This easy cheesecake recipe goes together quickly, and cant really be messed up.When making this recipe, I recommend buying a brand name cream cheese, I normally use Philadelphia brand, you could use a store brand, but sometimes I find store brand cream cheese makes a runnier cheesecake.

I make this recipe in my KitchenAid stand mixer. If you dont have a stand mixer, you could make it with a handheld mixer. Once we spent Thanksgiving in a job site trailer in Utah, on my husbands job location, and I made this pie with a fork, it was lumpy but still fantastic.

Set two 8 ounce bricks of cream cheese out on the counter to soften. I recommend taking them out of the cardboard container. You want the cream cheese to be at room temp, this will make a smoother cheesecake filling. If you are in a hurry and dont care about lumpy cheesecake filling, Ive been there and done that, you can use cream cheese straight out the frig.

1. Pulverize the graham crackers until fine.

3. Pour into a 9-inch springform pan. Press with a water glass and up the sides with your fingers. Make sure its packed in very tightly. Freeze for about 10 minutes while you prepare the filling.

4. Beat the heavy cream on medium-high speed using a hand mixer until stiff peaks form.

5. In another bowl, add softened cream cheese and sugar. Beat on medium speed until completely combined and smooth.

6. Add sour cream and vanilla extract, and mix until smooth.

7. Add the whipped cream into the cheesecake filling. Gently mix until combined.

8.Take the graham cracker crust from the freezer and pour the cheesecake filling on top of the crust. Smooth the top with an offset spatula.

9. Cover with plastic wrap and let is set in the refrigerator for 6 hours or overnight.

Cheesecake is definitely my favorite dessert! And a long time ago I taught myself how to make an easy cheesecake without baking, gelatine, eggs or heavy cream. I evolved some more and found out I can make a healthier cheesecake crust without graham crackers, but with oats and cinnamon. And today, I wanted to share this delicious no bake cheesecake recipe that comes with a simple oat crust. I turned this recipe into mini cheesecakes, but you can definitely use this recipe and a smaller springform pan to make one bigger and healthier cheesecake. You only need 6 ingredients. Lets start with the no bake cheesecake filling.

How Do You Make A No Bake Cheesecake

  • MAKE THE CRUST: In a medium bowl combine the crumbs with the sugar, then stir in the melted butter. Press the crust mixture firmly into the bottom of a 9 inch greased pie plate or springform pan, using a flat measuring cup or bottom of a glass. This will make sure the crust holds together. Chill in the freezer while you make the filling
  • WHIP THE CREAM: Beat the cold heavy whipping with the vanilla until stiff peaks. This will ensure the right texture for the filling. Youll know the peaks are stiff when you pull the beater or beaters out of the whipped cream and the peak holds its shape with a slight curl at the tip. Dont go much past this or it will quickly become over-whipped and no longer as smooth.
  • BEAT THE CREAM CHEESE: In a separate bowl beat the softened room temperature cream cheese until smooth. Then beat in the sugar union incorporated, then the sour cream.
  • FOLD THE MIXTURES TOGETHER: Fold the whipped cream into the cream cheese with a spatula until just incorporated. DO NOT use your mixer for this or the cream will deflate.

    • Graham crackers. For the crust, you can buy graham cracker crumbs from the grocery store , or make your own by pulsing 10 full sheets of graham crackers in your blender or food processor.
    • Cream cheese. I do not take my cream cheese out of the fridge prior to beating it. It should be soft, but very cold.
    • Refrigeration time. For best results, be sure to refrigerate the cheesecake for at least 6 hours, but overnight is even better. The longer you refrigerate no-bake cheesecake, the sturdier it will be and the more lovely the slices. Do not freeze the cheesecake to set it. It will be difficult to slice the filling and the texture wont be as smooth.
    • Slicing. Use a clean, sharp knife to cut into slices for serving. For extra neat slices, wipe your knife clean with a paper towel between each cut.
