Healthy Lunch Meal Prep: Turkey Taco Bowls
Work lunches. Theyre a legit struggle for me, you guys. I end up going out way too often, eating things that arent very good for me. Not to mention expensive. So Ive been on a mission to find some healthy lunch meal prep ideas. These turkey taco bowls were a winner.
Meal prep is kind of all the rage right now, and for good reason. You spend a little time assembling pre-portioned meals on a Sunday, and youve got your lunches or dinners all ready to go for the week ahead. I personally like to do this to make lunches for the week. Its so easy to grab one of these out of the fridge on the way out the door, and just heat it up in the microwave at work.
These turkey taco bowls are lightened up with ground turkey, instead of ground beef. And with the addition of high-fiber grains like brown rice and black beans, theyll keep you full all the way up until dinnertime.
How to make these turkey taco bowls for healthy lunch meal prep
For my meal prep containers, I used four 4-cup Pyrex bowls with lids. These are the containers I use. Theyre super handy because you can take them right from the fridge to the microwave. Fewer dishes to wash are always a good thing, as far as Im concerned.
To make these taco bowls, cook the ground turkey using the instructions on the taco seasoning packet. Then just divide the turkey, cooked rice, black beans and cheese evenly between four of your containers. Put lids on them and store them in the fridge for up to four days.
How To Make This Burrito Bowl Recipe
Step One: Heat a large skillet over medium-high heat.
Step Two: Once the skillet is hot, add in a bit of oil and then the ground turkey. Youll brown the meat and break it up as it cooks.
Step Three: Then, add the garlic and onion. Continue to brown the meat until it is no longer pink.
Step Four: Next, lower the heat to medium and add the tomato paste, apple cider vinegar, and spices. Cook everything for another minute until fragrant.
Step Five: Add in the chicken broth and stir until well combined. Let the ground turkey simmer a bit in the broth until thickened and then remove the skillet from the heat.
Step Six: Now, assemble the burrito bowls! Start with a bed of rice and then top with the ground turkey mixture, then add black beans and all you favorite toppings!

How Do You Make Ground Turkey Flavorful
Seasoning, of course!
A common mistake people make when cooking ground turkey is that they dont add a proper amount of spices. Before preparing it, make sure to add a good amount of salt and pepper. A pinch will not do sprinkle it!
Dont stop there, though. If youre looking for actual flavor, look for different herbs and spices that will really elevate your meal. Things like rosemary, thyme, and oregano can help you create a really rich meal from what seems like an ordinary ingredient. Dont be afraid to go crazy when seasoning your meal. Food isnt meant to be boring.
There are a few other common mistakes people make, such as handling the meat too much and overcooking, that can cause detriment to the taste of the food. If youre afraid of butchering your ground turkey,

Whats The Best Type Of Ground Turkey
If by best, you mean the healthiest option, its the 99% lean ground turkey. Since its made up of white meat alone, this option lacks the extra calories and fat that exists in the other options.
However, its important to keep in mind what the recipe youre using asks for. If it tells you to use ground turkey with a bit more fat, its best to follow what it says.
The one downside of lean ground turkey? It can be a bit dry when its cooked. However, this is an easy fix simply add a teaspoon of olive oil, or any other healthy oil of your choice.
Due to the lack of fat in lean ground turkey, people often complain about how it lacks flavor. Have you ever been so excited for the turkey at Thanksgiving, just to be disappointed by how dry and flavorless it is? Weve all been there.
How To Make Spicy Turkey Meal Prep Bowls
1. Prepare the rice according to the packaging directions.
2. Heat the olive oil in a large skillet or dutch oven using medium heat. Once hot, add in the ground turkey. Break it apart into smaller pieces and cook for 7 minutes. Sprinkle with salt and pepper.
3. Add bell peppers, onions, and seasonings to the skillet. Continue to sauté for 7minutes or until the veggies have softened
4. Next, add in the tomatoes and chickpeas. Continue cooking for 5 minutes.
5. Add the spinach to the skillet and let it cook for 2-3 minutes or until it has wilted. This will give the dish time to let the flavors blend together.
6. Place 1/4-1/2 cup of the cooked rice into your meal prep container. Then mix in the ground turkey mixture evenly.
