Can You Make Banana Bread Without Sugar

How to make Keto Banana Bread recipe | Low Carb No sugar Gluten Free 4K

YES. You can. I never would have thought that sugarless banana bread would actually be tasty. BUT, it turns out that I actually prefer it since the banana flavor is a little less intense and the sweetness isnt overpowering. Its just a nice, slightly sweet breakfast bread that tastes amazing warmed up with almond butter on top! *Swoon* You could even get crazy and totally ELIMINATE the banana and make low carb keto banana bread!

To make up for the lack of sugar, were using EXTRA bananas. Make sure they are REALLY ripe before you make this banana bread, so it has enough sweetness.

Is Homemade Banana Bread Good For You

It really will depend on how you make it. Growing up, my mom made a recipe for me that called for 5 tablespoons of butter and 1/2 cup of pure honey. Those are loaded with fat and sugar.

Most recipes I see have 300+ calories and 50+ grams of carbs per slice. If you want to eat a slice of bread for breakfast or as a treat a few days a week, those macros are not very friendly.

I came up with this recipe to round out the macros and nutrition facts profile a bit.

Is Oat Flour Really Gluten Free

If you make oat flour out of certified gluten-free oats , then yesoat flour is gluten free. Its important that your oats are certified gluten free because oats can be cross-contaminated by grains growing in nearby fields, or contaminated in the factories that process and package them. Certified gluten-free oats are tested and confirmed to be gluten free.

A small percentage of people with celiac disease or gluten intolerance are also sensitive to the protein found in oats, called avenin. Therefore, oat flour is not suitable for everyone following a gluten-free diet. As always, listen to your body and consult with your healthcare providers.

Healthy Banana Bread Without Sugar Recipe

No

Youd think that people whod tried four unsuccessful banana bread recipes in two days wouldnt have been all that interested in eating more, but youd be wrong.

As soon as this loaf was cool enough to eat, we could see and smell that Id succeeded in my task. After the first nibble, my husband and I broke into broad grins which we quickly shoved full of more banana bread.

Added Baking Powder And Decreased The Baking Soda

While my banana bread recipe rises beautifully with baking soda, this nut flour-based version needs help from both baking soda and baking powder. Baking powder is double-acting, which means that it starts producing bubbles when mixed with liquid, and produces more bubbles when its heated.

Since we added baking powder , well decrease the amount of baking soda. Another reason is that baking soda is much stronger than baking powder, and we simply need less when theyre used together.

In summary: The answer to the question, Can I substitute almond flour? is not so simple! The good news is that I use a similar formula for many of my quick bread recipes and muffins, so you can likely use this recipe as a template to adjust the others.

Recipe Notes And Top Tips

  • Measure the flour correctly: Use the spoon and level method to ensure you dont add too much flour and end up with a dense bake. How? Rather than scooping it into the flour bag, use a spoon to transfer it to the cup. Then use the back of a knife to level off the top. Even more accurately, I always recommend using the weight amounts and scales for any baked recipe.
  • Allow it to rest: Its important not to remove this healthy banana bread from the pan too soon, as it will be delicate straight from the oven. Instead, allow it to cool for at least 30 minutes before removing it from the pan, then allow it to cool completely on a wire rack.
  • To make oat flour: Add the rolled oats to a high-speed blender or coffee/spice grinder and process until floury. You can do the same to make the ground nuts/seeds.
  • For sweeter sugar-free bread: If you have a sweet tooth, add a small amount of sugar-free sweetener to the recipe. Using Stevia drops is the best way to avoid changing the ratio of wet to dry ingredients. Otherwise, I recommend a granulated option .

Tips For The Best Vegan Banana Bread

Its all about the bananas! Banana bread is easy to veganize by adding extra banana, which acts as a binder, replacing the need for eggs or other egg replacers. And as an added benefit, it also helps to lessen the amount of sugar needed. The trick is to use very ripe, freckled bananas, because the riper your bananas are, the less sugar youll need! This recipe only calls for 1/3 cup of sugar, but of course you can adjust, up or down, to suit your tastes.

