Making ahead: Philadelphia Strawberry Cheesecake Bars can be made ahead. You can make them the day before and keep them in the refrigerator overnight. If you choose to make them ahead, we recommend waiting to add the fruit layer until the same day they will be served. If added too far in advance, it can cause the fruit to bleed onto the cream cheese layer and cause discoloration.Storing: Your cheesecake bars can be stored in an airtight container in the refrigerator for up to 3 days. Tips For Preparing Melted Chocolate

This recipe calls for a little drizzle of white chocolate over the top of each bar. Its a delicious little extra touch and heres all you do:

  • Melt the white chocolate in a heatproof glass bowl thats set over a saucepan of simmering water on medium heat.
  • Once it starts to melt, pull it off of the heat it will continue to melt as you stir.
  • Spoon the melted chocolate into a small plastic bag, which is easier to fill if you set the plastic bag inside a glass or canning jar like in the photo above
  • Remove the bag, twist to close it, forcing the chocolate to one of the two corners. Snip the end of one corner and drizzle the chocolate over the filled bars.

How To Make Philadelphia Cheesecake Bars

  • Make the crust: Combine the crumbs and butter well, then press firmly into a prepared 8×8 or 9×9 pan .

    Mini Strawberry Cheesecakes are bite-sized delicious dessert for the summer months. Adorable and delicious, bliss in every bite!

    • 2 cup Strawberries, washed and hulled
    • 1 1/2 tbsp Lemon Juice
    • 1/2 cup Boiling Water
    • 1 1/4 cup Whipping Cream
    • 8 ounce Philadelphia Cream Cheese
    • 1 1/3 cup Graham Cracker Crumbs
    • 1/4 cup Packed Brown Sugar
    • 1/2 cup Butter, Melted
    • 1 Cool Whip or Whipped Topping for garnish

    How To Make A No Bake Strawberry Cheesecake

    1. Add Graham crackers, toasted pecans, brown sugar, and salt to a food processor and pulse until you have fine crumbs. Pour in the melted butter while pulsing then remove the blade and mix once more with a spatula. This can be done without a food processor by mincing the nuts, crushing the crackers in a bag and mixing everything together in a bowl

    2. Dump the mixture into your springform pan and spread out. Use a flat-bottomed glass to press the crust together press hard, it helps the crust really hold together. I like to bake the crust for 10 minutes at 350F, as it brings out the flavor, but you can pop it right into the freezer if you dont want to turn the oven on.

    3. Add the hulled strawberries, sugar, lemon juice, and corn starch to a blender and pulse until liquified.

    4. Transfer the mixture into a pot and bring to a boil over medium-high heat. Reduce heat to low and simmer until thickened and reduced by about half.

    5. Beat the room temperature cream cheese for a minute to loosen it up then add the sugar and mix until smooth. Scrape the bowl down and pour in the sweetened condensed milk, vanilla, and lemon juice while running your mixer on low. Add about half a cup of the chilled reduction and mix in on low. Scrape the bowl down and mix once more until smooth. You can add a bit more reduction to taste if desired.

    6. Pour the filling into your prepared crust and smooth the top. Cover and refrigerate overnight.

    Can You Freeze A No Bake Cheesecake

    Yes, you can freeze a no bake cheesecake as a whole or in pieces. It is all about preference.

    • Wrap Cheesecake Wrap you cheesecake with plastic wrap and foil. If you cut your cheesecake in slices double up the slices. Make sure to double wrap the cheesecake as this makes sure that air doesnt get into the cheesecake.
    • Label Cheesecake To make sure that you know how long your cheesecake has been in the freezer, make sure to label it. Serve your cheesecake within one month of placing in the freezer.
    • Freeze without topping Do not put the topping on the cheesecake if you are planning on freezing it. The cheesecake will turn mushy. Once your ready to serve, you can top your cheesecake.

    In a large bowl, use an electric mixer on medium speed to combine cream cheese.

    Next, add sugar and sour cream and mix until smooth. Scrape the sides of the bowl with a spatula as needed.

    Add eggs one at a time, mixing after each egg.

    Add the vanilla extract and mix again until smooth.

    Pour mixture over the graham crust.

    Use a spatula to smooth the filling.

    Bake in the oven at 350 degrees F for 30-35 minutes, or until the center is just a bit jiggly. The outside of the cream cheese layer should start to turn a light golden brown color.

    It is okay if it cracks a bit the strawberry topping will cover any cracks.

    Remove the cheesecake and place it on a wire rack to cool for 1 hour. Then, transfer it to the fridge for 3-4 hours.

    Our goal with this recipe is to create a no-bake cheesecake snack bar that resembles the ones that used to be available in a ready-made form in grocery stores. They were originally made by Philadelphia Cream Cheese.We wanted the recipe to be no-bake to simplify it so that it could come together in a matter of a few minutes and be enjoyed by busy families.

    Philadelphia Strawberry Cheesecake Snack Bars have the classic flavor of strawberry cheesecake in a quick and tasty snack. These bars are made with a graham cracker crust and creamy cheesecake layer topped off with a layer of homemade strawberry jam and a white chocolate drizzle topping. These divine treats are perfect for potlucks, parties, or anytime!

    Now that strawberry season is in full swing I have been making these delicious dessert bars for everyone.

    It is a quick recipe that takes much less time than a regular baked cheesecake and tastes just as good!

    In the early 2000s, we used to pick up Philadelphia Cheesecake Bars, which were carried at grocery stores. I’m pretty sure that’s where my love for cheesecake began. They made you feel like you died and went to heaven.

    However, they discontinued these bars some time ago, so I decided I had to recreate them for myself and make a copycat recipe. I believe that this recipe is even better than the original recipe as it is made with fresh ingredients and tastes amazing, just like a New York cheesecake.

    This is a quick and no-fail recipe that turns out perfect every time. Speed up the process by using strawberry jam or strawberry preserves already in the fridge!
