Black truffles:

  • My opinion is that its better to eat truffles only once a year but then do it properly than to try to stretch a tiny amount to make several dishes.
  • I had a larger 35 g/ 1.2 oz and a smaller 20 g/ 0.7 tuber and I used them both to make this truffle pasta recipe. It was enough to delight four people on top of about 450 g/ 1 lb of buttery noodles.

Butter:

  • An important ingredient as well. I rarely cook a savory dish using so much butter, but this recipe really needs it. Butter enhances the flavor of the tubers, and you need quite a lot of it to make it count.

Other ingredients:

  • Parmesan: dont ruin such an expensive and delicate dish by using already grated Parmesan from a box. Buy a wedge of good-quality cheese and grate it yourself before adding it to the sauce.
  • I had spaghetti, but tagliolini, linguine, and so on will be fine as well.

Ive always been a fan of simple recipes that are made with few ingredients but are still full of flavours and those of you who follow my work already know that my recipes fall into that category and are never complicated. This one that Im sharing today is possibly one of the easiest and it only takes about 15 minutes to make but its still made with high quality ingredients and its kind of fancy too! Last month I spent few days in Rome and indulged in some lovely pasta dishes , one of them being the most simple but also the most delicious, fresh tagliatelle pasta with black truffle! So delicious! I knew I had to make it myself soon and I couldnt wait to eat it again.

Pasta is one of my favourite dishes but I dont eat it often, I keep it for special occasions or those days when for one reason or another you want to treat yourself with something special and indulge a bit more than usual. I actually couldnt believe when I realized that I dont have any pasta recipes yet here on the blog and I think that needs to be changed right away, do you agree?!

Tips For The Best Truffle Sauce

I assure you this truffle pasta sauce will become a new favorite of yours. Here are a few simple tips to perfect this dish!

  • Use high-quality ingredients: With such a short ingredient list, its pretty important to use the best quality you can get your hands on. Especially when it comes to the truffle and parmesan cheese.
  • Whisk, dont stir: Whisking creates a smooth, velvety texture and helps disperse the cornstarch. A wooden spoon or spatula can lead to clumps of undissolved cornstarch.
  • Dont overheat after adding the truffle and parmesan: Dont cook the sauce after adding the truffle and parmesan. Heat will lessen the delicious truffle flavor and can burn the parmesan.
  • Serve right away: Truffle cream pasta sauce is best served right after preparing it. Try cooking your pasta so that it finishes at the same time as the sauce.

What Truffle Is Best For Cooking

There are different types of truffle products commonly sold. Yes, truffle is expensive, but its going to be worth it!

  • Fresh truffle is pretty expensive, but if you can get your hands on some fresh truffle, you are golden! It should not be cooked, as the heat will alter the delicate flavor. Instead, use a truffle grater and slice it directly onto your pasta dish.
  • Sliced truffle in oil is what I used for this truffle pasta sauce recipe. Fresh truffle is marinated in oil, which extends the shelf life considerably. Its a luxurious garnish for food, and as an added benefit, the oil is infused with truffle flavor too.
  • Minced truffle is essential the same as sliced truffle, except that the truffle is finely minced rather than sliced. This is a great condiment to mix into dips and sauces or drizzle over meat and pasta.
  • Truffle oil is high-quality olive oil infused with truffles. The fungus saturates the oil with its characteristic, earthy flavor. Its a lovely and affordable way to impart the truffle flavor to all kinds of dishes.

A question that many people ask themselves when preparing a plate of truffle pasta is: how many grams of truffle for a plate of pasta?

In short: how much truffle does it take per person?

The ideal dose is around 7/10 grams per dish. For a table of 4 guests therefore, you will need approximately 30/40 grams of fresh truffle .

How To Make Black Truffle Pasta

  • Cook the pasta al dente. You will need some cooking water for the sauce, so once the spaghetti are almost cooked, you should have all the sauce ingredients ready for the pan.
  • Making the truffle pasta sauce only takes minutes.
  • Grate the Parmesan and set it aside. Cube the butter and set it aside. Grate about 2/3 of the truffles and set them aside.
  • Melt the in a large heavy-bottomed skillet on medium-high heat .
  • Add about one ladleful of pasta water to the butter.
  • Turn the heat down to low and stir gently until the mixture emulsifies.
  • Add the grated Parmesan See Expert Tips .
  • Once the sauce is smooth , add the grated truffles and another splash of the cooking water. Stir gently, turn off the heat and let the sauce infuse for a minute or so while you drain the spaghetti.
  • Add the noodles to the skillet and stir gently to combine.