Fats or no fats: In place of using butter or vegetable shortening, I call for oil. But youll find this banana bread recipe to have the option of using vegan butter or shortening if you prefer. Ive also played around with using half oil and half unsweetened almond milk with excellent results. And if you want to skip the fats all together, for an ultra-healthy vegan banana bread, try using unsweetened applesauce its terrific!

Spruce up your banana bread with additional add-ins and toppings! Add up to 1 teaspoon of cinnamon, fold in chocolate chips, walnuts or pecans to the batter. Or once the batter is in the loaf pan, add a sprinkle of walnuts, pecans, sesame seeds, rolled oats, or sunflower seeds over top before baking, they will add texture add protein.

Methods: Since first posting this recipe, I have since adapted it to be mixed in one bowl making for an easy banana bread! But youll also find the original method as well.

Without further ado, lets put it all together and bake

How To Quickly Ripen Bananas For Banana Bread

    • Ripening bananas in the oven Place the unpeeled bananas spaced apart on a baking sheet lined with foil or parchment paper and bake at 350 degrees F for 15 20 minutes until black or dark brown on the outside and soft to the touch. Allow them to cool before using.
    • Ripening bananas in the microwave Using a fork, poke straight through the banana peel multiple times on all sides to allow the heat to easily penetrate then microwave for 30 seconds at a time, checking each time for doneness. This can take up to a couple of minutes depending on how green the bananas were to begin with. The bananas are done when they have the soft texture of a ripe banana. Cool before using.
    • Ripening bananas in a paper bag Place the bananas in a loosely closed paper bag to help trap the ethylene gas to help speed up the process. Check the bag once a day and remove the bananas when they have reached your desired ripeness.

These methods arenât just useful for this recipe, theyre also useful for all the other ripe banana recipes that youll try.

Substituted The Flour By Measuring Equal Weight Not By Volume

Almond flour is actually lighter than regular flour when youre measuring them in the same fashion . One cup of regular flour weighs about 125 grams, whereas one cup of almond flour weighs about 92 grams. Ive found that flour substitutions work out better when you keep the weight constant. For example, 1 3/4 cups regular flour is the equivalent of 2 1/2 cups almond flour.

This is also true for oat flour. Interestingly, with almond flour, Ive found that another way to keep the weight constant is to simply pack the almond flour into the measuring cups. When fully packed, you can use the original measurement of 1 3/4 cups.

    Ingredient Substitutions And Add

The best part about this recipe, other than the fact that its sweetened with fruits, is that its highly versatile! Here are several variations that have been tried with success:

    • All-purpose white flour
    • With or without walnuts
    • With or without chocolate chips

Each variation had slightly different results, but all were perfectly delicious! The only noticeable difference was that the egg-free version, the buckwheat version and the all-purpose gluten-free version all rose a little less. Really, its not a big deal and it tastes just as good to me and my recipe testers . My go-to version nowadays is the vegan option with whole wheat flour and olive oil, but it all depends on what I have on hand.

If youre wondering: Yes, I tried all of these variations and yes, I made this recipe more times than I can count.

    No Sugar Added Banana Bread

Banana bread. Im not always the fan of bananas in the raw, but if you serve them to me baked in a sugary loaf of goodness Im all over em. Walnuts, topped with raw sugar, slathered with butter kind of love. Yall know what I mean? Its a good, GOOD thing.

But in an attempt to keep our family eating healthier Ive stopped buying sugar. I dont think sugar is the devil and I still enjoy eating it, but I figure keeping it out of our cupboards, especially in a season laden with fresh sun-sweetened fruit, cant be a bad thing.

So then what happens when I, yet again, buy like 80 overripe bananas at the store? Banana bread is a great stand-by, but my favorite recipe calls for lots of butter and sugar and a walnut glaze. Its SO GOOD, and I love it but its not worth waking a toddler up mid-nap and heading to the store to buy a pound of the stuff.

Come to think of it I dont know if anything is that good. Those naps, yall, momma needs em too.

This banana bread is the result of too many bananas hanging around the house and not enough sugar to make the traditional bread, so I went the way of cutting sugar out altogether and counted on roasting the bananas to really develop the extra sweetness. The flavor is just sweet enough with lots of banana goodness, and since the ingredient list is fairly short I think most people would feel great serving this to their families. I know I feel great about giving my dude banana bread that is sweet and fabulous without the extra sugar!
