    Coconut Ginger Chicken Rice Soup

    • 2 quarts chicken stock
    • 2 tsp freshly grated ginger
    • 1 red bell pepper
    • 1 bunch cilantro
    • 1 cup short grain brown rice
    • Zest of 1 lemon
    • Salt and pepper to taste
    • Green onions and lemon zest for garnish
  • Bring stock, coconut milk and ginger to a boil. Add brown rice and simmer for 45 minutes.
  • Add diced chicken breasts and simmer for 5 minutes until cooked all the way through.
  • Add chopped bell pepper, cilantro, and green onions.
  • Add salt, pepper and lemon to taste. Add more grated ginger as needed.

    Generous dash ground black pepper
    1 medium carrot, sliced
    1/2 cup uncooked extra wide egg noodles
    1 cup shredded cooked chicken or turkey


    • Heat the broth, black pepper, carrot and celery in a 2-quart saucepan over medium-high heat to a boil.
    • Stir the noodles and chicken into the saucepan. Reduce the heat to medium. Cook for 10 minutes or until the noodles are tender.

    Jim’s Homemade Chicken And Rice Soup


    • 1 cup of carrots, chopped
    • 1/2 of a small white onion, chopped
    • 1 to 2 stalks of celery, chopped
    • 1 to 2 tbsp cooking oil like canola
    • 48 oz Swanson Chicken Broth
    • 1 can white meat chicken breast, shredded
    • Dash of pepper
    • 1 1/2 to 2 cups of Minute Rice
    • Ingredients can be adjusted to your own tastes or amount of soup you need.


  • Chop carrots, onions, and celery .
  • Drain, then shred canned chicken in a bowl and set aside.
  • Add cooking oil into your soup pot. Heat up to medium low.
  • Put in carrots and sauté for 10 minutes until they are beginning to soften.
  • Add onions and sauté along with carrots/celery until they are translucent and veggies are soft. If your pot needs more liquid during the sauté time add a bit of chicken broth so that the veggies will not burn.
  • Add in the box of broth and the shredded chicken.
  • Add a shake or two of pepper according to your taste. No salt is needed unless you are using low or no sodium broth.
  • Let this simmer on low for 40 minutes.
  • Bring back to a boil. Add in 1 1/2 cups to 2 cups of Minute Rice and remove from stove. Let sit 5 minutes until the rice is done. I like more rice in my soup so I do add 2 cups of rice.
  • This recipe makes 2 to 3 large bowls of soup or 4 regular sized bowls. Your soup is ready to serve with crackers or a sandwich. Enjoy!

    This recipe was given to me by my sweet friend, Kay, and her husband, Jim, who came up with this wonderful recipe. They gave me permission to share it with you. This soup is very quick and easy and so good when you are craving a soup that isnt creamy or heavy.     Easy Swanson Chicken Noodle Soup Recipe

    For this recipe we kept it scratch-ish by using store bought rotisserie chicken and broth, I actually prefer using 100% chicken broth here instead of making it from scratch as many recipes call for added butter and way more salt than Id like to use this early in the recipe

    Either pour off chicken broth into a separate container or use a new pot to saute onion, green pepper, celery, and jalapenos in 1 tablespoon olive oil over medium heat until tender and golden brown, about 10 minutes. Add chicken broth, shredded chicken, and tomatoes with their juice. Bring to a boil, then reduce to a simmer.

    Set 6-qt Instant Pot® to the high saute setting. Add olive oil, garlic, onion, carrots and celery. Cook, stirring occasionally, until tender, about 23minutes. Stir in thyme and rosemary until fragrant, about 1 minute.

    Remove and discard ginger and garlic. Combine cornstarch and water until smooth gradually stir into broth. Bring to a boil cook and stir for 2 minutes or until thickened. Add chicken heat through. Reduce heat. Drizzle beaten egg into hot broth, stirring constantly. Remove from the heat stir in onion.

    In the end, one of the biggest names in broth proved to be our winner. Like Imagines broth, Swanson chicken broth was really satisfying on its own. It was packed with chicken flavor, of course, but it was so much more! As we sipped Swanson broth we started picking up on the taste of sage, onion, celery and carrots. A few folks thought that this tasted a bit like Thanksgiving dinneryum! Out of all ten broths, this was definitely the most flavorful and delicious. It seemed destined for our ultimate chicken noodle soup recipe.

    Theres one drawback to this broth brand, however. If you find yourself making a recipe where perhaps those Thanksgiving flavors wouldnt be welcome, like with a coconut curry soup, you might want to opt for a more neutral flavor. But for most applications, like these slow cooker soups, Swanson broth would serve you very well.