Place the room temperature Urbani Black Truffle Butter in a small mixing bowl.Add milk and whisk the mixture for 3 minutes to create a buttery sauce.

STEP 2

Bring 4 6 quarts of water to a rolling boil in a large pot and add a pinch of salt.Add fettuccine to boiling water. Stir gently.

STEP 3

Return water to a boil. For authentic al dente pasta, boil uncovered stirring occasionally for 12 minutes. Towards the end of the cooking time, take a couple of ladles of the pasta cooking water and set it aside .Remove the fettuccine from heat. Drain well.

STEP 4

Pour the sauce in a ceramic bowl, add Parmigiano Reggiano cheese and Urbani Black Truffle Thrill and stir gently. If the sauce seems too thick add a little of the pasta water that was set aside earlier, until you arrive at a smooth creamy texture. Add the pasta to the bowl mixing it with the sauce.

STEP 5

Finally, serve the pasta on a dish, add a little more freshly grated Parmigiano Reggiano cheese and a shave a few thin slices of Urbani Summer Black Truffles on top. You are now ready to enjoy a dish that will transport you to the heart of Italy. Buon Appetito!

What Do They Taste Like

The flavor comes mostly from their aroma and not from their taste. Strong, pungent, musky, woody. If you are not familiar with it, you might even think that something is wrong when you first smell a truffle.

I dont have the possibility of buying fresh truffles here in Germany unless I order them online. The first thing I notice when the parcel enters the house is the odor, the whole kitchen will smell of truffles before you even open the package.

Its certainly the bite size chocolates you find yourself devouring every Birthday, Christmas or Tuesday Essentially what a truffle is, is a type of Fugus, much like a Mushroom it even falls under this category due to its spore-bearing body. However, they cannot be further away from how a mushroom tastes. Think earthy, umami, and a pungent aroma not too dissimilar to strength of garlic. It does not smell of taste of garlic, but its similar in strength- if that makes sense.

Cacio e Pepe, if you havent heard of it, is a clever little pasta dish made simply with black peppercorns, Pecorino Romano and starchy pasta water. Its a classic Roman pasta dish, and if youve ever been to Rome, its likely youve seen it on a menu there I must add, out there in Rome, Cacio e Pepe is next level. Its so simple when you break it down, and uses little ingredients it really allows the cheese to shine.

Our Truffle Butter Pasta is a branch off Cacio e Pepe, it uses similar ingredients and the same type of method emulsifying cheese, fat and water to create a smooth and creamy sauce. Note there is no cream in this recipe. Truffle Oil is used instead of fresh truffles because a) Were not all made of money and b) they sell it in supermarkets AND c) it will last for months.

Extra Tips For Making Black Truffle Pasta

We suggest salted butter as this adds extra seasoning. If you only have unsalted butter, or low salted butter then ensure you season your sauce extremely well with salt to really bring out the earthy flavor of the truffle.

Although a little black pepper can enhance the muskiness of the black truffle, be sparing with it. Too much will over power you truffle.

Italian Truffle Salt

Truffle salt has tiny fragrant pieces of black or white truffle blended in.

Truffle oil usually comes in small 2 or 3-oz. bottlesit delivers the taste and smell of real truffles with a derived essence but is not actually made from real truffles.

Italian Black Truffle Oil (I picked up this tin can of truffle oil in Umbria, Italy in a little panini shop. The owner of the shop recommended this brand. Its on Amazon too and Ive included the link.

Truffle cheeses are rare, but you can still find them. Try these: Moliterno Black Truffle Pecorino, Boschetto al Tartufo, Venetian Sottocenere.

  • 4 oz sun-dried tomatoes, chopped finely
  • 2-3 cloves minced garlic
  • Heat the olive oil in a saucepan over medium-low heat.
  • Add the minced garlic and cook until fragrant, about 1-2 minutes.
  • Reduce the heat to low and add the sun-dried tomatoes, stirring occasionally for another two minutes.
  • Add the almond milk and stir to get all of the garlic and tomatoes off the bottom of the pan. Increase the heat to medium and simmer for 5-10 minutes until the almond milk has thickened.
