While Im a fan of pink gins, purple gins, lemon gin and many other types of flavoured and tinted gins, the best gin to use for this Spanish gin and tonic recipe is a clear, dry gin. A dry gin is one with no artificial flavours or sweeteners.

Old Duff & Rockys Liqueur Gin And Tonic

Brendan Bartley, head bartender and beverage director of the prohibition-inspired speakeasy Bathtub Gin in New York City, calls his spin on the gin and tonic a classic love story of old world meets new. It sees the Old Duff Genever and the herbaceous Rockys Liqueur combined with lemon tonic, fresh pineapple, and lime. It was commonly used by the British East India Company and was also used to treat workers that dredged the Panama Canal. But quinine tasted bitter, so it was mixed with soda water and sugar to make it more palatable. It is said that British officers then added their ration of gin and lime to the tonic water, and thus the gin and tonic was born. Since quinine is no longer used as an antimalarial, tonic water made today contains much less quinine than it did historically.

London and Distilled gin refer to the alcohol getting the flavors infused during a second distillation. The difference between the two is pretty subtle and based on the methanol content, as well as the distillation methods.

At the Barceló Huatulco, the mixologist kept it simple. It contained premium gin and tonic water with single slices of red grapefruit and lime, garnished with a sprig of fresh rosemary and star anise.

Roasted Pineapple Gin & Tonic

2 pineapple wheels 50ml ginTonic water, to top up1 lime

Grill, griddle or BBQ the pineapple wheels for 5 minutes before turning them over. Continue grilling until they are lightly browned, smoky and caramelised. Cut one wheel of pineapple into wedges and muddle it into your cocktail shaker. Add ice, gin and juice. Shake for two minutes. Strain into a glass with ice. Top up with tonic water and garnish with the remaining grilled pineapple wheel and/or a mint leaf.

You can add a squeeze of lime if the drink is a little sweet for you. Tinned pineapple chunks are probably too wet to grill, but you could use them in the recipe without grilling!
