Mix ricotta, mozzarella, and eggs. Brown beef, stirring to separate meat. Pour off fat. Sir in Prego Sauce. In each of two 2-qt. shallow baking dishes, layer 1 cup Prego mixture, 2 noodles, and 1 cup cheese mixture. Repeat layers. Top with remaining noodles, remaining Prego mixture and Parmesan. Bake at 400º 30 minutes. Let stand 10 minutes.

The Sauce: I only will make something from scratch if its WAY more delicious to do so or a lot cheaper than the store bought version . Pasta sauce is just not one of those things I can get behind making from scratch. I am not a gardener so I do not have tomatoes growing out of my ears. I am a Costco Member and I can get Prego Pasta sauce for SO CHEAP! Its also, in my opinion, damn delicious. So in this recipe I use Prego Pasta Sauce. JUDGE ME! Lasagna is kind of time consuming to make too so using some store bought sauce on this.. you deserve it. I deserve it.. we all deserve it!!

The Cheese: This recipe is AQUEENA’s version. Look at the URL I know that Ricotta is more traditional than the cottage cheese I use in Lasagna. However, they are seriously interchangeable in this recipe.. so do whatever makes you happy!

The Pasta: I am capable of making fresh homemade pasta noodles. But they just hit different than store bought noodles in Lasagna.

The Beef: Some People Mix Italian Sausage and Ground Beef. I don’t. I really love that beef flavour in Lasagna. We have Grass and Oat finished Alberta Beef in our freezer, from our farm. It is so delicious, I am not about to mess with that by mixing in some pork.     • My trick to making the BEST lasagna ever is to buy a jar of four cheese pasta sauce. This is an awesome retro throwback recipe that uses a jar of pre-made spaghetti sauce and that makes dinner so much easier!
    • Use No Boil noodles, do not use boiled! There is a specific amount of water and sauce in this recipe so that the noodles cook IN the pan without being boiled first.
    • You can add in some vegetables or whatever you like to the meat mixture, as long as they are cooked first. Honestly though this is great just as-is.
    • Baked this at 350 °F for 45-50 minutes.

    That plus the cottage cheese has made this recipe a family favourite in my household. The four cheese sauce makes it a) easy for you to throw together in a hurry b) extremely delicious c) beyond delicious d) no really, it’s the key here to making the best cottage cheese lasagna.     While you heat the oven, brown ground beef in a large skillet over medium-high heat and season with salt, pepper and garlic powder or Italian seasoning if you like.

    Start by coating the bottom of a 9×13 pan with a layer of sauce.

    Then add a layer of pasta and cover with about one third of the cottage cheese .

    Sprinkle on a little less than a cup of the mozzarella cheese and more meat sauce .

    Once everything is layered up, top it with the remaining sauce making sure the no-boil noodles are covered and a final layer of cheese before baking.

    Bake to desired consistency and let cool for at least 10 minutes before serving. I personally love that golden brown crispy cheese layer so I leave mine in a few extra minutes!

    Yes, just like my chicken sloppy joes and sweet potato breakfast casserole, this lasagna freezes well! What I usually do is prepare and bake the full lasagna as written below, and then refrigerate the whole thing in the pan overnight.

    Trust me, its MUCH easier to portion and wrap the pieces when the lasagna is chilled than when it is warm.

    The next day, I remove the chilled pieces of lasagna with cottage cheese from the pan and wrap them individually in plastic wrap, then foil. I freeze the wrapped pieces in freezer bags.

    To reheat, I unwrap as many pieces as I need and place them in a small casserole dish with a little bit of water in the bottom. I cover the dish with foil and bake at 350 degrees F until they are heated through.

    I always, always, always use mozzarella cheese. It melts so beautifully and is the perfect compliment to the other ingredients in this easy lasagna recipe. In addition to the mozzarella cheese, I use either ricotta or cottage cheese. For todays recipe, Ive made a few changes from my childhood including swapping out the cottage cheese for ricotta but honestly, both are so good.

    How To Freeze And Reheat Individual Slices

    Freezing lasagna in individual slices is a fantastic idea!

    You wont have to reheat all of the leftovers just for a single serving.

    You also wont have to raid your kitchen cupboards to find a container large enough to freeze them.

    I start by cutting the lasagna into the desired portion size.

    This will be a little different for everyone, so consider how much lasagna youll typically eat in one sitting.

    Then, I transfer all my portions into individual air-tight containers.

    If you dont have enough containers, wrap the individual slices in foil, then seal them up tight in a freezer zip-top bag.

    The last step is important as it will help eliminate freezer burn.

    When it comes time to reheat, thaw out your slices. Then you can remove them from the foil and heat them in the microwave for a few minutes.

    Alternatively, you can use the oven method by placing your slices in an oven-safe container and covering them in foil.

    After a few minutes of reheating at 350 degrees Fahrenheit, it will be ready.
