Diabetes is hard enough to live with when you get hit with all the holidays with all the food. We have to remember what diabetes is, the accumulation of sugar in the blood due to starches and sugars that are ingested. Not only do we have to watch desserts suitable for individuals with diabetes but it makes a big difference also when we decrease the bread, corn peas potatoes, gravies, dressings also for these dinners. Usually by the time you get to dessert you have already over loaded on starches, then we pile sugars on top. So, one of the first things to do is be aware of all the starches you serve. Lets take a look at some of the things diabetics can have, angel food cake, graham crackers, fruit, and anything that is actually sugar free. You have all kinds of choices here in the pudding and jellos and cool whips because they all come sugar free. Below is one of my favorite desserts, and its is very festive when made in a large glass bowl. This is my version, you can substitute any fruit or flavor you want.
You need two sugar free angel food cakes, and one quart of strawberries, one large container of cool whip, and 2 packets of strawberry sugar free jello.
Clean and cut up strawberries, make jello according to directions and put in pitcher.

Sugar Free Chocolate Frosting
My biggest concern when tackling a sugar free chocolate cake was the frosting. I mean.frosting is sugar, so how was this going to work? I happened to find a recipe that used sugar free chocolate pudding and Cool Whip. Yes, I realize that Cool Whip does still have some sugar in it, but you can buy fat free or Lite, whichever works for you and you have a very low sugar frosting. This recipe also has cream cheese in it which helps to stabilize the frosting and hold it on to the cake.
Heres our hint for making this frosting:
- Beat the cream cheese until it is smooth.
- Then in another bowl, mix together the pudding and milk.
- Spoon this into the cream cheese one spoonful at a time and beat each addition in until it is smooth before adding more. If you add it all at once, you may have trouble getting the frosting smooth. Take your time!!
- Fold in the whipped topping.
- Refrigerate the frosting until the cakes are cooled and then you can frost the cake. Its important to store this frosting in the refrigerator at all times so it doesnt melt off the cake.
Low Carb Chocolate Ganache
Now on to the sugar free frosting! I decided on a rich ganache instead of a chocolate buttercream frosting, because when you’re making a grown-up cake, you may as well pull out all the stops.
Basically, you warm the heavy whipping cream in a pan and heat it, but do not boil.
Then, turn off the heat and add finely chopped dark chocolate or sugar free chocolate chips such as Lily’s to the cream.
DO NOT STIR! This can cause the mix to split, because it cools down too quickly. First, let the mixture sit for 5 minutes.
Then, stir with a spatula until the chocolate is fully melted and combined with the cream.
Tip: If your ganache does split, donât panic! Just put in a food processor and blend until smooth and it will right itself.
As soon as the the chocolate frosting has cooled a little so it’s not boiling but still easily spreadable, spread it over both cakes.
Wait until the ganache has set, then stack the cakes on top of one another to make one gorgeous sugar free birthday cake!
You could serve it with whipped cream or a scoop of ice cream, but I just added some grated chocolate on top and a few red currants.

Lets Not Forget About The Sprinkles
Sprinkles are the topping here, and no worries because they are also completely sugar-free.
If youre interested in making your own low carb homemade sprinkles, I have the recipe for you. The best part about making your own is you can customize them to be any colour you want.
They do take a bit of time to dry so if you decide to make this sugar-free birthday cake with the sprinkles, make the sprinkles a day or two ahead of time.
Unlike sugar made sprinkles, these sprinkles are a bit more fragile and tend to melt a bit quickly. If you add them to ice cream, or on top of wet whip cream some of them will melt.
My cake required two coats of sprinkles because the first set melted, but it worked out very well because the outside icing ended up having that sweet icing taste, with a tiny bit of crunch.
The sprinkles held up like champs after that second coating, this photo was taken a few hours after I finished the second coat.
Keto Cinnamon Mug Cake
If youre looking for a mug cake thats more sweet and rich and less tart and tangy, then try this keto cinnamon mug cake instead.
It still has the same 6-minute prep and cook time, but the taste is much warmer and more decadent.
To make it, youll need an egg, coconut oil, monk fruit, almond flour, baking soda, ground cinnamon, and peanut butter.

