- 1Heat oil in large nonstick skillet over medium heat and cook onion, stirring occasionally, 4 minutes or until almost tender. You can roast or bake anywhere between 325 and 450 degrees F. When roasting a whole chicken, a nice rule of them is to start at 400 to 425 degrees F and then turn the oven down to 350 after 15 minutes and cook until the internal temp of the chicken is 165 175 degrees F on an instant read thermometer.

Substitutions In Cheesy Chicken & Rice Casserole
- While we love the Knorr brand, there are other brands of pre-made rice mixes that you could use for this recipe and to change up the flavors!
- If you don’t have one of the cream soups – use all of one flavor. Such as, use all cream of chicken and no cream of mushroom or vice-versa.
- We sometimes use boneless, skinless chicken thighs instead of breasts. They work great and my family loves those as well.
- The seasonings are very versatile. I keep things simple with Seasoned Salt but you can add any seasoning you like or a mix of them. Some of our favorites are basil, garlic and onion powders, cumin, and/or paprika.
- Want veggies? You could easily add in 2 cups of chopped fresh broccoli!

Casseroles are a great solution for dinner. Most casseroles are simple to make and use ingredients you have on hand. Once the casserole is in the oven, you have time to make a side dish and set the table before its time to eat.
This Chicken and Rice Casserole has been in our family for years. Whenever I serve it to my family, I am reminded of my Grandma Edwards. She made this dish all the time. It was always a favorite of ours when we went to her home for meals. However, she often served it with cut up chicken pieces as opposed to boneless, skinless chicken breasts. Isnt it interesting that food can take you back to a time and place? One bite of this casserole and I am a 7-year old girl sitting with my parents and siblings around my Grandmas kitchen table eating delicious food, enjoying the conversation, and wondering what delightful dessert was awaiting us. I love food memories!
Not only does this chicken and rice casserole taste good, the aroma that fills the house while it is cooking will have everyone asking when dinner will be ready. This is definitely a dish I would label as comfort food. The rice mixture is warm and creamy and the chicken always turns out perfectly moist, never dry.

How To Make Skillet Chicken Broccoli Casserole
This recipe has just a few simple steps. It is so easy, one of my kids could make it. Plus, using the Knorr® Side Dishes makes this dinner so fast!
Liquid Ratios And Cooking Time
I like to keep my chicken broth to tomato sauce ratio at about 50/50, leaning towards slightly more chicken broth/slightly less tomato sauce depending on my measurements.
So, for example, if my bag of rice called for 1 cup of rice to 2 cups of water, I would use 1 cup of rice, 1 cup of chicken broth, and 1 cup of tomato sauce.
The brand of rice that I have in my pantry right now calls for 1 cup of rice to 1 ¾ cups of water. So to make todays Spanish Rice, I used 1 cup of rice, 1 cup of water, and ¾ cup of tomato sauce. Does that make sense?
The same goes for cooking time. I initially toast my rice in oil for a few minutes, but then I just follow the directions on the bag of rice, which today dictated simmering for 20 minutes or so.
The final result? Perfectly cooked rice every time!
