    I think we should call this month Zucchini Month. Its my third recipe this month with zucchini as the main ingredient and this one is quite an impressive one. Stuffed zucchini boats with ground beef and a creamy bechamel sauce on top, who can resist?! This recipe makes enough to serve 4 people and its kids friendly.

    Making The Bolognese Sauce

    For this Italian stuffed zucchini, I opted for an easy bolognese sauce that goes right in the zucchini boats and then all you have to do is add cheese on top before you bake them!

    Use extra-lean ground beef and saute that with minced up carrots, celery, onions and garlic. Add some jarred spaghetti sauce of your choice and some Italian seasoning, and that’s all there is to it. Super simple, yet you’re adding some more veggies in there for extra nutrients.

    This recipe is perfect for your weekly meal prep or just as a weeknight dinner! It’s low carb so it’s a great alternative to heavier pasta dishes but you still get all the same flavours with the easy sauce.

    One thing I like to do to make this stuffed zucchini a little bit easier is to prep the bolognese sauce ahead of time. This allows me to get the zucchini into the oven earlier and get dinner on the table faster!

    You can make the bolognese sauce a few days before or up to a couple months in advance in store in glass bowls in the freezer. When you’re ready to make the stuffed zucchini, let the sauce thaw in the fridge overnight then add it to the zucchini. Top with cheese, bake and that’s it!

    Brown Rice Stuffed Zucchini

    I couldn’t find a recipe that was exactly what I was looking for, so I came up with this using ingredients on hand. Any leftover stuffing can be baked in a small casserole along side the stuffed zucchinis. Even my picky children liked the results. Next time I’ll use more zucchinis.

    2 cups cooked brown rice
    2 teaspoons olive oil
    1/2 small red bell pepper, chopped
    1 garlic clove, minced
    1 medium tomatoes, peeled and seeded, chopped
    1/4 cup pecans, coarsely chopped
    1/2 teaspoon dried thyme
    salt & freshly ground black pepper, to taste
    1/2 cup mozzarella cheese, shredded
    2 tablespoons parmesan cheese, shredded

    Steps:

    • Trim zucchinis and cut in half lengthwise. Using a spoon, carefully scoop out the zucchini pulp leaving the shells about 1/4 inch thick and set aside.
    • Roughly chop zucchini pulp.
    • Saute onions, pepper, and garlic in the olive oil until the onions are tender and translucent, about 5 minutes.
    • Add zucchini pulp and pecans and continue to saute about 3 minutes.
    • Add tomato, rice, thyme, salt and pepper, and stir gently to combine all the ingredients.
    • Stuff reserved zucchini halves with rice mixture and top with the mozzarella and parmesan cheeses.
    • Place zucchinis in a small, shallow casserole dish and cover with aluminum foil.
    • Bake at 350 degrees for 30 minutes.
    • Remove foil, and return to oven for about 10 minutes, or until tops are lightly browned and bubbly.

    How To Make Stuffed Zucchini Stew

    First of all, buy some good-quality zucchinis. For this dish, go for medium-sized crisp zucchinis, the light green variety. Their texture is much more tender and less dense than dark green zucchinis.

    Then remove their tops and bottoms, and cut them in half to about 2,5-inch / 7 cm pieces. And using an apple corer, you make a hole in the center, all the way through to the other side, and remove the inside flesh of the zucchinis, leaving a 0.4-inch / 1 cm thick outer layer.

    And once you prepared the zucchinis, you prepare the ground beef filling which is made with a bit of olive oil, medium-grain rice, spring + red onion, and fresh herbs. Then stuff the zucchinis, place in a cooking pot close to each other, cover with water and simmer until they get nice and soft.

    As for the sauce, you first make a roux by whisking together olive oil , along with flour in a saucepan. Heat this mixture over high heat and cook for 2 minutes whisking constantly, it will start to look sandy. Then start to pour the water from the pot you cooked the zucchinis in, into the roux. Then pour this mixture, slowly into the beaten eggs, while you whisk the eggs constantly. Add the lemon juice as well, and pour the sauce all over the zucchinis.

    Luckily, it is really easy to replace the beef in this recipe with chicken. You will add all the same ingredients for your filling, but replace the ground beef with chicken. To get added flavor in the chicken start by cooking the onion, then add the garlic, then add the chicken.

    Make sure the chicken is cooked all the way through and is no longer pink in the middle or reaches an internal temp of 165 degrees F, by either baking or pan frying it. Once the chicken is cooked thoroughly you can shred it and add the remaining ingredients.

    Next, spoon the mixture into your zucchini boats like normal and bake.

    Zucchini boats are such a great way to add a little bit of healthiness to your meals, without having to be over the top. I love with this recipe you still get the amazing flavors from the ground beef and cheese, and the freshness of the zucchini.

    A mixture of skillet-cooked ground beef, zucchini, rice and herbs is stuffed into fresh red peppers and baked until tender and delicious.

    1 lb. extra-lean ground beef
    1 onion, chopped
    1 can tomato sauce, divided
    1 cup shredded zucchini
    1 cup cooked long-grain brown rice
    1 tsp. dried oregano leaves
    1/2 tsp. dried basil leaves
    4 large red peppers
    1/2 cup KRAFT Finely Shredded Italian* Five Cheese Blend

    Steps:

    • Heat oven to 400°F.
    • Brown meat with onions in large skillet on medium heat drain. Stir in 1/2 cup tomato sauce, zucchini, rice, oregano and basil.
    • Cut tops off peppers remove and discard seeds. Pour remaining tomato sauce and water into 13×9-inch baking dish stir. Place peppers in baking dish fill with meat mixture. Cover.
    • Bake 35 to 40 min. or until peppers are tender. Top with cheese bake, uncovered, 5 to 7 min. or until melted. Serve peppers topped with sauce from bottom of baking dish.
