Its the beginning of spring here in Vermont, the days are semi-warm, but the nights are chilly, and even though spring is in sight, Im still craving comfort food. And what better comfort food than this warm, gooey, Creamy Vermont Mac and Cheese!

When I think of homemade mac and cheese, Vermont made Cabot cheddar is always the first to come to mind. And of course, it should, it is an award-winning cheese and is well known as the Worlds Best Cheddar!Cabot cheddar cheese has been a staple in my mac and cheese since I started making it, learning from my mom, so when it comes to cheese in my Creamy Vermont Mac and Cheese, I dont skimp on the cheese.

Ingredients You Need For This Smoked Mac And Cheese

Chances are you already have most of the ingredients you need to whip up this Smoked Mac & Cheese!

  • Any shape of pasta noodles we love it with shells, but you could also use penne, rotini, elbow noodles whatever you like or have on hand!
  • Shredded cheese I used Cabot Cheeses Mac & Cheese shreds in this recipe, but any of their shredded cheeses would be amazing!
  • LOTS of pepper, and some salt & spices

As far as equipment, it is ideal to have a big cast-iron skillet for this recipe! The one I used is a 12. If you dont have one and you are using a smoker/grill, you could also use a large, disposable foil pan, or a 9×13 glass pan if cooking in the oven.

Creamy Instant Pot Mac and Cheese Recipe

This homemade baked mac and cheese recipe uses three different types of cheese. I use a Cabot extra sharp cheddar for half the cheese, which gives the sauce a little bite to it. Feel free to use extra sharp or seriously sharp cheese in this recipe. Another cheese in this recipe, creamy Havarti cheese, is a softer cheese that is perfect for melting, giving the sauce a creamy texture. The smoke gruyere cheese is also a smooth melting cheese but gives it a hint of smoked flavor, changing up the typical mac and cheese recipe.

This white cheddar mac and cheese recipe is ideal when youre craving this comfort dish, but want a change from the traditional yellow cheese variety. Made with Cabot Alpine Cheddar cheese and topped with a lovely layer of breadcrumbs before baking in the oven, this recipe is deliciously satisfying and easy to make too! To make this white mac and cheese, begin by preheating your oven to 375°F degrees. Cook pasta until al dente, drain, place in a large bowl and set aside.

Melt the Cabot Salted Butter in a heavy-bottomed pot or saucepan over medium heat. Add the minced garlic and cook until the garlic starts to soften and brown a bit. Using a whisk, stir in the flour, a little at a time, until it is well blended. Continue stirring, letting it cook for a minute or two. Slowly add the warm milk and keep whisking for another couple of minutes.

Adjust the heat to low and add the Cabot Alpine Cheddar cheese. Stir with a whisk or spoon until the cheese melts and is blended into the mixture. Add the dried oregano and dried thyme and cook, stirring for about 3 or 4 minutes. When the sauce is done, add about half of it to the pasta and mix well. Then add the remaining sauce and blend.

Former Spoiled Grandkid In Me

I found this recipe when trying to determine ingredient portions while duplicating my grandmothers recipe. I knew she only used Cabot Seriously Sharp and made a roux. This recipe with a couple tweaks below is exactly the Mac & cheese I grew up with in 70s/80s. I sort of thought of it as merely standard & made it for my company pot luck Christmas lunch. I was blown away with how folks went crazy for it. All kinds of special homemade dishes and everybody was talking about this!? About a dozen people told me they made it for their families after getting the recipe here. My grandmother only used hunter plaid, lined ziti and Ritz crackers instead of bread crumbs. Try this!

Cooking Tips For Creamy Vermont Mac And Cheese

  • DO NOT overcook your pasta. Watch it carefully and only cook until just al dente. The pasta will continue to cook in the oven.
  • Shred your cheese. Store-bought shredded cheese has added ingredients, including cellulose, to help keep it from clumping. According to Taste of Home, freshly shredded cheese will not only result in a creamier texture but will also save you money buy buying block cheese versus pre-packaged shredded cheese.
  • I use this attachment for my Kitchenaid mixer to shred cheeses and other ingredients: Kitchenaid Shredder Attachment.
  • You can use any pasta you like, just cook it according to the directions on the box.
  • This recipe makes a good amount of cheese sauce. I use 12 oz of pasta because I like my mac and cheese to be really saucy. If you have a bigger crowd, use 16 oz of pasta and you should still have enough sauce.
  • Feel free to alter ingredients. Do not like garlic? Omit it. Only have cheddar and Havarti cheese? Add a little more of each to make up for the missing cheese. Use your best judgment when substituting ingredients.

