    This iced tea is super easy to whip up as a refreshing beverage for a summer day. You do need to take into account some time to let the ginger infuse and the boiling water to cool down. We left ours for about an hour before completing the rest of the steps and serving.

Although it is normally under unpleasant circumstances that I consume such a beverage, I have always appreciated the flavour combination. There is just something about the freshness of lemon, the zing of ginger and the sweetness of honey that meld so well together.     It’s stressful managing fear and all the news about the COVID-19 pandemic racing around the world. So it’s more important than ever now to take the time to relax. Take a breath.     I made this concoction of fresh lemon, ginger, and raw local honey to prepare for when the germs start spreading. Now, I keep it in the fridge. At the first sign of a cold or flu, I just scoop out a few tablespoons, add hot water, and enjoy this delicious home remedy for cough.

    How To Make Shgayu

    Because youre not going to eat the ginger itself, theres no need to peel it. That being said, be sure to wash it very well as sometimes there can be dirt lodged between the nodes.

    To prepare the ginger for the tea, I like to grate it as it releases the most flavor in the shortest amount of time. If you dont have a grater, you can chop it finely, but if you go this route, Id recommend adding a bit extra.

    Once youve prepared the ginger, all you need to do is steep it in boiling water. My teapot has a built-in filter, so I usually just put it in the teapot and then let it steep for 2 minutes. If you grate the ginger, it doesnt take that long to get the flavor out of it, but because I add lemon zest, I like to let it steep for a bit longer.

    Once its ready, you can pour it into whatever container youre serving the Shgayu in, and then each person can add lemon juice and honey to taste. My personal favorite ratio is 1/4 lemon and 1 tablespoon of honey for 3/4 cup of ginger tea. This makes it fairly sweet and tart though, so Id recommend adding a bit at a time the first time you make this to figure out the right balance for you.

    Ingredient Notes For Iced Lemon Ginger Honey Tea

    • Ginger- The key to this recipe is using fresh ginger as this is really what gives the iced tea its flavour. We wouldnt recommend subbing for anything else.
    • Citrus- You can either use both lemons and limes for this recipe if you want the full citrus hit, or you can choose one or the other. Again, try use fresh lemon or lime juice rather than juice from concentrate: the flavour will be worlds better.
    • Honey- We used honey to sweeten our iced tea as the flavour melds well with the citrus and ginger. However, you can use an alternative sweetener or leave the sweetener out altogether, depending on your taste.

    How To Make It

  • Boil the water: Add water to a small pot, and bring to a boil.
  • Infuse with ginger: Add the grated ginger and boil for 30 seconds to infuse it’s flavor into the water.
  • Steep: Now add the black tea leaves, lower the heat and cover the pot with lid. Let steep for 1-2 minutes.
  • Finishing touches: Add the lemon juice and stir.
  • Sweeten: Finally add the honey, and mix well.
  • Serve: Using a strainer, pour the tea into serving cups and enjoy!
  • KEY TIP: Use a spoon to easily peel the ginger. Then using a hand grater, finely grate the ginger.

    How To Make Lemon Ginger Honey:

    HONEY CITRUS PRESERVE | Honey Lemon Ginger Tea |Grapefruit Mint Honey Tea
  • Prepare your glass jar by washing it, and then rinsing it with hot water to kill any bacteria. This is important to help ensure the honey does not spoil.

  • Wash the lemons and slice them into lemon rounds about 1/4 inches thick.

  • Lay the lemon slices out on a paper towel and using a chopstick, or clean hands, carefully remove the seeds in the lemon rounds.

  • Peel the ginger using a spoon, or peeler. Try your best to keep as much of the root intact as possible. Slice peeled ginger about 1/4 inches thick.

  • Time to put it all together! Start layering your jar with honey, lemon round, a few pieces of ginger, and then repeat until your jar is full.

  • Put in the fridge overnight to allow all the ingredients to combine and infuse. Store in the fridge for up to one month.

  • You may notice the lemon juice and honey separate in the jar. Thats normal! The juice will float to the top while the honey settles on the bottom. You can stir the honey to recombine. I dont mind the separation so I use a spoon to reach the bottom of the jar for the honey.
