Heres What Youll Need To Bake This Peanut Butter Cookie Recipe:

peanut butter, obviously. I prefer a creamy peanut butter like smooth Jif of Skippy though you can absolutely use natural peanut butter if you prefer. A Jif or Skippy peanut butter will keep the cookies moist and crisp while a natural peanut butter make make for a more dry cookie.

a teaspoon of baking soda

granulated sugar and brown sugar.

Optional: a pinch of salt, a splash of vanilla extract, or chocolate candy like chopped peanut butter cups or chocolate chunks.

Thats it! No need for all-purpose flour, or unsalted butter. These cookies break the rules.

Grab a bowl and well quick assemble the cookie dough. No stand mixer required. I used electric hand beaters for extra ease but a bowl and wooden spoon work just as well.

In a large bowl beat together the peanut butter and two sugars.

Whip in a room temperature egg and baking soda until smooth and well incorporated.

Its natural for the dough to be a little crumbly, just not dry. Itll be easy to press and shape the dough into small walnut-sized balls.

Line a rimmed baking sheets with parchment paper or, in a pinch, lightly grease the pan with butter just to ensure the cookies dont stick

For the classic peanut butter cookie look, press on the center of each cookie with the tines of a fork. Criss-cross.

How To Make 3 Ingredient Peanut Butter Cookies

  • Preheat the oven and line a large baking sheet with parchment paper or a Silpat baking mat.
  • In a large bowl, mix peanut butter, sugar, and egg together until creamy and smooth. You can use a stand mixer, hand mixer, or mix by hand.
  • Scoop the cookie dough into balls, about 1 tablespoon per cookie, and place on prepared baking sheet. Flatten each ball with the back of a fork, making a criss-cross pattern. The cookies dont spread in the oven, so you can put them close together on the baking sheet.
  • Bake for 8 to 10 minutes or until edges are slightly golden. Dont over bake. If its your first time making the recipe, check the cookies early to be safe. The cookies should be slightly golden around the edges, but still soft in the center. They will set up as they cool.
  • Remove from the oven and let the cookies cool on the baking sheet for 3 minutes. Transfer to a cooling rack to cool completely.

Ingredients And Quantities Really Matter

The wet ingredient to dry ingredient ratio is almost 3:1, which most definitely plays a role in a soft, melt-in-your-mouth cookie. The wet ingredients for this recipe are as follows: Melted butter, brown sugar, granulated sugar, creamy, peanut butter, egg, and vanilla extract. The molasses that the brown sugar contains, in combination with the quantity of peanut butter in the recipe plays a roll in both the thickness and the chewiness of the cookie.

Who Invented The Peanut Butter Cookie

The peanut butter cookie recipe that most resembles modern peanut butter cookies, and introduced the now familiar cross-hatch pattern, first appeared in Ruth Wakefield’s Toll House Tried and True Recipes in 1936. Over the years, similar recipes followed, including Betty Crocker’s peanut butter cookie recipe.

Our recipe most closely follows Betty Crocker’s proportions, but as in Ruth Wakefield’s, we are using all butter instead of a combination of butter and shortening.

These peanut butter cookies are super easy to make, with no fancy ingredients. What’s in peanut butter cookies? Just peanut butter, flour, butter, sugar, egg, salt, baking soda, and baking powder.

Lets Shape These Peanut Butter Filled Brownie Cookies

Using a Tablespoon measuring spoon, scoop out a heaping mound of the brownie cookie dough. It will be pretty hard after chilling, but will soften up in your hands as you roll it. Now the exact marbling/shaping process:

  • Roll the dough in your hands to make a ball and then press your thumb into the ball as if you were making a thumbprint cookie.
  • Press a peanut butter ball into the indentation and break off a small piece of the brownie dough.
  • Smush the piece of brownie cookie dough youd taken away back on top of the peanut butter filling.
  • Mold it all together as you reroll it into a ball. It will look a little marbled.
  • YOUR HANDS WILL GET MESSY in this process, fair warning.

Every cookie will look different, which only adds to their alluring charm.

How Do I Make Peanut Butter Cookies

    Easy Peanut Butter Cookie Recipe

Peanut butter cookies couldnt be easier, I promise you, just dont forget to preheat your oven first. Cream the butter and peanut butter together, then fold in the white and brown sugars along with the vanilla extract. The egg goes in and your cookie dough should be light and creamy.

