Usually I would just a tube of Jimmy Dean Original sausage, however, my store was out so I had to make do with the sausage patties totally fine! Just mash them up!

What Kind Of Pork Sausage Do I Use

You are going to need the raw, ground pork sausage for the traditional sausage balls recipe however the sky is really the limit. You can use a mild Italian sausage, a maple syrup sweet breakfast sausage or even a hot spiced sausage, the only caveat is that it HAS to be ground sausage. It cannot be a cooked smoked sausage.

My kitchen hack?

Use your stand mixer with the paddle attachment.

Using your mixer to make these sausage balls made this recipe SO EASY that I can see this recipe being doubled and you having 4 dozen sausage ball snacks in no time at all! I also think it does a better job of working the ingredients together than mixing them by hand would. You then simply get a tablespoon and get your golf ball sized dough balls ready to rock!

The other secret to these is not dropping them onto the sheet, you can roll them into nice uniform shaped balls. I don’t guarantee that they are going to stay that shape as the pork fat and cheese fat will melt and change the shape of these, but mine came out pretty darn uniform.

  • Any type of pork sausage will work well, so choose a hot and spicy version if you prefer. I do not recommend a leaner turkey sausage or anything with less fat, because you want the fat in the meat in order to keep the sausage balls moist.
  • Allow your sausage and cheese to come to room temperature before preparing the balls. I find that this helps the mixture blend together easier.
  • Add enough milk or water, as necessary, to bring the dough together.
  • Prep ahead! You can bake the sausage balls in advance, cover them and refrigerate them for up to 3 days or freeze for up to 3 months. To reheat the sausage balls, place on a baking sheet and warm in a 300 degree oven just until heated through. If you plan to serve the sausage balls the same day, you can assemble the raw balls in advance, keep them covered in the refrigerator, and then just bake right before serving.
  • Add more seasoning! You can stir in chopped fresh herbs or add some cayenne pepper for heat.
  • For easier cleanup, line your baking sheet with parchment paper.
  • Try different types of cheese! You can use Monterey Jack, Colby Jack, Pepper Jack, or a combination of cheddar cheese and cream cheese .
  • For Gluten-Free Sausage Balls, try using gluten-free Bisquick and make sure that your sausage and cheese are both labeled gluten free.

  • DO SPOON and level your Bisquick into your measuring cup, too much packed-in baking mix will result in very dry sausage balls.
  • Make sure that the cream cheese is softened to room temperature to make mixing the sausage cream cheese balls a lot easier!
  • DO USE freshly grated cheese, the packaged shredded cheese is coated with cellulose to prevent it from clumping together. This will also result in your sausage balls not sticking together well and losing their shape .
  • If you can’t find the sausage ‘chubs’ or rolls, you can always open up breakfast links or use the ground pork breakfast sausage in the meat section. The sweet Italian sausage is also great meat to use in these sausage balls.
  • Stir in ideas that you might like to include in your sausage cream cheese balls include: fresh cut chives or parsley, grated or finely diced white onion or sweet yellow onion, pan-fried potatoes or hashbrowns, and diced red or green bell peppers.

What Are Sausage Balls Made Of

Ground Pork Sausage: You can use any ground pork sausage that you like. Jimmy Dean is my favorite, but Italian, hot, and even maple all taste great.

Baking Mix: Bisquick is my favorite baking mix for this recipe, but Ive heard of people using other biscuit mixes with great success. The ones Id be most inclined to try are the Red Lobster Mix and the Jiffy Cornbread Mix.

You could also make a DIY Bisquick mix by combining together 2 cups flour, 1 Tablespoon baking powder, 1 teaspoon salt, and 1/3 cup vegetable shortening in a food processor.

Seasonings: Even though the sausage is already flavored, adding in some dried herbs really brings this recipe to the next level. Italian seasoning, paprika, and dried rosemary are the ones that I love adding. The dried rosemary is an especially delicious addition and its what makes these my favorite sausage ball recipe!

Cheese: Sharp cheddar cheese melts well and adds an incredible flavor. Because it pairs so well with my favorite herbs, its my favorite cheese for this recipe.

If youre going to leave out the dried rosemary, and you want it to have less of a Christmas vibe and more of a party food vibe, pepper jack cheese is also a great option.

Using freshly shredded cheese is important because the anti-caking agents on pre-shredded cheese can stop the balls from holding together.

Milk: Adding some milk to the mixture helps to ensure that the balls dont dry out while baking, and it helps them hold together well.

How To Make Cream Cheese Sausage Balls Without Bisquick

Substitutes for Bisquick include other packaged pancake mixes, as well as biscuit mixes like the Red Lobster cheddar bay biscuit mix.

  • The ratio of baking mix to sausage if you have too much baking mix, the balls will be crumbly.
  • Not using milk milk really holds the mixture together and makes it easy to form into balls that hold their shape.
  • It can be because you used pre-shredded cheese, which is coated in an anti-caking agent that will stop the balls from binding correctly.
  • How To Make Bisquick Sausage Cheese Balls

    First, preheat the oven to 375 degrees Fahrenheit and line a baking sheet with aluminum foil or parchment paper.

    Add the ground sausage, freshly shredded or grated cheddar cheese, Bisquick baking mix, and green onions to a large bowl.

    Use clean and slightly damp hands, a potato masher, or a stand mixer to combine the 3 ingredients.

    If using your hands I have found that kneading or folding the Bisquick and cheese into the ground sausage works best.

    Now use a medium-sized scooper or a large tablespoon to scoop out 24 golf ball-sized sausage balls. Place them on the baking sheet.
