Using a hand mixer can feel a tad harder to control and messier, but its truly very simple. And since more people have hand mixers over stand mixers, I found this video to show you how simple it is to do!

With a stand mixer, use your blade attachment on a low speed for about 15 or so seconds and youll be amazed at how easy it is to shred chicken!

This buffalo chicken dip is so much healthier than regular buffalo chicken dip! Heres why:

  • Low Fat: Buffalo chicken dip is usually made with tons of cheese, ranch or blue cheese dressing and cream cheese which makes it super high in fat. I swapped out cream cheese/dressing for greek yogurt and cottage cheese. Yes.. you read that right, there is NO cream cheese in this recipe!
  • Higher Protein: The greek yogurt/cottage cheese mix still makes this rich and creamy, with way less fat and a whole lot more protein!

Or you can use it as filling for baked potatoes, quesadillas, wraps, lettuce cups or tacos.

Ingredients In Healthy Buffalo Chicken Dip

Olive oil. You could also use butter, but in sticking with our healthy theme, I like to use heart-healthy olive oil. Only a little bit is necessary to sauté the veggies, about two teaspoons.

Onion and Garlic. The base of any good buffalo chicken dish. And just about anything else.

Greek Yogurt. You can use whole milk, low-fat, or non-fat Greek yogurt. Just make sure its plain and not flavored. I usually buy one of those little seven-ounce containers of FAGE or Chobani Greek yogurt.

Shredded chicken. For this particular recipe, I used the leftovers from this Roast Chicken, so it was a combination of dark and white meat, which I think gives the dip more flavor. You can buy a rotisserie chicken and shred it. You can also roast a chicken breast, then shred it. Whatever is quickest and easiest for you!

Crumbled blue cheese. I usually use crumbled gorgonzola, but whatever blue cheese you prefer will work great.

Sliced green onion. We love plenty of sliced green onion! I love the texture and mild onion flavor green onions add to this.

Light mayo. As we mentioned, this is a healthy buffalo chicken dip WITHOUT cream cheese, but we need something with just a hint of creaminess. Thats where the mayo comes in. All you need is just a tad! A tablespoon will do. I have been crucified before for saying I believe light mayo tastes the same as full-fat mayo, but I truly dont believe using full-fat will reap any greater results.

Miyokos Creamery has mozzarella, pepper jack, cheddar non-dairy cheese varieties you can use. You can add half into the mix and the rest on top or all of it on top. I prefer both to thicken and give the inside a bit more texture. A mix of two types is great too like pepper jack and white cheddar.or whatever you like.
