I started to put together a list of what Ive tried along with looking for what others have posted about their 3 quart Instant Pot recipes. The recipes below are scaled to fit the 3 quart model.
When creating my own recipes, I looked for ideas from other blogs and pulled together the best ideas to build my own tweaked version that would fit into my Instant Pot Mini Duo.

For Instant Pot Taco Soup Recipe:
Gather up ground turkey , black beans, corn, tomato paste, one can of fire-roasted diced tomatoes, one small can of green chiles, half of an onion, garlic, chicken broth, and all of your taco spices!
If you’ve made my ground beef for tacos, you’ll recognize these same taco spices. If you’re not up for making your own taco seasoning mix, you can use half a packet of the store-bought stuff. Just make sure to read the ingredient list, because some taco seasoning mixes have preservatives and other strange chemicals.
If you’re new here, I cook for two, so that means that I use the Instant Pot Mini. It’s the 3-quart model, and it makes a small batch of soup. If you’re cooking for two or have a small household that doesn’t like a lot of leftovers, the Instant Pot Mini is the size for you.
If you’ll allow me to go on a little tangent for a minute, I have to confess that although I love soup, I don’t know why most recipes make so much of it. While soup is excellent leftover, do we really need a full gallon of it every single time we make it? I adore that this Instant Pot Taco Soup recipe makes a batch large enough for my family to enjoy for a few days, but is gone after that.

These tried and tested Instant Pot 3 Qt Mini Recipes are perfectly suited for most 3-quart pressure cookers.
I whip out my smaller, lightweight 3-quart size for Basmati or Jasmine Rice, Brown Rice or Saffron Rice. This allows me to work my magic and get a complete meal on the table in half the time.
But the 3-qt size makes dal for a family of four, too! Our favorites include Dal Makhani and Dal Tadka.
It just so happens to be the best size for Peach Chutney and Strawberry Jam, too.

Instant Pot Taco Soup
Instant Pot Taco Soup, made in the Instant Pot mini with ground turkey, spices, and veggies! Such a quick instant pot mini recipe.
This is the recipe that I almost forgot to share with you. I make it so frequently that I have it completely memorized, and I didn’t really think much of it being a recipe until house guests repeatedly asked for it.
Taco soup is something that I make when I just can’t seem to get my life together and sit down to eat a proper lunch. When I’ve had one too many crazy weeks in a row, I vow to be better the following week. I make a big batch of this Instant Pot Taco Soup, and enjoy it for lunch all week long. If I can remember to serve it over brown rice, even better!
I make everything in one pot, and I always seem to have all of the ingredients on hand.
How To Make A Pot Roast In The 3 Qt Mini Instant Pot
My pot roast was 2.6 lbs. and I was a bit concerned if it would fit. No worries there, all I had to do is cut it in half.
For this recipe, all you need is your roast, salt, and pepper to taste and sauce of your choice. Whether you choose Chuck, sirloin or whatever cut you prefer, as mentioned we used chuck roast and it was 2.6lbs.
My husband picked up a 14.2 oz. of P.F. Changs Mongolian-style BBQ sauce. It was super! The secret is in the sauce.
After I cut the roast in two, seasoned both sides with salt and pepper, I added one cup of water to the pot, placed the meat on the trivet, and dumped the sauce on top. You can add onions, or peppers too if you like. I set the pot to the High Pressure/Pressure manual for 45 minutes. I let it naturally release and removed the roast to a platter to cool down a bit.
In the meantime, I had cut up some baby red potatoes and seasoned those with salt, pepper, and a little balsamic glaze. I added one cup of water to the pot, placed it down the trivet, and dumped my potatoes on top. Set to High Pressure again for 11 minutes and had some perfect potatoes to go with our roast.
The roast was mouth-watering tender and delicious.

Instant Pot Cheesy Garlic Orzo

Reading through the Facebook Groups, the comments have been mixed on when you need to scale a recipe or not. It completely depends on the recipe.
Tip: When doing a quick release, try doing a controlled quick release instead of just slipping the sealing valve and letting it go. Call me crazy but with 9 foot ceilings, I have no desire to clean a spray mess.
Tip: Usually you dont need to change cooking times themselves, but if you are trying to scale a recipe on your own, it may be something you run into. I havent yet found an issue, but I havent tried all types of foods or meats.