Fold in the flour, baking powder and salt. No need to mix the dry ingredients in a separate bowl, just toss and fold. Add half of your chocolate chips. We love semi-sweet, but you can use dark, milky, or white if you prefer.

The Biggest Disappointment: Bon Apptits Best Peanut Butter Cookies

These cookies were by far the most difficult to make, and honestly, I wasnt impressed. The recipe has you brown butter, whip eggs, and toast nuts, which I was hopeful would make for a superior cookie, but none of the upgrades assisted in better flavor or texture. All in all, they were a bit dry, crumbly, and didnt taste any better than a standard PB cookie. Were they edible? Absolutely. Were they worth the two hours it took to make them? Definitely not. I appreciated that this recipe tried to do something different, but it just didnt pay off for me.

Why Are My Peanut Butter Cookies Dry And Crumbly

We think youll find that with our recipe, the cookies are soft . But if you have a recipe that you are struggling with, use these tips.

    • Make sure you use real butter. Margarine can make cookies crispier.
    • Test your oven temperature to make sure it is heating correctly.
    • Measure your flour correctly. Spoon the flour into the measuring cup, then level it with a knife. Dont pack the flour in.
    • Use silicone baking mats to promote even baking. You can find these in just about any store.
    • Dont over bake the cookies. We take the cookies out before they start getting brown at all. This helps them stay soft.

Okay, and one more thing- if you dont need these cookies right now but know that youll want them in the near future, they are very freezable!

    Why Are My Cookies Crumbling

This is a great question, and one I get asked a lot. The main reason you have a crumbly cookie is because youve added too much flour. You might think the dough looks too wet when you mix it, so you think, Ill just add a little flour and see. But this just results in a crumbly cookie.

Other reasons you might have a crumbly cookie is that youve used margarine or another butter substitute or youve cooked them too long. Sorry, but you just cant get these soft, delicious cookies without using real, unsalted butter. And you have to make sure to not overcook them and that includes on the sheet afterwards. Watch your time and remove them to cool fully on a cooling rack a minute or two after they come out of the oven. Dont wait I promise this is an important step.

The Best Peanut Butter Cookies Recipe Ever In The World

    Best Peanut Butter Cookies

Ive waited ten years to share my classic chewy peanut butter cookie recipe with you. Not because its complicated or full of hard-to-find ingredients. Ive just been tweaking it for years, and finally, I feel like its exactly right.

We all have different preferences, right?

In order for you to agree with me that these are the Best Peanut Butter Cookies of all time, we first have to agree on two other statements

    A) Sometimes soft fluffy peanut butter cookies do not have a strong enough peanut butter flavor. They lack peanuttiness, which is the whole point of peanut butter cookies. *wink*

    B) When you add enough peanut butter to give said cookies the peanutty essence we crave, the texture can tend to become dense or clay-like.

Tips For Making Soft Peanut Butter Cookies

This dough is super easy to whip up. All you need is a few basic ingredients, a mixer, and 10 minutes. Here are a few tips:

    • Use room temperature butter. But dont melt it. You want the butter just to give slightly when you touch it. If the butter is melted, then cookies will have a different texture.
    • Make sure the butter and sugar are creamed really well. If youve ever had cookies that havent turned out the best or had little spots of melted sugar, it may be because the butter and sugar werent creamed well enough.
    • Because mixing is so important, we find it easiest to use a stand mixer.
    • Dont over bake the cookies. You dont want them brown at all. This helps them stay soft.
    • Sprinkle the tops with a little bit of granulated sugar before they go through the oven. This gives a special effect that you wont want to skip out on. A little extra sweetness never hurts.

How To Get The Perfect Fork Mark Pattern

    Easy Peanut Butter Cookie Recipe!

To get the perfect fork mark/ crisscross pattern try using skewers instead of a fork. I used my trusty wooden skewers, snapped a few in half, lined four up and pressed down. It took more time but I got the picture-perfect cookies of my dreams. A fork works well too of course, try to use one with long tines. For a clean release pull the fork away instead of lifting up, or it youre using the skewers try twisting them.

Peanut Butter: I like using a creamy peanut butter for this recipe but you can definitely use chunky peanut butter instead. If youre using a natural peanut butter make sure to give it a VERY good mix before adding.

Brown Sugar: You can use either light or dark brown sugar in this peanut butter cookie recipe. Dark brown will impart a slightly more caramel-like flavor.
