Most Fridays, I cook a hot lunch for a friend and the two fellows who work for him. These three guys are also food critics for my newest recipes, so they were the first to try this.

The final word was this cheddar ranch meatloaf was delicious and there wasnt a crumb left. That says a lot because the loaf I made would have easily served 6-8 people.

Meatloaf is basically minced meat that is cooked and presented in the shape of a loaf.

It is often cut into thick slices and served with a side of some sauce. But if your meatloaf is already well-seasoned, then it won’t even need some extras on the side to rescue it. This is where meatloaf seasoning comes into play.

All you need to brighten up your meatloaf is some specially made seasoning mix. It usually consists of spices like garlic powder, paprika and dried herbs like basil.

There are plenty of good pre-made meatloaf seasonings available in the stores, but we suggest you instead make your own seasoning at home. This way you get to tweak and adjust the seasoning to your taste preferences.

Meatloaf With Fried Onions And Ranch Seasoning

This is a recipe I created once I discovered the versatility of meatloaf!

1 ½ pounds ground beef
2 eggs, beaten
¾ cup herb-seasoned dry bread stuffing mix
½ package dry Ranch-style dressing mix
1 can French-fried onions

Steps:

  • Preheat oven to 350 degrees F .
  • In a large bowl, combine meat, eggs, ketchup, stuffing mix, ranch dressing mix and fried onions.
  • Shape into loaf and fit into 9 x 5 inch loaf pan.
  • Bake, covered loosely with foil, at 350 degrees F for 50 to 60 minutes, or until meat is thoroughly cooked.

My Family’s Favorite Topping

My brother and I love this topping. When we try different meatloaf recipes, we still prefer this topping. It is my best guess on my Aunt Totsie’s recipe.

Ingredients:

  • 1 small can tomato paste
  • 1/3 cup molasses, or ½ cup brown sugar

Directions:

1. Combine ingredients.

2. Spread on top of 9 X 11 or 11 X 13 meatloaf before baking. For traditional 4 X 9 loaf, make or use about half of the sauce.

  • Bread: Any bread will do. If you are using a thicker, heartier bread you can use 2 pieces, for thinner bread, you will need 3.
  • Ketchup: I used Heinz.
  • Milk: Dairy or plain non dairy milk work well.
  • Ranch Seasoning: Hidden Valley Ranch dip mix or Simply Organic Ranch Seasoning work well here.
  • Mustard: Any kind of mustard will do but I like dijon the best for this recipe.
  • Ground Meat: I prefer ground beef with ground pork or ground beef with turkey for making ranch meatloaf. For a healthy meatloaf aim for 90/10 beef.

How to Make Meatloaf in a Crock Pot. Mix together your eggs, milk, bread, salt and pepper in a very large bowl and let set for 20 minutes. Add 3/4 c ketchup, ground beef, onion and ranch mix. Mix well. Form into a mound or loaf and top with desired amount of ketchup.

This Lipton meatloaf with my tomato sauce topping is my absolute favorite. I can eat myself silly on this one. I essentially use the recipe from the soup package, but for my taste, using the recommended 2 lbs of meat with the soup package is too salty. Meatloaf With A Ranch Twist

I wanted a different twist to my meatloaf, so I added a package of dry Hidden Valley Ranch Dressing Mix. Instead of using ketchup for the sauce, I use V8 to add a different taste. Use the spicy if you want more of a kick to your sauce. My kids went back for seconds when normally I have to beg them to just eat meatloaf.

Provided by Chihuahua Girl

½ cup vegetable juice
2 tablespoons brown sugar
2 pounds lean ground beef
1 tablespoon garlic powder
1 package ranch dressing mix
1 teaspoon rubbed sage
½ teaspoon ground black pepper
1 cup Italian-seasoned dry bread crumbs
1 egg, beaten

Steps:

  • Preheat an oven to 350 degrees F .
  • Combine the vegetable juice, brown sugar, and Worcestershire sauce in a saucepan over medium heat cook until the sauce thickens, about 10 minutes.
  • Mix the ground beef, garlic powder, onion powder, ranch dressing mix, sage, salt, and pepper together in a large bowl. Gradually sprinkle the bread crumbs into the meat while mixing so the crumbs are distributed evenly throughout add the egg and milk and continue mixing. Shape the mixture into a loaf and transfer to a loaf pan. Pour about half the sauce over the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F . Cut the meatloaf into 6 even slices. Pour the remaining sauce over the slices to serve.

