After that, immediately remove from heat and stir in the peanut butter and vanilla extract. Once combined, stir in the oats.

    Grab your timer again and let the mixture cool for 4-5 minutes. This gives the oats some time to absorb the liquid, which makes scooping and shaping much easier. If you used a super thin natural-style peanut butter, let it sit for about 10 minutes.

    Line a couple baking sheets with parchment paper or silicone baking mats. Drop 1 Tablespoon sized mounds about 2 inches apart on the baking sheets.     These cookies are so delicious! I bet your family will love them as much as mine does. Here is the quick and easy recipe:

    Cream the butter and sugars together with an electric mixer. Add the eggs and vanilla.

    Making no bake cookies is one of the simplest cookie recipes to make and one that I started making as a child and one that my own son started making early as well. There are just a few tricks to making sure that they come out perfect every time.

    • Add your sugar and cocoa powder to a medium heavy-bottomed saucepan. Whisk until thoroughly mixed. Add milk and butter and cook over medium-high heat. Bring to a rolling boil and boil for 1 minute. This rolling boil and boiling for 1 minute is the key! Otherwise, your cookies will not set properly.
    • Remove from heat and stir in the vanilla, salt, peanut butter and oats.

    • Swap the butterscotch chips out for chocolate chips, peanut butter chips, M& Ms, Heath bar bits, raisins, craisins, just about anything!
    • Add chopped pecans or walnuts to the dough for a heartier cookie.
    • Drizzle the warm cookies with a glaze made from powdered sugar and milk. So yummy!
    • Add just a little cinnamon and nutmeg to the dough for a warm spice cookie.

    Can I Freeze Oatmeal Cookie Dough

    You sure can! You have two options: you can bake the cookies, let them cool, and then put them in freezer bags to store for up to 3 months.

    What I prefer to do is scoop the cookies onto a baking tray lined with wax paper. Then I flash freeze them, meaning I put them in the freezer just until they’re hard. Then I put the cookie dough balls into a freezer zipper bag to store in the freezer.

    Don’t forget to write down how long to bake the thawed cookie dough and at what temperature. Then you don’t have to look the recipe up again!

    Next time we feel like some fresh-baked cookies, we just take the bag out of the freezer and let it thaw a bit while the oven preheats.

    How To Make No Bake Peanut Butter Kiss Cookies:

    Start by grabbing your medium saucepan and mix together the corn syrup and brown sugar over medium heat. Make sure to stir continuously until the syrup and brown sugar mixture comes to a full boil.

    PRO TIP: Make sure that the corn syrup and brown sugar come to a full boil or else the cookies wont come together.

    Then take the saucepan off the heat, and add in the peanut butter and vanilla extract and stir it in well.

    In your large mixing bowl, pour all of the rice krispies cereal. Then, add in the peanut butter mixture to the cereal. Stir everything up well until all of the cereal is well coated.

    Now, grab some of the rice krispies mixture into your hand and roll it into a small ball, about 1 ½ inch or so and then place it onto the cookie sheet lined with waxed paper or parchment paper.

    Then, using your thumb, press a small indent into the ball and then place a chocolate kiss into the indent and continue to push the kiss down a little further. This should form the cookie around the base of the kiss.

    Once that is done, let the no bake peanut butter kiss cookies sit and cool for a few minutes until they set up fully. Then, be sure to store them in an airtight container to keep them from drying out.
