tightly in plastic wrap, followed by foil to keep any moisture out.

Eggs: I use large eggs in most of my recipes.
Unsalted butter: You can also use salted butter but personally, I use creamy European butter. But any butter is delicious!
Sweetener: You can use your favorite sweetener. For the cake, I use this sweetener, and for the frosting, I use this powdered sugar substitute.
Vanilla extract: Pure vanilla extract adds great flavor. Try to use it rather than the artificially flavored stuff.
Almond flour: I use blanched finely ground almond flour in this cake.
Cocoa powder: Use unsweetened natural cocoa powder. It will help activate the baking soda.
Baking powder: If youd like to try using baking soda , remember that 1/4 teaspoon of baking soda is equivalent to 1 teaspoon of baking powder.
For the Chocolate Frosting: Unsalted butter, heavy cream, cream cheese, sweetener, cocoa powder, and vanilla.

How To Frost A Cake
The most important step of frosting a cake is the make sure the cake is completely cool beforehand. If I have time, I like to bake the cake the night before so that it has time to cool completely overnight. If youre in a time crunch, you can pop the cakes in the fridge to accelerate the cooling process.
Then remove the cake from its pan and transfer it to a large plate for frosting. Make sure to plan your desired frosting style beforehand so that you have an idea of how much frosting you will need to prepare to cover the cake completely.
As a general rule of thumb, rustic-style cakes, like this naked cake, that only cover the top layer and in between the layers. use the least amount of frosting. While the normal frosting by hand uses a medium amount of frosting. Finally, a piped cake usually uses the most amount of frosting because of the volume created by the designs.
The amount of frosting that you will need will also be dependent on your desired thickness of each layer of frosting. It also changes depending on the number of layers. While this recipe is for only one layer, I normally double the recipe to make a two-layer chocolate cake.
Now we are finally ready to start frosting! These frosting directions are tailored to frosting a two layer cake, but you adjust them to fit a single layer cake as well.
