This is a super common question I get a lot and thankfully the answer is YES! You can make this banana pudding ahead. This recipe is honestly best if you let it rest for at least a few hours before serving it to allow the wafers to soak up some of the pudding. One that happens, this recipe turns into this perfect soft creamy texture that you want.
If Im having company, I prefer to serve this pudding within 4 to 6 hours of making it. In that time, the bananas wont have browned much and it will still look picture perfect. However, if I am serving this just for my immediate family, we all love it just as much the next day or two! Yes your bananas will brown a little, but the overall pudding will taste exactly the same.
How Can I Thicken My Banana Pudding
There are many ways to thicken a banana pudding mix, but the easiest way is to create a slurry. A slurry is a mixture of cornstarch and water. Add a small amount to the pudding mix, heat the pudding until it begins to simmer and then mix well. If it’s still not the right consistency, repeat the process until you’ve reached the consistency you require. The cornstarch and water should be in equal measurements. Another quick fix is if you have a spare box of pudding mix – add some more to your banana pudding this is the quickest way! You can also try popping your banana pudding into the fridge overnight. This may seem like a straight forward option, but leaving it in the fridge for several hours can work wonders in firming your pudding mixture up.
How Do You Ripen Bananas For Banana Pudding
To ripen bananas for banana pudding, try storing them in a warm area of your kitchen. Alternatively, keep them in a bunch and store them in a brown paper bag. Close loosely with an apple inside and leave for one to two days, depending on how green they are.
I dont recommend using the oven to ripen bananas for banana pudding because they will turn brown too fast.
Instead, try to find either ripe bananas in the store or bananas that are just slightly green. Trust me its worth the wait.
If you know you want to make this over the weekend, try buying slightly green bananas on Wednesday or Thursday and store them in a paper bag. They should be ready by Saturday.

Although, if your family is like mine, this dish wont be around for long.
