Easy, Gluten Free Sugar Cookie Recipe

Add the room temperature butter to a mixing bowl or bowl of a stand mixer. Cream together with the sugar until well combined. Beat in the milk and vanilla.

Add in the remaining ingredients, making sure to spoon and level the flours. Mix together with a wooden spoon until combined. Place in the fridge for 30 minutes to set.

During the final 15 or so minutes, preheat the oven to 350 degrees Fahrenheit.

Use a medium or large cookie scoop and scoop the cookies into balls and place on a baking sheet lined with parchment paper. Theyll spread, so leave enough space between each cookie. I generally dont put more than 6 on at a time.

Bake for 10-14 minutes, or until the edges are just golden brown. Halfway through baking, remove the cookies from the oven and quickly slam the tray down on your stove top 2-3 times to help the cookies spread and get crackly tops. Place back in the oven and repeat this as soon as they come out of the oven for the final time.

Let cool on the tray for 10-15 minutes, then transfer to a cooling rack to finish cooling.

Once you reach a uniform mixture that resembles moist crumbs and clusters, knead the dough with clean hands to bring it together before rolling it out.

If youre planning to make a double recipe, you may want to use a stand mixer fitted with the paddle attachment instead of a bowl and spoon. A stand mixer will make quick work of bringing the dough together into a cohesive whole, ready to be rolled out.

These chocolate chip keto cookies can be ready in less than 25 minutes flat! Heres how to make the best almond flour chocolate chip cookies:

  • Cream butter and sweetener together. Its the first step to making truly delicious low carb almond flour chocolate chip cookies, because it creates air pockets and better texture.

TIP: This is the main reason why butter is highly recommended for this recipe, if you can. You can try to replicate it with ghee or coconut oil if you need to, but the texture is still a bit different.

  • Make the chocolate chip keto cookie dough. Beat in eggs, vanilla, and blackstrap molasses, then almond flour, just a bit at a time, and finally xanthan gum.

TIP: There is a right way to add the almond flour and xanthan gum. Add the almond flour gradually, 1/2 cup at a time. If you dump it in all at once, it will be difficult to get it to incorporate and you might think the cookie dough is too dry.

With the xanthan gum, sprinkle it on dont dump it in! and then beat in. If you dont sprinkle in a thin layer, it tends to clump and might not incorporate into the dough.

TIP: For prettier cookies, feel free to press a few extra chocolate chips into the tops.

  • Bake. And wait patiently to take a bite of these low carb almond flour chocolate chip cookies. Dont worry, it only takes 10-12 minutes!

  • Whisking your gluten free flour This ensures the flour is well combined and it is aerated.
  • Carefully scoop your gluten free flour into a measuring cup USING A SPOON. Don’t scoop the flour directly with the cup. You’ll inadvertently get too much gluten free flour.
  • Level your measuring cup off with a knife, or using the handle of the spoon. I have some self-leveling measuring cups that I love. If I’m using them, I never forget to level off my gluten free flour.

  • Make a decision about molasses: Some may also prefer to avoid the molasses, because Im sure your first instinct is that it equals sugar. But, keep in mind that its super dense and flavorful, and were only using a teeny-tiny amount in the entire recipe. And, the molasses really gives an awesome depth of flavor to these low carb almond flour chocolate chip cookies.

The amount of molasses per cookie ends up being just a few drops, not significantly altering carb count. These keto chocolate chip cookies have only 4 grams net carbs each!

But if youre seriously averse to molasses or are following very strict keto, you could sub a bit of maple extract for a similar flavor.

  • Best flours to use: Youll need a measure for measure, 1 to 1, or recipe ready gluten free flour blend for these Christmas cookies. I prefer King Arthur Flour GF Measure for Measure Flour or Bobs Red Mill Gluten Free 1-to-1 Baking Flour. Both blends already include xanthan gum as a binder.
  • What flours to NOT use: You cannot swap the gluten free flour blends for single gluten free flours like coconut flour or almond flour, for example. These flours do not contain binders and can be more or less thirsty than the blends. For example, coconut flour requires a ton of liquid/moisture when added to gluten free baking recipes.
  • Leave time to chill: If youd like to roll the dough to cut with cookie cutters, plan on leaving enough time to chill the dough for several hours, or up to overnight.

    I tested this recipe with my gluten free flour blend.

    You can certainly use another gluten free flour, but you may need a little less flour depending on the absorption rate.

    I’ve discovered that both Bob’s Red Mill’s 1 to 1 gluten free flour and Ryze’s Blue Bag Gluten Free Flour need a little less gluten free flour than what I use in my recipes.

    You can always add more flour but you can’t take it away.

    So do yourself a favor and if you are using any gluten free flour than mine, start with 1 cup of gluten free flour.

    Bake a single cookie to test how it spreads.If it comes out too thin and crispy, add more flour to get a thicker cookie.

    Its super simple to roll out, and its stable enough that its even simple to cut out shapes and transfer them to the baking sheet. There is nothing fragile about the dough, but once you bake the gluten free sugar cookies, theyre tender and light as could be.

    How To Make Cut Out Cookies

    If youd like to make cut out cookies with cookie cutters, divide the dough in half then wrap each half in plastic wrap and refrigerate until completely chilled a couple hours or overnight.

    Once chilled, remove one dough disc from the fridge then place it onto a sheet of parchment paper. Working quickly, cover with another sheet of parchment paper then roll 1/4 thick.

    Press cookie cutters into the dough then wiggle a bit to make sure theyre completely separated from the surrounding dough. Transfer the cookies to a silpat or parchment paper-lined baking sheet then bake for 7-9 minutes at 375 degrees or until the edges are barely golden brown. Freeze scraps for 5 minutes before re-rolling and cutting. Let the cookies cool for 5 minutes on the baking sheet then transfer to a wire rack to cool completely. Once cool, frost and decorate.

    • Tip: I like to bake the cut out cookies until golden brown around the edges because its a little easier to frost cookies with arms/legs/boots, etc when theyre a bit sturdier. Still soft, but just a touch sturdier.
