The BEST Chicken Tikka Masala

Don’t over-marinate. Chicken tikka marinades contain both yogurt and lemon juice, two acids that will cause muscle proteins to denature and chemically “cook,” the same way a lime-juice marinade works in a traditional ceviche. Marinate for too long, and your meat will dry out just like you overcooked it, resulting in dry, stringy, chalky meat. Keep marinating time to 5 hours or less.

Key To Great Chicken Tikka #: Use A Smaller Bird

A grill or tandoor oven is intensely hot, meaning that by the time a large chicken cooks through to its center, the outer layers will be hopelessly overcooked and dry. Scoring the meat deeply with a knife helps this problem, but a better solution is to use a smaller bird to cut down on cooking time. I use small chickens or Cornish hens for my chicken tikka.

Everyone got that? Good! Let’s move along.

Why Is It Called Butter Chicken

Homemade Chicken Tikka Masala That Anyone Can Make

Butter chicken originated from Northern India in 1948. Created by Kundan Lal Gujral, you may notice that Butter Chicken , is similar to British tikka masala.

Prepared in a buttery gravy with the addition of cream gives the curry sauce a silky smooth rich texture. Most restaurants are known to add in copious amounts of butter, which as a result can leave you feeling bloated or ill from the slick of grease.

However, we found while recipe testing that we prefer to start the sauce off in Ghee .

Adding cream at the end of cooking provides enough of that richness you look for in an authentic butter chicken. Our less oily version leaves you feeling good and satisfied.

If you want a healthier option then you can omit the cream or use yogurt instead. Although I have to say, this recipe uses very little cream anyway so is already a much healthier alternative to a takaway version.

If you want a dairy-free version then use a little coconut cream instead of the cream. Or use coconut milk.
