    This is, not kidding, the best vegan chili Ive made to date. Its thick, rich, hearty, as well as easy to make and, with an Instant Pot or slow cooker, almost effortless once everything is chopped up.

    I used about 2/3 cup of merlot as well, just for more flavor. This can also be considered optional and omitted if desired.

    I have recently turned back towards my pantry/store cupboard ingredients and a fresh produce delivery to help me create delicious and nutritious meals every week. This easy vegan chili con carne is a particular favorite of mine for its customizability and storage options.

    In fact, this vegan recipe has become one of my favorite options for chucking in a lot of veggies in a way thats still really enjoyable for the whole family to eat, while remaining meat-free. Plus, with the addition of soy youre able to take advantage of the higher protein levels.

    However, its also not 100% necessary if you have none to hand and can easily be swapped out with sweet potato chunks or even more beans, depending on what you have available . Really, I honestly just love this recipe for how customizable it is to what ingredients you have at hand.

    As I said above, though, one of the best pros of this hearty vegan chili recipe is the storage options. Not only is this recipe amazing for meal prep and can be served alongside quinoa or rice throughout the week. Its also easily portioned and frozen for up to three months!     How To Make Beyond Meat Chili

  • Preheat a soup pot over medium heat and bring the oil to temp. All at once add the spices, oregano, and mushroom powder. Stirring frequently cook for about 1 minute.
  • Add the onion, jalapeno, and garlic, and cook for 2 to 3 minutes, stirring frequently.
  • Add the Beyond Beef to the pot. Use a spoon to break it up into chunks. How much you break up the “beef” is up to you. I like to break some of it up into smaller, ground pieces and have some larger chunks. Cook until browned on the outside and incorporated with all of the spices, about 5 minutes.
  • Add the tomatoes, salt, pepper, and nutritional yeast, and stir to combine. Add the water and tamari, and bring to a boil. Stir in the bulgur and beans. Simmer for 15 minutes, stirring occasionally.
  • TIP: Once the chili is done, let stand for a few minutes. Taste and add salt, tamari, pepper, and any other ingredients you might like. Sometimes we even add a little liquid smoke or a drizzle of maple syrup.

    Chili has so many different variations. I use whatever makes sense and what I have on hand. The essentials are onion, chili beans, and crushed tomatoes, its not chili if you dont have these. Everything else is up to you. For this vegan chili recipe I used those items, canned corn, sweet peppers, garlic, green peppers, carrots, of course Beyond Meat, bay leaves and seasonings. The seasonings are Himalayan salt, black pepper, onion powder, cayenne pepper, oregano and chili powder. I went a little heavy on the seasoning of the Beyond Meat because it smooths out once you start simmering.

    This may in fact just be the Best DamnVegan Chili you’ve ever tried.

    Seriously, I’m not one to brag but…..this Chili recipe has placed TWICE now in various Chili Cookoffs. I’m not kidding, and it not only came in 2nd place …… it happened in TEXAS!

    Now I lived in the great state of Texas for 5 years, and it was there that I discovered that CHILI was one of the 4 basic food groups. Meat, onions, peppers? Yeah, THAT chili.

    And something else I learned, is that Texas chili is something you don’t mess with. Noodles are definitely NOT allowed, let alone carrots or celery or any other weird ingredients.

    Imagine my horror one day when I found a popular vegan chili recipe that included amongst other things, dates! I know right? Dates!?

    So in order to preserve what is right and true in the world, allow me to introduce you to what Texas Style Vegan Chili is SUPPOSED to be.

    The Chili Con Carne How

    Whats needed

    • chopped tomatoes or tomato passata, tomato purée
    • vegetable stock or even red wine
    • olive oil, onions, garlic, paprika , fresh chili pepper, salt

    Optional: Sweet potato or more beans. You can also mix quinoa directly into the mix if you want to omit the soy but still up the protein levels. This recipe is incredibly versatile.

    Steps

    Start by prepping the veg and beans. Finely chop the veggies carrots, celery, bell peppers, garlic, onion, and fresh chili pepper.

    If using tinned kidney beans, then youll want the beans rinsed and drained. Alternatively, you can pre-soak some dry beans . Then cook these separately, and these will be ready to go.

    Heat the olive oil in a big saucepan over medium heat. Add the onion and garlic and fry until soft.

    Add the spices, soy mince, and tomato purée/ passata . Cook for 3-4 minutes while stirring occasionally.

    Add the chopped tomatoes and the veggie stock. Stir well. Cook for another 3-4 minutes, and bring to a boil.

    When the mix starts bubbling, lower the heat and simmer for another 3-4 minutes.

    Add the chopped peppers, celery, and carrots. Stir well and cook for a few minutes. Note: I add the veggies at this stage, as I like them a little more crunchy. If you prefer them much softer, then add them right after the onion and garlic.

    Finally, add the cooked red kidney beans.

    Mix well and simmer for a few further minutes, until the beans are thoroughly heated through.

    How To Make Vegan Chili

    I bet you already have all these ingredients in your pantry or freezer. If you dont have any fresh garlic cloves or none chopped in the fridge or freezer

    You just need 1 can of pinto beans , drained and rinsed, plus 1 can of diced tomatoes with green chilies.Then add some Beyond Meat crumbles, minced garlic or garlic powder, Mexican oregano, smoked paprika, ground cumin, onion powder, chili powder, nutritional yeast, and salt, to taste.
