Most Malibu cocktails are all about summer and the beach, but this icy mixed drink is geared more towards the winter months.
Honestly, it still screams summer to me, thanks to the overwhelmingly sweet flavor and aroma of coconut, but it looks like a glass of winter snow, making it ideal for the holidays.
My Twist On A Classic Cocktail
This cocktail is an update on the Tequila Sunrise Cocktail and my twist on this classic cocktail is to use lots of coconut. Coconut rum is substituted for tequila and a layer of cream of coconut at the bottom of the glass gives extra sweetness and beauty to this drink.
I like moving my straw up and down through the layers of the cocktail. Sometimes I just want to taste the orange and coconut layer and sometimes I like just a tiny sip of the cream of coconut. Some people like to stir the layers and mix the cream of coconut into their drink.

We Like the Mai Tai’s that you may get at a Chinese Restaurant. They are Brown. I’ve been told they have a shot of coke Syrup. Do you have That recipe??

Hi Kate! I’ve never had a Mai Tai at a Chinese restaurant before so it’s difficult to say. I did some research on some different recipes and if I was going to do the coke syrup, then I would replace the simple syrup and the orgeat with 1 oz of coke syrup. Let me know if you try it!
How To Make A Winter Sunshine Cocktail
Place about 1/2 a cup of shredded coconut flakes on a plate or shallow dish. Rim the edge of a martini or wide-rimmed cocktail glass with a slice of orange or water. Then dip the glass rim side down into the coconut flakes to rim the glass. You may need to gently roll the edges in the coconut.
Add 1 cup of ice then 1 oz of Coconut Rum, 2 oz of coconut milk and 1 oz of orange juice to a blender. Blend on high until the liquid is creamy and there are no large ice chunks. Should be the consistency of a smoothie. Pour into coconut rimmed glass and serve immediately.

You could also possibly exchange the coconut rum for pineapple rum. You also could use pineapple or coconut vodka in a pinch.
Feel free to exchange the white rum for dark rum too. I happen to love dark rum over white because it has so much more flavor, however it will make the cocktails a slightly different color.
And as mentioned above, try sparkling coconut water for a little more bubble in your cocktail!

Of course, I always think of the Big Lebowski when I drink a White Russian. Which is crazy since I havent seen that movie in about 100 years.
Kahlua and rum make great easy mixed drinks. And because I decided to grab coconut rum, I decided that coconut milk would be a great substitution for regular milk or cream in this recipe.
Now the recipe is non-dairy and has this lovely touch of coconut flavor but has that great coffee flavor from the Kahlua. It is really SO simple. And only needs these three ingredients!
Of course, you can just call this a Coconut Rum White Russian. I call this one, The Little White Lie. Because it looks just like a regular old iced coffee. But its not. Its more awesome.
And its perfect for brunch.
To be clear, I would not drink this and tell my kids it was iced coffee. If I am responsible enough to drink a cocktail I am responsible enough to have those conversations with my kids.
And quite frankly, I dont drink a lot of brunch cocktails because when you get old like me, they just make you sleepy.
