How To Make A Hash Brown Casserole Without Canned Soup

This gluten-free casserole comes together in a few simple steps.

Step 1: Make the cream of chicken soup substitute.

  • Make a roux with the butter and starch.
  • Add the chicken stock, milk, and spices.
  • Simmer till it’s thick.
  • Step 2: Mix the casserole together.

  • Combine the gluten-free soup substitute, sour cream, cheddar cheese, and spice into a bowl.
  • Mix until the sauce comes together.
  • Add the frozen hash browns to the bowl with the sauce.
  • Stir to fully coat the hashbrowns in the sauce.
  • Step 3: Top and bake the hash brown casserole.

  • Transfer the hash brown casserole to a casserole dish.
  • Top the casserole with more cheddar cheese.
  • For an extra crispy topping, add the melted butter and crushed gluten-free crackers before baking.

    Gluten free cornbread is big in my family, especially come holiday season. But really, any time is the right time for cornbread.

    At the beginning of this year, we did an article in Gluten Free & More Magazine on cornbread mix and match we provided three basic gluten free cornbread recipes with add-ins so that one could create their own cornbread masterpiece.

    When testing the recipes, I decided I should give them to my own cornbread aficionado, Julian, to see if they came up to his high standards. I already knew he loves my classic cornbread recipe and I felt pretty safe with the vegan version, as it still contained cornmeal, but the grain free, corn free recipe had me a little nervous.

    I did not tell him it had no corn, I just gave him some and waited. Bottom line he loved it!

    This is a protein-rich recipe thanks to cage-free eggs and almond flour and is a really great cornbread alternative for anyone giving up grains. It is also really simple to make!

    Note:Commercial baking powder contains cornstarch, so for a truly corn free cornbread you need to make your own, but fear not, it is really simple. Just combine 2 parts cream of tartar, 1 part baking soda, and 1 part starch of your choice . Whisk all ingredients together and put in a jar to store. Use as a one-to-one substitution whenever baking powder is called for in a recipe.

    Can You Make Cheese Hash Brown Casserole Ahead Of Time

    Yes, this cheesy potato casserole makes the perfect make-ahead gluten-free side dish.

  • Make the casserole in the baking dish you want to bake it in.
  • Cover and place it in the fridge a day in advance.
  • Let the casserole sit at room temperature for about an hour before baking it off.
  • Do not place a cold casserole dish into a hot oven. It can crack from the extreme temperature changes.

    Recipe Options For Whole30 Paleo And Keto:

    If you are doing a Whole30 or do not have or want to use the crackers, you can use 1 cup of tapioca flour and add in 2 tablespoons of Italian seasoning and 1 tablespoon garlic powder. For a less starchy version you can use 1 cup of almond flour and 1/4 cup of arrowroot starch, mix together with the seasonings and use just the same. For Whole30 and Paleo of course, you would want to leave off the cheese or swap in a dollop of cheezy cashew cream when you serve.

    To make keto / low carb you can swap the crackers for approx 5 to 7 ounces of pork rinds blend in food processor to breadcrumb-like consistency with the spices and skip the tapioca flour. Dip into the egg mixture then the pork rind crumbs, cook as instructed.

    Are frozen hash browns gluten-free?

    No, not all frozen hash browns are gluten-free. Potatoes are gluten-free, which is what hash browns are made of. However, some brands of frozen hash browns add ingredients that contain gluten or are contaminated during processing. Always check to see if the brand you are using is gluten-free. I use Ore-ida shredded hash browns, which are labeled gluten-free.

    Can you add meat to hash brown casserole?

    You can easily turn this gluten-free casserole into a full meal. You can add chopped chicken, ham, or even ground beef to the mixture before baking.

    How To Make Gluten Free Pasta

    Making homemade gluten free pasta is surprisingly easy!

    It starts with adding the following to a food processor:

    • Almond flour
    • Sea salt
    • & Eggs

    The leftover egg whites can be used to make omelets and frittatas, as a binder for macaroons , and so much more!

    The mixture is then processed into a doughy texture .

    The dough is split into two pieces and placed on a floured cutting board.

    Then the dough is rolled out into a very thin layer. You want to get it as thin as possible without breaking.

    Next, its cut into thin strips. We find a small pizza cutter works well.

    Although weve mainly tested it as fettuccini, we also think it would work well as just about any shape, including lasagna noodles!

    Once all the pasta is in the shape you want, it gets added to boiling water and cooked until al dente about 5-7 minutes.

    And just like that, youve got incredibly delicious gluten free pasta that rivals pricier store-bought varieties such as Capellos brand.

    In our cost analysis, we found that our homemade version is less than half the cost of similar store-bought products !

    A Note On The Crispy Topping

    I like to use crushed gluten-free crackers to top these gluten-free cheesy potatoes. I prefer the Schar brand table crackers. If you can’t find these, you can your favorite gluten-free cracker.

    Other options.

    • Leave off the cracker topping, and just leave the top of your casserole with more cheese.
    • Use a gluten-free rice cereal mixed with the melted butter instead of gluten-free crackers. – Note that not all rice cereal is gluten-free. Name brand Rice Krispies are not gluten-free, but other brands like Malt-o-meal have gluten-free varieties. Always check the label to make sure your rice cereal is gluten-free.