    The Best Easy Macaroni And Cheese

    This easy version of macaroni and cheese is made with lots of extra sharp Vermont cheddar, a pinch of red pepper flakes, and a crispy topping made from Japanese panko breadcrumbs.

    Note: Panko is a crunchy, flaky bread crumb from Japan, available in Asian markets and most grocery stores. If you cant find panko, make your own bread crumbs using day-old French or Italian bread. Place bread in a food processor fitted with a steel blade and pulse three or four times or until bread turns to fine crumbs. Spread on a baking sheet. Bake at 300° 6 to 8 minutes, or until crumbs are dry and crisp. Do not brown.

    Total Time: 25Yield: 4 to 6 servings

    • 7 tablespoons salted butter, divided
    • 3/4 cup panko breadcrumbs
    • 1 8-ounce package ziti, macaroni, or your favorite pasta
    • 4 tablespoons all-purpose flour
    • 1/4 teaspoon kosher or sea salt
    • 1/4 teaspoon freshly ground black pepper
    • Pinch crushed red-pepper flakes
    • 8 ounces extra-sharp Vermont cheddar cheese, shredded
    • 1/3 cup grated Parmesan cheese

    Slow Cooker Macaroni &  Cheese

    Like I mentioned before, you can definitely swap out any pasta noodle/shape that you prefer or have on hand. I think it would also work great with whole grain pasta, if you are able to find whole grain shells !

    I think you could even make it with chickpea pasta or another gluten-free option if you need to make that modification. Also, sub gluten-free breadcrumbs if needed.

    For the cheese, the Cabot Cheese Mac & Cheese shredded cheese flavor was amazing. Other options that I think would work great: Seriously Sharp Rustic Cut Shredded Cheddar Cheese, 5-Cheese Italian Shredded Cheese, or New York Extra Sharp Cheddar Cheese. Truly, you cant go wrong.

    In addition, if you want to up the protein, feel free to add something like grilled chicken. We added shredded rotisserie chicken which was a super easy & delicious addition. It would also be tasty with shrimp, or even salmon!

    Cook up any and all veggies to go with it. I personally love roasted cauliflower or roasted broccoli with mac & cheese, but roasted Brussels sprouts would be another great addition.

    This spicy baked macaroni and cheese recipe uses habanero cheddar to bring some heat to this classic comfort food.

    Im of the opinion that one can never really have too many macaroni and cheese recipes. So heres another one for you and this time were turning up the heat!

    The star of this spicy mac and cheese recipe is Cabot Habanero Cheddar Cheese. Its made from a mix of hananero and jalapeño peppers and is already flavored with various south-of-the-border spices and seasonings. While I love the heat, I mix it with a little bit of Vermont Sharp Cheddar to make it more palatable to the spice averse. I love working with Cabot because it is a co-operative owned by farm families throughout New England and New York with 100% of profits going straight back to the farmers.

    For anyone thats made mac and cheese before, the steps are the same. However, I switched things up a bit by using a cast-iron skillet for this recipe to make the cheese sauce and bake the macaroni and cheese in. By using it to pull double duty, I cut down on the dishes I had to do at the end of the day. One thing Id note with using a skillet or other large baking dish is to stick to the lower end of the baking time range to keep the mac and cheese from drying out.

    Quick Mac And Cheese Recipe

    If you wish to use a breadcrumb topping on your mac and cheese, place croutons in a plastic bag and crush into crumbs with a small cup. Set aside.

    Cook elbow macaroni according to package directions in a large pot of boiling salted water.

    Bring milk to a simmer over medium heat in a medium saucepan, stirring often to avoid scorching the bottom of pan.

    In a small bowl or dish, dissolve the cornstarch in warm water. Once dissolved, stir into milk. Continue stirring until sauce is simmering and slightly thickened. Remove from heat.

    Drain macaroni and return to pot. Then add sauce and stir together. Add grated Cabot Sharp Cheddar, Cabot Extra Sharp Cheddar or Cabot Seriously Sharp Cheddar

    cheese and Dijon mustard and stir again. Briefly return to heat until cheese is melted.

    Serve in bowls. Top with crumbs, if using.