Bacon Wrapped Ranch Meatloaf

I know meatloaf might not be the most popular food out there. But I do have to say Ive always liked it, and its just plain good comfort food. While theres nothing wrong with old fashioned regular meatloaf, I really cant help mixing it up a bit with recipes!

So todays bacon ranch meatloaf is a mix of all the most popular American things I could think of that would be great together. First up theres ranch, I mean who doesnt need more ranch flavors in their life? Next up I used BBQ sauce as the glaze, although come to think of it, ketchup might have been a more American touch.

But since great flavor is always my main point now matter what the cuisine might be, I went with BBQ sauce because theres just something about its flavor with ranch. Finally I wanted it to be bacon wrapped because even the most humble meatloaf enjoys a good bacon hug!

And while this is just me saying so, I thought this turned out pretty good. I mean good enough to eat cold out of the fridge for the better part of 2 weeks straight with all the recipe testing I did!

Although I could throw in as well that my mom also enjoyed it, and shes not really a fan of meatloaf at all.

Traditional meatloaf usually has some combination of milk soaked breadcrumbs or oatmeal. However to keep this both paleo and gluten free, I used almond flour. For the moisture factor in any kind of paleo meatloaf or meatball I like to use grated zucchini.

Variations For Meatloaf Seasoning

Meatloaf is thought to be a boring food by many people. But with the right seasoning, your meatloaf can become the star of the mealtable.

You can make the seasoning even better by doing variations and adjustments to it. Here are some of our own variations you can do to make a perfect meatloaf seasoning!

1. If you like your Meatloaf to be on the spicy side then just turn up the heat of its seasoning! You can do this by adding Cayenne Pepper to the mix according to your desired heat level.

2. On the contrary, you can also make a sweeter version of the seasoning if you like a different tasting meatloaf. Just add a small amount of brown sugar to the seasoning mix.

Dont use your regular granulated sugar as it does not have the molasses-like flavour that brown sugar has, which goes perfectly with any kind of meat.

3. You can make an Italian style meatloaf seasoning as well! Just add some dried thyme and oregano or use Italian Seasoning to the meatloaf seasoning and use it for making your meatloaf!

4. You can do a more Indian style meatloaf seasoning by including some curry powder in the mix!

Ranch Meatloaf

This is a step by step walkthrough of how to cook this recipe. Exact times and temperatures are available in the recipe card at the bottom.

1. Soak the bread. Rip bread into tiny pieces and add milk to soak bread.2. Bread + Meat. Add the soaked bread to the meat and season with salt and pepper. Mix gently a few times3. Ranch Seasoning + Egg. Add in ranch packet and one egg.4. Gently mix. Using your hands, incorporate all of the ingredients until mixed but not over mixed.

5. Shape the loaf. Place meat mixture onto a foil-lined pan and shape into a loaf.6. Make the glaze sauce. Mix together ketchup, raw honey and mustard until well mixed.7. Coat the meatloaf. Coat the loaf evenly and get it ready to go into a 350F oven for 60-70 minutes.

How To Make Meatloaf Seasoning

Making seasoning mixes can be time consuming depending on their ingredients. But not this meatloaf seasoning!

You dont need any fancy spice grinder to make it. It will take you no more than ten minutes to get this meatloaf seasoning ready for your Sunday dinner time!

Or you can also make this seasoning in a large batch and store it away for future use!

1. First pulse all your whole spices and dried herbs into a powder in a food processor or high speed blender. This includes spices like black pepper and dried herbs like basil.

2. Take an appropriate sized, preferably large to medium sized mixing bowl. Combine all the ingredients in it. Be careful with adding salt as you dont want it to be too much or too little.

3. Mix all the ingredients together with a small spoon. Make sure the bowl and spoon are completely dry and there are no water droplets or moisture on it. Otherwise your meatloaf seasoning can get spoiled really fast.

4. Your meatloaf seasoning is now ready for use! You can also bottle it away securely for later use in future.

Tips To Make Meatloaf Seasoning Even Better

1. You can adjust the spices in the meatloaf seasoning according to your taste preferences. If you like it spicy, go for cayenne pepper. If you want it a little sweet, then add brown sugar instead.

2. Use kosher salt only instead of plain regular salt. It’s easier to control the measurement of kosher salt than table salt. This way you can avoid adding too much or too little salt in the seasoning.

3. You can make your own variations to the meatloaf seasoning. Try adding herbs like thyme and oregano to make an Italian meatloaf seasoning for instance!
