  • Milk- To keep this recipe dairy-free I like to use organic unsweetened soy milk but any kind of milk will work. Just keep in mind if your milk has sweetener added that you may want to adjust the amount of dates in the recipe.
  • Medjool Dates- If youre using medjool dates then youll only need about 3-4, depending on their size. Also, if they are on the dry size it can be hard for your blender to break them down completely so you may want to soak them in hot water for 10-15 minutes head of time to help rehydrate them.
  • Cocoa Powder- While you can use cacao powder it tends to be a little more bitter which requires extra sweetener to counteract. For that reason I like to stick with good ol cocoa powder.
  • Almond Butter- This gives the recipe a nice creamy texture plus a boost of nutrients like calcium and vitamin E. If your kiddo is allergic to nuts you can substitute tahini or just leave it out altogether.

You could also add a bit of coffee or Baileys to the mix.

How To Make Sorbet Without An Ice Cream Maker

If you dont have an ice cream machine, you still have two options:

Option one is to pour the sorbet mixture into ice cube trays and freeze. Let the chocolate ice cubes thaw just enough for a high speed blender to be able to handle, then use a tamper to blend it into a creamy texture.

Option two is to freeze a large shallow container. Pour the liquid mixture into the container and freeze. Stir very well after a half hour to break up ice crystals and whisk air into the mix, then return the container to the freezer. Repeat the stirring process every half hour for about three hours total. This no ice cream maker version wont be quite as smooth and creamy, but it still tastes wonderful, with a texture somewhere between granita and ice cream.

  • You can use coconut oil instead of cocoa butter if preferred. In fact, this can be somewhat easier to work with. However, it wont be able to be tempered.
  • Make sure to use food-grade cacao butter, as some are sold for cosmetic purposes.
  • Make sure to use unsweetened cocoa, if using cocoa powder, to control the sugar content.

  • If you want to make topped chocolate bars, then sprinkle your toppings of choice into the silicone molds before pouring over the melted milk chocolate.
  • I never temper chocolate Ive made just for snacking at home. However, feel free to temper the chocolate if youd prefer, as untempered chocolate is more prone to melting easily at room temperature and needs to be stored in the fridge. It also wont have the signature snap of tempered chocolate.
  • Chefs Note: I originally used maple syrup when sweetening this homemade milk chocolate. However, liquid sweeteners are known for causing the chocolate to seize, so I now dont recommend this method . Stick to dried powdered sugar instead!

I like to add one tablespoon of vodka, Amaretto, or coffee, hazelnut, or chocolate liqueur. Alcohol does not freeze solid, so this helps keep the sorbet from freezing rock hard. Just dont add too much or the texture will be slushy.

Dont skip the chilling step before adding the liquid sorbet mixture to your ice cream maker. Make sure the liquid is cold or it will never thicken in the machine.

Many brands and models of ice cream machines need to be chilled for 24 to 48 hours before use. Years ago, I once tried to make vegan ice cream in a machine that was not cold, and it never turned from liquid to ice cream.

To serve, I like to scoop out the chocolate sorbet using an ice cream scoop for an authentic ice cream shape.

Try topping your sorbet with chocolate syrup or Coconut Whipped Cream.
