Sugar Free Banana Bread Recipe – Made with Stevia

Don’t have chopped walnuts? You can use any nuts in this recipe. I think pecans or hazelnuts would work particularly well.

Instead of nuts, you could addsugar free chocolate chips instead. It’s easy to make your own. Alternatively, use chopped dark chocolate with a cocoa content of at least 85 % or a brand like Lily’s.

I used a small 7.5 x 3 inch loaf tin for this recipe. It’s the perfect size for low carb bread because it’s nutrient dense and filling and servings need to be smaller. If you use a loaf pan like this, your bread will be taller than wide.

If you only have a full size bread pan, you can double the recipe. In this case, increase the baking time to about 1 hour. Be sure to insert a knife to test the inside is baked . Again, cover the top loosely with aluminium foil once the top is browned to prevent burning.

To make this recipe dairy-free, replace the butter with coconut oil.

For even more flavor, consider adding a pinch of salt or 1 tsp vanilla extract.

I used ground almonds in this recipe. This is equivalent to regular blanched almond flour in the US. Almond meal would also work well and give a more rustic texture.

If you’re using super fine almond flour, I recommend to reduce the amount to 1 ¼ cup as it is more absorbent.

I have not tried this myself, but it should be possible to replace the almond flour with ½ cup of coconut flour. In this case, you may also want to add ¼ teaspoon of xanthan gum.

Ingredients You Need To Make Low

For this recipe, you need the following ingredients that you usually have in your fridge and pantry.

  • Eggs – there are a lot of egg varieties in the grocery so choose whatever you like
  • Almond flour – this kind of flour is quite expensive by the way, but if you’re serious about following a low carb diet, the benefit outweighs the cost. You may also mix in some coconut flour
  • Olive oil or coconut oil. Fat source and oil is important to make the bread tender and easy to slice.
  • Sweetener, sugar substitute but for this recipe I used stevia. A word of warning, if you used too much stevia, expect a bitter or salty aftertaste. 1 cup of sugar is equivalent to 1 teaspoon stevia powdered extract. Visit this chart for the conversion.
  • Walnuts or pecans or any nuts of your choice or no nuts at all if you are allergic to them
  • For extra added aroma, you can also add vanilla extract and cinnamon

What I love about baking is that you can experiment and adjust the number of ingredients for your desired diet or taste.

In my chemistry class in high school, my teacher told me that in order to achieve an exact level of consistency, combine the dry and wet ingredients separately first before combining everything together.

I use organic monkfruit in this recipe to keep it sugar free, specifically this Monkfruit Baking Sweetener. It measures 1:1 like table sugar and works great for baking. It has zero calories, no carbs, and wont spike your blood sugar.

Feel free to use your preferred sweetener. If you use stevia or artificial sweeteners, you will have to convert the servings. Since monkfruit measures 1:1 you can follow your standard method for calculating it.

  • Preheat oven to 350 degrees.
  • Combine the mashed bananas, vanilla extract, melted butter, beaten eggs, and unsweetened applesauce in a small bowl.
  • In a separate large mixing bowl, combine the flour, sweetener, salt, baking soda, and cinnamon.
  • Add the wet ingredients to the dry ingredients . Mix with a silicone or wooden spoon. Dont overmix. Ensure the flour is incorporated, but the mix should be lumpy.

    I like the flavor of butter in my bread, but I cut the standard amount of butter typically used in half but using unsweetened applesauce.

    I dont recommend substituting all the butter outlined in this recipe for more applesauce. You will need some oil. You can substitute the 2 1/2 tablespoons of butter for coconut oil or avocado oil instead.

    You want to use very ripe bananas, perhaps overripe. People often make banana bread when they have bananas that are going bad.

    I usually cant find these in stores, so I have to wait sometimes up to a week for the bananas to ripen at room temperature. The bananas should have black or brown streaks in them or they should be mostly black.

    You want to use ripe bananas because they are sweeter and have more sugar.

    How To Make Low

    So for the method of baking for this recipe, combine the eggs, bananas, oil together.

    Then separately combine the flour, baking soda and stevia. To make a batter, combine the two mixtures together. Pour in a loaf pan and fold some nuts of choice if desired.

    The baking process for this recipe is usually 60-75 minutes but if you decided to adjust the ingredients, check your oven once the baking reached 30 minutes.

    If it’s not fully baked, continue baking but check if it’s cooked every after 15 minutes. Do a toothpick test, if the toothpick comes out clean then it’s cooked.

    If baking in a muffin pan, bake for 18-20 minutes.

    Is Homemade Banana Bread Good For You

    It really will depend on how you make it. Growing up, my mom made a recipe for me that called for 5 tablespoons of butter and 1/2 cup of pure honey. Those are loaded with fat and sugar.

    Most recipes I see have 300+ calories and 50+ grams of carbs per slice. If you want to eat a slice of bread for breakfast or as a treat a few days a week, those macros are not very friendly.

    Three Hurdles Of Baking With Stevia

    Three things always intimidate me about using stevia. Lets address each one head on, in hopes of making the stevia universe a heck of a lot less mysterious!

    1. How much stevia to use

    I am only going to say this once: Do not follow the conversion chart on the back of the jar. Repeat: Do. Not. Follow. Chart. Since theres no standard potency from brand to brand or from liquids to powders, its up to you to use just as much stevia as you need.

    Most of the time, the amount I am happy with is a 3 times less than what the chart recommends. The best idea is to start with just a littlelike 1/8 to a 1/4 teaspoonand take it from there. There are no eggs to worry about in the recipe below, so in this case you can taste as you go.

    2. Keep it from tasting bitter

    In The Kind Diet , the biggest complaint Alicia Silverstone has about stevia is the taste. Somehow, its so sweet that it ends up tasting bitter and harsh. I prefer the less concentrated stevia that is mixed with the natural fiber inulin, like Sweetleaf SteviaPlus. My solution to take the bitter edge off is choosing complementary flavors.

    In the recipe below, the stevia enhances the natural sweetness of the coconut milk and coconut flakes for a much warmer flavor. Its also good paired with orange juice, like in my Orange Currant Brunch cake. If nothing in the recipe has a sweet profile, I suggest adding just a tablespoon or two of maple syrup.