Easy Yellow Cake Recipe
Buttermilk gives this cake a tangy flavor and a healthy dose of calcium. Preheat oven to 350 degrees. Butter and flour 2 8-inch cake pans. In a large bowl, whisk together cake flour, granulated sugar substitute, baking powder and baking soda. Add unsalted butter, and, using an electric mixer on low speed, beat together to a crumb-like consistency. Add 1/4 cup buttermilk, and beat well to combine. In a small bowl, combine remaining 1 cup buttermilk, eggs and vanilla extract. Add to flour mixture in two batches, beating well each time until smooth and well-blended. Most of these ingredients are sources of refined carbohydrates that, in large quantities, can send blood sugar levels skyrocketing. When preparing a diabetes-friendly cake, you will focus on tweaking those very ingredients.
Flour makes up the largest component of ordinary cakes, so opting for a recipe that uses less flour or a flour that contains fewer carbs can go a long way.
The second biggest ingredient in cake is typically sugar. Instead of granulated sugar, you can use pureed fruit or even a low-carb sweetener such as erythritol to help reduce the total carb content of your cake even further.
Frosting Tips And Tricks To Get It Perfect The First Time
Also make sure to grab whipping cream, not coffee cream.
I like to use a 36% fat whipping cream for this recipe, but if you cannot get your hands on 36% whipping cream, any cream that you can whip will be perfectly fine.
Keep all the ingredients for your icing cold cold cold, you want your cream cheese to come out of a cold fridge and go directly into the bowl. Cube your cream cheese first to make it easier on your mixer.
The frosting gets a bit stiff in the fridge but has a very similar mouthfeel to buttercream without an overly sweet bite.
I only add 1/2 cup of sweetener which makes for a slightly sweet frosting, if you want it punchier and super sweeter, add more sweetener!
Be careful to not overbeat your mixture. Overbeating will cause everything to liquify.

What Is The Best Chocolate For Diabetics
Dark chocolate receives the highest rating Because of its nutritional characteristics. Dark chocolate should contain at least 15% chocolate liquor, according to the FDA. Top-grade dark chocolate is vegan-friendly because it does not contain dairy or milk ingredients.
It is an eggless cake recipe that does not even contain milk or milk products.
- 3 Cups Almond/ Badam Milk
- 3/4th Cup Oil
- Few Drops Stevia as Per Taste
- 2 Cups Emmer Wheat Flour/ Khapli Aata
- 1 Tbsp Apple Cider Vinegar
- 1 tsp Baking Powder
- Soak Dates in 2 cups of almond milk for 4 hours and make a paste in a blender.
- Grease and line an 8×8 inch cake tin and keep it ready.
- Preheat the oven to 180 degrees Celsius.
- Add the remaining ingredients one by one in the given sequence and blend to make the batter- 1 cup almond milk, then oil, dates paste, vinegar, baking powder, soda, cocoa, and emmer/ khapali flour.
- Blend quickly until just mixed, then pour the batter into the greased and lined cake tin.
- Bake for 25 minutes at 200 degrees Celsius.
- Insert a skewer into the cake to check if done.
- Remove from the oven when done, release the edges with a knife, and tip it over on a plate to cool.
- Once cooled, cut into 1/2 inch thin slices of 3-inch width and store in a container in the fridge

How To Assemble Your Keto Vanilla Cake
First, make sure your low-carb cake layers are cool at room temperature to prevent the frosting from melting. Then, I recommend using a turning table and icing spatula.
Add a tablespoon of frosting to the center of the turning table and place the first cake layer on it. This frosting is not cream cheese frosting and so will act like glue and stick the cake to the table.
Next, add 1 cup of frosting in the middle of the cake. Spread the frosting with an icing spatula turning the table at the same time to spread evenly.
The frosting will fall on the sides, and that is ok. Finally, add the second cake layer and repeat this process until you have covered all the top of the cake. Use more frosting to cover the edges.
