There are a few tips when cooking a beer can chicken on a wood pellet grill.
These are the most important things to consider:
- Make sure you have enough wood pellets in the grill so it doesnt run out. We actually forgot to do this and we ran out about an hour into cooking the chicken.
- Set the temperature at 300 350 degrees. Cooking the chicken too low will cause the skin to turn rubbery and hard to chew.
- Insert a temperature probe into the thickest part of the thigh making sure not to touch any of the bone.
- Cook the chicken to the recommended internal temperatures, to prevent any illnesses.
- Let the chicken rest for 10-15 minutes to let the juices settle and prevent it from becoming dry.

What Kind Of Beer For Beer Can Chicken
Most people use a lager, or a beer that is not too hoppy or bitter. I used a Corona Extra because thats what we drink. Ive put a list of different types of beers you can use for cooking beer can chicken, and whether it matters.
When it comes to choosing the right beer for your beer can chicken, there are no set rules, You can use fruity beers or sour beers.
Fruity and sour beers have more acidity and tend to do really well with grilled chicken.
Beer Can Chicken Variations
This recipe here is a traditional dry rub that many people use for their beer can chicken. If these seasonings arent your favorite, there are a couple of variations you may like.
One thing many people choose to do is a BBQ rub that contains brown sugar and seasonings such as garlic, onion, and paprika. Another option would be a cajun rub, or even using a seasoning blend such as Old Bay.
For the beer, you can use your favorite IPA, stout, a hard cider, or you can swap the beer for a mason jar half full of chicken stock, apple cider, or lemon juice and water. Some people even drop a couple of garlic cloves down into the liquid before they put it inside of the chicken.
For easier adaptation to indoor cooking, or for use during winter months when your grill might not be accessible, there is a spatchcock variation.
There youd spatchcock the chicken and lay it flat in a roasting pan and pour the beer or other cooking liquid into the pan as well. This way the chicken roasts in its juices and the beer aromatics are also infused into the meat.

Beer can chicken is seriously one of our favorite things to make. We love it on the grill and in the oven. Since you cook a whole chicken on top of a can of beer, the end result is both white and dark meat that is so juicy and tender.
What is beer can chicken? Beer can chicken is a method of cooking chicken where you place the cavity of a whole chicken on top of a can of beer. It can be cooked in the oven or on the grill.
Is beer can chicken and beer but chicken the same thing? Yes! Beer butt chicken is just another name for beer can chicken.
Why should I make beer can chicken? By cooking your chicken on top of a can of beer, you actually infuse the chicken with moisture so that it doesnt dry out.
Ingredients In Beer Can Chicken
- Beer: Youll need one regular 12 oz can of beer. Dont bother buying anything fancy. I tried various types of beer to see if there was a major flavor difference, and there wasnt. Just use whatever you like to drink or whatevers cheap. If you dont want to use beer for this recipe, you can use any soft drink can and fill it halfway with chicken stock.
- Chicken: I used a 3.5-pound chicken in the images here. You can use a larger chicken, but the cook time may need to be adjusted.
- Dry Rub: I like to mix up this rub ahead of time and often quadruple the batch so that I have it on hand. Feel free to adjust the amounts to your liking. Use more or less cayenne/chili powder to adjust the heat level.

How To Make Beer Can Chicken In The Oven
I found this amazing beer can chicken pan at a local kitchen store and I simply love it. You can find it on amazon here. It really is super simple to use it for beer can chicken because the beer can fits nicely inside and then when you place the chicken over it, its nice and snug. However, you dont need a special pan to make this chicken. I have made this in a regular roasting pan.
Start by mixing all the rub ingredients together in a small bowl. Drizzle the olive oil over the chicken and rub it in all over. Sprinkle over the rub and use your hands to massage all the rub into all the nooks and crannies.
Open the can of beer and pour about 1/4 of it into the roasting pan and set the can of beer in the center of the roasting pan. Place the chicken upright over the beer can and drizzle the olive oil over the chicken.
Transfer to the oven for baking and youre done.
The Grilling Of Our Bird:
Heat your grill until it maintains a temperature of somewhere between 350 and 400 degrees. With a spot to place your chicken that is not right over the heat. As read on your grills hood thermometer.
Tip for smaller 2 burner gas grills: Even with one burner on high you may not be able to maintain a temperature in this range. So, every 15 minutes or so you will need to turn on the burner below the bird for a few minutes. Low to medium heat will do just until you get the grill heat up to 400 degrees. Then turn off for another 15 minutes. The temp will slowly drop down.
Place your chicken on the grill grates, off of the heat and close the lid. If you only have a single heat source you will need to rotate the bird a quarter turn, every 20 to 30 minutes. The size of your bird will dictate how long the cooking time will be. Anywhere from 1.5 up to 2 hours is the norm, we cook to temp not to time.
Temp check the breast meat at 1.25 hours in. When the breast reaches 130 degrees we are ready for the final stage
